3       egg whites
2       cups light corn syrup
1/2    teaspoon salt
2    cups icing sugar (confectioner's)
1    tablespoon vanilla extract

   1. In a large bowl, combine egg whites, corn syrup and salt; beat with mixer in high speed for 10 minutes or until thick.
   2. Add in icing sugar; beat on low speed until blended.
   3. Beat in vanilla until blended.
   4. Use this in any recipe called for marshmallow creme.
   5. *NOTE* This recipe makes a lot of fluff, but may be frozen for later use, just remove from freezer and stir well with a spoon, or it can be refrigerated for up to 1 week, just make sure to stir well with a spoon before using.

I was able to get five 8 oz servings out of this recipe.  I used one right away.  I put one in the fridge and 3 in the freezer.  Grin

It makes great fudge!   Wink
I used to make a fruit dip w/ it mixed 50-50 w/ cream cheese...use beaters.  YUM!

Chocolate Crunch Brownies

1 cup butter, softened
2 cups sugar
Cream together and add:
4 eggs
Stir in:
6 tbs. baking cocoa
1 cup flour
2 tsp. vanilla extract
1/2 tsp. salt
Spread into a greased 13-in. x 9 in. baking pan. (I use a bigger one, because it makes more. They'll just be a little thinner.) 

Bake @ 350 degrees for 25 min. (less, if you use a bigger pan) or until  a toothpick comes out clean.  VERY easy to overbake.

Cool completely, and spread marshmallow fluff or 1 7 oz. jar of marshmallow creme.

Melt:
1 cup peanut butter
2 cups (12 0z.) semi-sweet chocolate chips
Stir until blended and add:
3 cups Rice Krispies
Stir until cereal is covered, and spread onto brownies.

Chill, cut, and serve.

This is my most requested recipe.  It's my absolute FAVORITE dessert.  It's easily adapted for GFCF as well.

I almost did.   Cry  But alas, I knew it was in the dark depths of my brain.  I figured it would surface eventually.  Now if I could just figure out what I did with that book.  Huh

I'm going through some old cookbooks...being GF means that so many of my binders full of recipes are useless to me right now.  I came across this one and thought of this thread:

Homemade Marshmallows

2 env. plain gelatin
1 c. boiling water
a pinch of salt
4 T cold water
2 c. sugar
1/2 t flavoring of choice

Place gelatin in a bowl w/ 4 T water.  Stir to soften.  Add boiling water, sugar, salt, & flavoring (vanilla can be used).  Beat w/ a mixer until thickened...approx. 10-15 minutes or just before it peaks.  Fill cake pans w/ 2-3 inches of flour.  Make imprints w/ an egg for molds.  Fill w/ marshmallow mixture.

On the GFCF thread, milmuth posted some meringue drops that are similar to marshmallows...
