Can you remember any of the other ingredients?  I've found several recipes for Greek cookies made with Farina.

hm, I couldn't find anything with Farina.
They are very smilar to the russian tea cakes.
I know they have butter, flour, powdered sugar, vanilla, pecans and the farina. I just wasn't sure of the amounts.  I had thought I would just use the RTC recipe and put 1/2 the flour as farina.  Unless of course you the recipe.  I was beginning to think someone in the family just made the name for them up.   Smiley  Thanks.

Butterscotch Pecan Squares
This delicious recipe comes from our White (Creamy) Wheat Farina label.

Ingredients:
1/3 cup Margarine, softened
1 cup Yellow D Sugar ( Brown Sugar)
2 large Eggs
1 tsp Vanilla Extract
3/4 cup White Flour, Unbleached
1/3 cup White Wheat Farina Cereal

1/4 tsp Salt
1/2 cup Butterscotch Chips
1/3 cup Chopped Pecans
sprinkle of Confectioners' Sugar (optional)

Preheat oven to 350°F.

In a large bowl, beat margarine and brown sugar at medium speed until creamy. Beat in eggs and vanilla.

In a separate bowl, combine flour, cereal, baking powder, and salt. Stir into wet ingredients until moistened.

Stir in chips and nuts. Spread batter into greased 9”x 9”x 2” baking pan.

Bake at 350°F for 25 to 30 minutes or until toothpick comes out clean.

Cool in pan on wire rack; cut into squares. Dust with confectioners’ sugar if desired.  Makes 20 servings.

Here's something not quite close, but interesting:

Hi Kathy,

There are several different kinds of farina cakes, but the one below is the only one I could find that fit your description.

Phaed

ITALIAN  FARINA  CAKE
 Ingredients :
 4 c. milk
 1 c. sugar
3/4 c. farina (or cream of wheat)
 1 egg
 Salt to taste
 Almond extract
 Lemon extract (to taste)
 Lemon rind, grated (if desired)

Preparation : Mix farina, sugar, salt and milk; bring to a boil.  Lower heat and cook slowly stirring constantly until thick.  Cook for 15 minutes and add egg and extracts.  Beat well and then pour into a greased cake pan or platter and let stand several hours until cold.  Take 2 eggs, beat them and have ready crushed soda cracker crumbs. Slice cold mixture into squares or diamonds; dip in egg mixture and roll in the cracker crumbs.  Fry in 1/2 butter and 1/2 margarine until light brown being careful not to
burn them. Dust with powdered sugar before serving.

No, I'm sorry.  That is a little more involved.  Thank you for taking the time to look for me though.  You all are very sweet.   Smiley

I'd just try the substitution thing and tweak it until it's 'yours'...you might invent something better! Wink
