  Healthy Popsicles
« on: May 17, 2006, 07:17:17 PM » by KatieMac
I don't know if anybody else's mom did this but my mom used to have those tupperware popsicle makers and she used to make us popsicles. Now hers were made of Kool-aid and Jell-o or something like that but I have been wanting to make some healthy ones for my kids (and me  Smiley)! I was thinking fruit and fruit juice and unflavored jello to help with the texture...has anyone ever done this before? Right now I only have one set of 6 popsicle makers so I haven't gotten to experiment much, but some more should be arriving from ebay any day. The only thing I have done so far is taken leftover homemade pudding and made them into frozen pudding pops. Not exactly healthy, but tastier than Jell-o brand and no preservatives. The creamy texture got me thinking about frozen yogurt pops...I think I am going to blend yogurt and honey with strawberries and freeze it and see what I get! Just thought I'd pass this idea along and see if anyone has any suggestions or recipes!

I do this too!  I have made fruit smoothies and snuck some powdered supplements in them.  Not sure of the freezing temps destroys it, but their urine was that crazy yellow-green mountain dew color, so I am assuming it was.  I buy organic juice in bulk at our local Big Lots; which is a discount outlet store in our area.  I just freeze both of these and the neighborhood kids always want some, too.  Good luck and looking forward to summer! Organic juice at Big Lots!!! I had NO idea! I will have to check there sometime.

There is a store in another town about 30 miles away call Bargains...a girlfriend of mine used to go there and find TONS of organic foods for sooo cheap. She'd buy organic cereal for 50 cents a box, stuff like that. I'd love to go there once in a while but with the price of gas I might as well shop in town  Sad Good thing there is a Big Lots nearby!

I made some with 1 part yogurt and 2 parts orange juice.  I used Juicy Juice because that's all I had on hand.  Orange Tangerine.  They are not super sweet, but the kids loved them.
Others have suggested adding honey, over-ripe bananas and orange or white grape juice concentrate for sweetner.  A little vanilla seems to help as well.

ok, tell me what you think.  I got an email talking about not freezing anything in plastic because they have found it to be cancer causing.  Anyone else heard this?  I haven't made any Popsicles for this reason.  But could they be made and frozen in the little paper cups with a Popsicle stick in the middle?  That all I can come up with.  Any more thought about this?

I've heard that you shouldn't store, microwave, or freeze anything in plastic, but realistically, what else is there?

Also, if I understand this correctly, plastic doesn't cause cancer, free radicals do.  The free radicals are cells infected by toxins floating around looking for healthy cells to attack, but that's what antioxidents are for.  Cancer is pretty scary, but the more I learn, the more I think it's just as preventable as any other nasty disease, just by keeping the intestinal health at optimum.

I have read about not heating stuff in plastic (because the plastic melts and can mix with the food) - but how would platic be harmful at it's solid state??? We did start microwaving our stuff in glass after I tested my plastic containers in the microwave (you can do this by putting water in the container and microwaving it on high for two minutes - about 3 cups of water). If the container is hot, it is typically considered not microwave safe - not sure if that means it causes cancer causing chemicals to leech into food or not though.

I have a smoothie that I like to make and then we may just drink it or make it into Popsicles.  You and add or take away to this simple recipe.  This makes enough for two adults  and one kid to drink and then some Popsicles.

2 cups Apple Juice
4 to 8 oz bag frozen berries your choice (we like strawberry or mixed berry best)
8 oz yogurt (we use Vanllia sweetened with honey and maple syrup)  (Optional)
2 big banana's or 3 small (you can freeze these first if you want, but you don't have too)
1 heaping Tablespoon flaxseed meal (optional)
1 heaping Tablespoon protein powder (optional - I use rice protein, mixed berry)
(you may also add ice cubes or ice cream or whipped cream - I just try to stay away from too much sugar)

enjoy If anyone has any other ideas let me know NV Smiley

anyone know where to get some good popcycle containers?  I had some and the handles broke off.  I found some at Target, but they wanted like $6 for one that only makes 4 popcycles.

I LOVE the tupperware kind.  Brand new they are $20 for just 6 of them, so you will definitly find a better deal at a garage sale or even online. I paid $10 for 2 sets on ebay...so it was still a quarter of the original price.

Made with real fruit - here's the prize winning recipe from the August 2006 Better Homes and Gardens magazine.

Ginger-Peach Freeze

1 C Water
1 C Sugar (or less!)
3 T Lemon Juice
1/4 tsp ground Ginger
1 16 oz. pkg Frozen Peaches

Boil Water, Sugar, Lemon Juice, and Ginger. Remove from heat and add frozen fruit. Let stand until peaches are thawed and mixture has cooled. Then place in a blender and blend until smooth. Pour into a 2 quart baking dish and freeze 3-4 hours. Break up mixture with a fork and spoon into dessert dishes.

Instead of the baking dish I put it into the Popsicle molds (from Target). Just now I did a mixture with strawberry's and vanilla and I only use 1/2 or less the amount of sugar they recommend. My sons love these!!

Just tried these today, and my kids loved them (so did I).

Fudgesicles

2 c. milk
1/3 c. honey
3 tbs. cocoa powder
2 tbs. cornstarch
1 tsp. vanilla
1 tsp. butter

Combine all ingredients in a saucepan and warm on low heat until thickened. Do not boil. Allow mixture to cool, pour into molds, and freeze.

I was careful not to let the milk boil, and I waited until it thickened before I added the honey. Chocolate is one thing I sometimes miss being on a sugar-free diet.  Cheesy

HB,
I'm not sure what area you live in, but I got the best set at a grocery store called Foodmaxx (they are similar to Food 4 Less, you might try there too). It makes 4 popscicles and it was $1.79 and the handles have little sippy straws connected to them, so as the pop melts, the kiddos can slurp up the juice thru the straw...no mess!! Happy popscicle making!

Our Food for Less went belly up.  We only have Hyvee and Fairway.  Noone else can seem to compete except WalMart.

Hey, did I mention they are building a Walmart in my one horse town (at least that's the rumor).  Woohoo, no more driving to the city for me.  Grin

Mine were  25 cents a dozen, but they have the sippy straw thing on them.  I can't wait to try them.  Especially the fudgecicle recipe.  I love those, and the other day, I decided that I wasn't going to buy any more, cause they have to be terrible for me... Cry  I'll give the recipe posted above a shot!  In the mean time, we have yogurt and we have peaches.  I bet I can come up with something good!

Healthy Home made Ice Pops.   I decided to revive an old thread with a variation of Popsicles.  My kids recently were introduced to those awful ice pops that are nothing but  sugar and food coloring in a plastic tube.  They were completely impressed!   Roll Eyes So, I picked up a bag at the dollar store, rinsed them out with hot soapy water and we reuse over and over. We set the tubes upright in a pitcher or wide mouth jar and use a funnel to fill them with real fruit juice, honey sweetened mint tea, kombucha or whatever. Freeze.  If you do a bunch of them at one time, after they are frozen you can remove and store in a ziploc bag or some other container. Enjoy! These actually taste good.   Cool LOL!

When I was a kid we just used small plastic bags (not sandwich type) to freeze our popsicles in.  I think you could get them at a craft store.  They were probably 3"x6" or so.  Just pour your juice in, tie, and freeze.  Snip the corner off and no dishes to do when you finish!  Also, you can make a bunch at a time if you have freezer room.

Thanks for the idea.  I enjoyed these as a kid, we only got them at my grandmas house, that's why they were so good then, but not now.  My kids think their happiness might hinge on these freezer pops, and I refuse to buy them.  Now I will, but will dump and fill w/ bucha.   Grin

I'm gearing up to make all sorts of nice popcicles too.  I promised my son (6) that I would make them on the first day of summer.  :-)  I have it marked on the calender.  I'm planning on making the orange and yogurt ones, but after looking at the healthy fudgcicle recipe above, I'm gonna make that a regular too.

Yumm.  Sounds good right now...it's hot!!

Bumping up this awesome recipe for everybody else.

I just added all the ingrediants together.  I also had to let it simmer a bit to thicken.   I love "real" fudgesicles, and I was surprised that these really satisfied my cravings.  Grin  I plan to make these often!!!

These really are SO good.  I added a little coconut oil to them and I love the flavor.  I would say these are as good or better than store bought!  Next time I might try some keifer instead of all milk but I don't know if warming up keifer destroys the benefits??

I thought about trying the fudgecicles with yogurt.  What do you think?  I've got a gallon of yogurt and just a little milk, but I didn't want to try it if it would be a flop....

I think yogurt would be really good.  I have simmered yogurt before for curry sauce so I don't think heating it would be a problem.  Yogurt being thick already you could probably just leave out the cornstarch and just combine the ingredients without heating them.  If you try it, let us know what you do and how it turns out.

We are trying them out right now!  Grin  My SIL (age 11) is here with me, and she is mixing them up right now.  We are heating the butter and honey (it's crystilized) so that it will mix with the yogurt.  I hope it works, since the yogurt is cold.  It might set the honey again, and then I would have heat the yogurt, too.  I'll let you know how it turns out.

Wait, she is mixing it now.  We don't have to heat the yogurt.  Thanks for the idea, it is much easier, and healthier.  We'll let you know how they taste tomorrow.

What I do is puree berries, add a little fructose or honey and freeze them in paper cups with a stick in the middle.  When they are hard, I just throw them in ziploc bags.  My mom and aunt sell fresh Oregon strawberries (along with other berries and produce) every summer, so I get them at cost.  It is still somewhat spendy, but we have fresh berries all year this way AND it beats buying popsicles.  Much healthier and everyone loves them.  I have been out of them for some time now, so I am thankful that Mom started berries again today!  Overripe berries work really well for this, too.  I usually just use strawberries, but I have mixed blues with them before, also.

Crystal,
How do you get the stick to stay up before it is frozen?
Are you talking about Dixie Cups?
I feel bad for all those poor souls out there who have never experienced Oregon Strawberries~
