I use a version more like MamaSita's (1st link) except I sub 1 cup of honey for the sugar in the filling and use only 1 cup sugar in the crumb mixture. This recipe is cobbler texture when warm and passes for a bar/square to eat out of hand when cooled.

Here is yet another honey sweetened Zucchini Bread. This one with butter!
Mix together:
 1 2/3 cup fresh ground whole wheat or sprouted wheat flour
1 tsp baking soda
1 tsp. cinnamon
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp gr. clove
1/4 tsp. baking powder
Add:
2 generous cups of shredded zucchini, seeded if large, peel if desired
2/3 cup honey
1 tsp vanilla
2 eggs
1/3 cup melted butter
1/2 cup of chopped nuts
Stir together just until mixed. Pour into greased and floured 9x5x3 pan.
Bake 40-60 minutes at 350* or until toothpick comes out clean.  Cheesy
Remove from oven and let stand 10 minutes. Remove from pan and cool on rack. Seal and store in fridge.

I don't like mushy zukes, so the other nite, I did this: Slice small zukes (6 in. by 1 in.) 1/4 in. slices. Marinate in Italian dsg. (your own healthy recipe!!) for awhile, then stir fry in olive oil until crisp-tender. Yummy!!! The family agreed!

Zucchini

Slice Zucchini into thin circles. Saute in olive oil, when they are half way done add onions, garlic powder and Braggs liquid. Saute until all is tender. Serve over rice.

I've never heard of zuchini bread bfore, but that sounds like a great idea. Zuchinis grow well here.

Anyone? My momma (deceased with no recipe left behind) used to make a zucchini bread that was wonderful. It was about the consistency of banana bread. Nothing I've tried even comes close.

I love my mom's recipe, but don't make it often b/c of how much sugar, but it sure is good IMO!

2 cups grated zucchini
1 c. oil
3 eggs
----------
2 cups flour
2 cups sugar
1/2 tsp. baking powder
1 tsp. baking soda
3 Tbs. cinnamon (yes, 3 Tablespoons is correct)
1/2 tsp. salt
2 Tbs. vanilla
nuts, optional

Mix dry ingredients. Mix wet ingredients and fold together.  Pour into 2 loaf pans and bake @ 350 approx. 55 min.
This makes a very moist, yummy bread.  If you wanted it a little more dry, you could squeeze the zucchini in paper towels or set to drain for 30 min. first, then squeeze out the liquid, but this is not necessary.

These are my favorite summer treats...

Zucchini Crabless Cakes

2 c. peeled, grated zucchini (I never bother to peel)
1 c. progresso italiam seasoned bread crumbs
1 egg
1 Tb. mayo
1 t. old bay seasoning
-form into cakes and fry

This recipe works best if you make it in small batches. It never turns out right if you try to double it???

This looks similar to the recipe above, and it looks fabulous!  Turkish Zucchini Fritters...one of the commenters made them GF by using potato starch.  Yum!
