About Erythritol

Well, I have spent too many hours trying to look up info on erythritol. My MIL just bought some for me, she uses it at home b/c my FIL is diabetic. So far all I've found is good stuff; it absorbs easily, and doesn't have gastro-intestinal effects and won't spike your insulin. But I'm wondering if anyone else knows more about it, or at least some really trustworthy info sources (all I did was a google search, which is a little overwhelming). Most of the info I can find is coming from people who are selling the product, and I always wonder what they might be leaving out. Also, does anyone use this and does it work like regular sugar in recipes?

The only potentially bad news on erythritol (that I could find) is:

"Erythritol is created by a fermentation process derived from corn." according to http://www.frot.co.nz/dietnet/basics/sweeteners.htm.

"Now Erythritol is 100% pure and derived from a corn source."

And the only reason I would consider that bad is because so many people now are allergic to corn and corn is nearly as common as soy in processed foods.

I googled "erythritol toxicity humans" and all the articles I read go back to this study:

"The present study was conducted in order to examine the tolerance of the human intestinal and urinary system to repeated oral doses of erythritol. "
"None of the observed urinary changes became more pronounced with increasing duration ofthe erythritol treatment. In conclusion, erythritol was well tolerated and without any evidence of adverse effects."

I'd look up more but I'm being called elsewhere. HTH.
