i decided to copy my post here, so we could continue our food conversation on the "Recipes" thread!  lets keep some ideas moving on here!   Grin

Ok, Ladies, I need your help. It's about 4:30 PM here, and coming up on supper time. Here's the problem. I AM SO SICK OF SALAD AND CABBAGE!!!!

I really need ideas of something I can eat. I guess I should have prefaced all this by saying I'm trying to get my sugar cravings under control. I've been feeding the family, and fixing myself things on the side. I'm not being like super strict, but I am trying to "do good".

So, I have leftover chicken spaghetti that my neighbor brought over with leftover field peas. Both of these are off limits to me. If I take a bite of that chicken spaghetti, I'll eat the whole thing! I thought I'd fix some baked potatoes to go with it, for Mark & the girls.

If you were me, and you just wanted to eat and feel like you'd actually had dinner, AND stay full for more than 30 minutes, what would you cook?

hi Emily!  are you still dieting? i am doing the yeast cleanse, and one thing i have found to be really easy and helpful is to keep my iron skillet out after i use it for eggs for breakfast, and i keep baggies of cut up chicken breast in the freezer (cooked or not), precooked sausage or hamburger in baggies frozen, taco meat, etc.  then i just saute some onion, garlic, meat and whatever veggies i have on hand for myself.  i can eat it plain or in a low carb tortilla. i haven't started using brown rice yet, cuz if i did i wouldn't be allowed much else for carbs.  i am trying to stay under 60, though i don't usually subtract the fiber.  i am using www.sparkpeople.com to count my carbs and i am amazed at how fast they add up!  the low carb tortillas are a God send, and really helping me do this right now.  i would love a recipe to make my own, but haven't looked it up right now.  i like the Flat Out brand, of multigrain low carb ones.  they are long and kinda rectagular and 17 carbs - 8 grams of fiber.  i usually cut off 1/3 of it and eat it with my eggs for some texture for breakfast and use the other part for lunch.  i had to buy a different kind this time, but the grocer is ordering some of them for me.   anyway, hope this is helpful and lets give eachother ideas!  to keep from getting really bored!

I started the yeast diet too and am starting to be sick of eggs and cheese.  Here is a helpful website I found.

Some of the recipes are bad and use Atkins mixes and stuff you don't normally have around, but others use basic ingredients that aren't too hard to find.  A lot of the sweets use sugar free flavored syrup in them.  I have stumbled onto these at Marshall's and Ross's for a good price now and then.  They are also found on the coffee section of the grocery store.  (You can buy them at Starbucks too!)  My MIL is diabetic so I always keep french vanilla on hand.

I'm making one of the low carb cheesecakes on that site for my birthday on Sunday.  I've made this before and it is very yummy.  I would like to try stevia but don't know how to sub for it and which brand is best.

New York Style Cheesecake
crust:
 1 1/2 cups almond flour
 6 Tbsp Splenda
 5 Tbsp unsalted butter, melted
filling:
    * 24 ounces cream cheese, softened
    * 1 1/2 cups Splenda
    * 3 eggs, room temperature
    * 2 tsp vanilla extract
    * 1 tsp lemon extract
    * 16 ounces sour cream
Make Crust: Mix Splenda and almond flour with melted butter; press onto bottom and 1 1/2 inches up sides of a 9-inch springform pan. Set aside while mixing filling.

Beat the cream cheese until light and fluffy, keeping the mixer on a low setting throughout the beating and mixing process. Add Splenda a little at a time and continue beating until creamy. Add one egg at a time and beat very briefly after each egg. When eggs have been mixed into the cream cheese add vanilla and mix briefly, just until combined. Add the sour cream last and beat briefly.

Pour cream cheese mixture into the springform pan. Bake at 325° (300° for dark, nonstick pan) for 1 hour and 15 minutes. Check before an hour is up and if it's getting brown, turn oven off and begin the next step. When time is up, prop open oven door, turn off the heat and leave in oven for 1 hour. After 1 hour, remove from oven. Cool to room temperature then chill 24 hours before serving.

APPROXIMATE NUTRITION INFORMATION PER SLICE (MAKES 16 SLICES):
327 Calories; 30g Fat; 10g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs

I also love several recipes from the Saving Dinner Low Carb Menu Mailer.  Have you all seen this?  I used it when Hubby did a low carb diet.

hey Jammie, yeah i've heard of it, do you have to pay for it?  or is it just something you sign up for?  still working on it and eating lots of taco salads, tonight i made Atkins french onion soup with hamburgers (no buns) and salads.  it was really good.  actually i modified his recipe a bit, using beef broth instead of chicken w/ a beef cube.  also, tuna is really good with a little mayo and no carbs!  you could wrap it in a romaine or other lettuce leaf.  i had one for a snack today.  i buy the big can of mixed nuts from walmart and mix with some craisins in a jar on the counter.  my kids and i have went through one batch in 5 days!   Roll Eyes  they are yummy and help with the cravings.  i just eat 3 or 4 almonds and 3 or 4 craisins once or twice a day. thanks for the website, will check it out!  c.

Saving Dinner menu is a paid program.  I was a cheapie and signed up for the shortest time and then printed out all the menus and recipes and put them in a binder.  I then lucked out and my MIL signed up for the whole year so I can look at her notebook if I am in need of a recipe.  If you sign up for her newsletter you can get a free one week menu sample to try out.  That is what I did in the beginning.  (Hubby lost 80 pounds on low carb diet so we ate this way for a long time.)

Here is one of our favorites from that menu
I keep the seasoning mixed up in an old spice bottle so I can make this in a jiffy.  It is sooo yummy.  I just eat it with a salad or broccoli.

Garlic Lime Chicken
Serves 6

1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon cayenne pepper (can eliminate if too spicy for you)
1/4 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
6 boneless skinless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil
1/2 cup chicken broth
4 tablespoons lime juice

In a bowl, mix together first 7 ingredients. Sprinkle mixture on both sides of chicken breasts.

In a skillet heat butter and olive oil together over medium high heat. Saute chicken until golden brown, about 5 minutes on each side. Remove chicken and add lime juice and chicken broth to the pan, whisking up the browned bits off the bottom of the pan. Keep cooking until sauce has reduced slightly. Add chicken back to the pan to thoroughly coat and serve with remaining sauce drizzled over the top.

Per Serving: 343 Calories; 11g Fat (31.1% calories from fat); 55g Protein; 2g Carbohydrate; trace Dietary Fiber; 147mg Cholesterol; 612mg Sodium. Exchanges: 0 Grain(Starch); 7 1/2 Lean Meat; 0 Fruit; 1 1/2 Fat.

SERVING SUGGESTIONS: Steamed broccoli, baked potatoes and steamed baby carrots.

VEGETARIANS: This recipe works very well with Boca Chikin patties. Cooking time is less.

If you haven't tried the smoothie recipe on this thread, then you should!  What a treat.  It really should be called Ice Cream Shake, because that is just what it tastes like.  I used DaVinci French Vanilla Sugar free flavoring.

Low Carb Double Chocolate Walnut Brownies Recipe

1 1/2 tablespoons wheat bran, or oat bran
1 1/4 cups plus 1/2 tablespoon soy flour
4 ounces unsweetened baking chocolate
1/2 cup unsalted butter
2 cups sugar substitute (recommended: Splenda)
1/2 cup heavy cream
5 large eggs
1 tablespoon no sugar added vanilla extract
2 teaspoons baking powder
1/2 cup chopped walnuts

Low Carb Chocolate Frosting, recipe follows

Special Equipment: 8-inch square baking pan
Preheat oven to 325 degrees F.

Spray pan with nonstick vegetable oil cooking spray. Set
aside. Mix wheat bran and 1/2 tablespoon soy flour together
and sprinkle evenly over the inside of the greased pan, also
coating the sides.
Place the unsweetened chocolate and butter in a steel bowl and
melt over a saucepan of simmering water. Whisk in 1 cup sugar
substitute and 1/4 cup heavy cream. Once thoroughly blended,
turn off heat and keep warm until needed.
With an electric mixer on high, beat the eggs, 1 cup sugar
substitute and the vanilla extract just until blended. Reduce
to low speed and then blend in the chocolate mixture.
With a wooden spoon, mix in the baking powder, 1 1/4 cups soy
flour, walnuts, and 1/4 cup heavy cream. Spread evenly into
the prepared pan and bake on the center rack for 35 to 40
minutes, or until a toothpick inserted in the center comes out
clean. (Do not over-bake or brownies will be dry and hard.)
Cool completely before frosting with low carb chocolate
frosting. Cut into 5 rows by 5 rows to make 25 pieces.

Low Carb Chocolate Frosting:
3 tablespoons unsalted butter, softened (not melted)
5 tablespoons unsweetened cocoa powder
1 cup sugar substitute (recommended: Splenda)
1/3 cup heavy cream
1 teaspoon no sugar added vanilla extract

Few drops hot water, as needed, to thin consistency
Place all ingredients in a medium bowl and whisk until well
combined. Use to frost brownies, but make sure brownies are
completely cooled, or the butter in the frosting will melt.

I have read in other places (anti-candida forums) that pure sucralose is a candida killer.  The makers of splenda realized people were reacting to pure sucralose and have since added other things(maltodexdrin) to it to offset this reaction.  On this other forum, they believe PURE sucralose without the maltodextrin is actually beneficial in the fight against candida.  Maybe it could be the chlorine molecule attached to it??  Anyway, they believe the reaction to the original product by the public was actually die-off from candida.  People who have never experienced this, or are not knowledgable about how a "die-off" would feel, will of course be frightened and think they are having a toxic reaction.  Having read this in a couple of places, I don't feel quite as leery of splenda, but I still won't be using it very often. i still think it is scary....my daughter had an actual reaction to it that i don't think was die off.  it happened twice, she didn't feel well and her throat started to swell just from a tiny bit of it.  we steer clear of it because of that.   Shocked

i agree.....i have four babies that were born when i had too much yeast and not enough good bacteria.  and i really wish i had known then to treat for it and mostly to lay off the sugar!!!!  what i wish i'd done is to eat healthy carbs when pregnant and not overdo it.  and of course to supplement with Threelac or something and tons of acidopholus......

I've been on YA for about a week now and I can't tell you how much more ENERGY I have.  This is awesome.  Last night we had meatloaf.  I just left out the bread crumbs and used 1/3 c. of ketchup (since I was out of tomato sauce) and cooked it in my crockpot for 4-5 hours on high.  My crockpot is oval and my small loaf pan fit right in.

I made the German Pancake from this thread for breakfast yesterday and the kids loved it as much as I did.  This morning I'm trying this recipe from low carb luxury.

Belgian Waffles
4 eggs, separated
1/2 stick butter
1/4 c. oat flour
1 c. sour cream
1/2 t. vanilla extract
1/2 t. salt
grated nutmeg, opt. (I think I'm using cinnamon instead)

Beat the egg whites until they form soft peaks.  Set aside.   Now cream the butter until fluffly and add in the egg yolks-one at a time.  Add the flour and sour cream alternately, beating well after each addition.  Stir in the vanilla, salt and nutmeg.  Fold in egg whites.

Bake in preheated waffle iron.  Makes 3 large belgian waffles.
7.3 net grams per full waffle.

(I plan to freeze the extra two.  I have found that I'm way less hungry than I was a week ago so I know that a whole waffle is all I can eat.)

I got the Yeast Connection Cookbook in the mail yesterday ($1.89 from a bargain book place in like NEW condition...woohoo) so I'll try to post some more recipes as I try them out.

Are you all still drinking coffee?  I have read mixed things on this.

Review from my children of the Belgian Waffles:
They taste just like french toast, it tastes like eggs...they ate two each with syrup.  I ate one without syrup and I think I put too much salt.  It was a little like french toast to me.  I ended up getting more out of the recipe than it stated and thus my waffles were 3.14 carbs each.

A good low carb chicken recipe:
Madison County Chicken

    * 6 boneless skinless chicken breast halves
    * 3/4 teaspoon seasoned salt (MSG-free)
    * 2 tablespoons olive oil
    * 6 teaspoons honey mustard
    * 1 1/2 cups mushrooms, sliced
    * 6 slices bacon, cooked -(to substantially reduce fat, use turkey bacon)
    * 4 1/2 cups low fat Colby/Jack cheese blend, shredded

Preheat oven to 350 degrees.

Rub chicken breasts with seasoned salt.

In a skillet, heat the olive oil over medium high heat. Brown the chicken on both sides. Cook until chicken is done, but still quite tender.

Remove chicken from skillet and spread each piece with honey mustard and place in a 9 x 13 baking dish. Cover each piece of chicken with a layer of mushrooms and then crumble one slice of bacon on top.

Cover all with shredded cheese and bake at 350 degrees or until cheese is melted.

Per Serving: 492 Calories; 17g Fat (32.2% calories from fat); 78g Protein; 3g Carbohydrate; trace Dietary Fiber; 160mg Cholesterol; 1013mg Sodium. Exchanges: 0 Grain (Starch); 10 1/2 Lean Meat; 0 Vegetable; 1 1/2 Fat; 0 Other Carbohydrates.

SERVING SUGGESTIONS: Steamed red potatoes and baby carrots. Add a green salad also.

VEGETARIANS: Use Boca Chik'n Patties and soy bacon

I made some crepes with coconut flour that were really good and filled them with some stevia sweetened whipped cream.  Very good!  They are low carb enough that you could easily add a small amount of blueberries for a great breakfast or dessert.

Coconut Flour Crepes:
 
2 Tbs. coconut flour
2 Tbs. coconut oil or butter (melted)
2 eggs
1 tsp sugar (I used xylitol)
1/8 tsp salt
1/3 cup milk (I used 1/2 cup because the coconut flour keeps soaking up all the liquid)

Mix up the oil, eggs, sugar and salt.  Mix in the coconut flour. Lastly mix in the milk (you can use coconut milk for less carbs).  Heat some coconut oil in a skillet and pour in about 1/3 cup of batter and quickly rotate the skillet so the batter forms a big, thin circle (about 7-8 inches).  When it starts to bubble and the edges turn brown, flip it over and cook.  The recipe I found said it makes 4,but I easily got about 6 of them.  The non-fiber carbs for 4 crepes would be about 3 grams each.  For 6 it would be about 2 grams each.  I think I posted this with a bunch of other coconut flour recipes and the site I got them from on the coconut flour thread.

does anyone know if a thin person would or wouldn't go into Ketosis? my hubby can always tell when he goes into and out of ketosis, and i can't.  i have no fat to lose.  i know that i really need this diet for killing the yeast, but haven't started to ramp up my carbs (am at about 27-35 carbs after subtracting fiber).  i guess i would rather know somehow that my health is not in jeapordy somehow, and maintain a safe level and still kill off the little critters!   Grin

I think that you can cleanse from yeast perfectly well without going so low carb as to go into ketosis.  An example of a low carb diet that is really healthy (IMO) is in Dr. Mercola's "No Grain Diet" book.  It has moderate, healthy carbs that are at a level that would make yeast cleansing possible.

Does that diet probably have at least 2600 daily calories in it?

How long of using this diet is necessary to cleanse from the yeast?

If this is for yeast throughout the body, and not just in the vagina, what are the symptoms of that?

i believe it's throughout, but mostly bowel.  i have had almost 20 years of bowel problems leading to leaky gut.  since i started the anti yeast diet i have been fighting a vag. yeast infection, off and on, using garlic cloves.  my hubby also has symptoms.  i have skin problems that seem aggrivated by it.  i am eating, meat, cheese, eggs, and lots of veggies, salad, one low carb multigrain tortilla per day, tuna, sunflower seeds, almonds and a FEW craisins a day.  i have also been drinking coffee w/ cream, and having a tiny piece of dark chocolate dipped in coconut oil.  i haven't figured out how to use the amaranth, quinoa or buckwheat, but to me they seemed to have quite a bit of carb, just am not sure if those count?  thanks for your help!

oh, i just noticed your latest post, i think my calories are between 1250 and 1550 daily.  i weigh 95 lbs, don't know how i could ever eat 2600 cal!

does anyone know if a thin person would or wouldn't go into Ketosis? my hubby can always tell when he goes into and out of ketosis, and i can't.  i have no fat to lose.  i know that i really need this diet for killing the yeast, but haven't started to ramp up my carbs (am at about 27-35 carbs after subtracting fiber).  i guess i would rather know somehow that my health is not in jeapordy somehow, and maintain a safe level and still kill off the little critters!   Grin


I think that you can cleanse from yeast perfectly well without going so low carb as to go into ketosis.  An example of a low carb diet that is really healthy (IMO) is in Dr. Mercola's "No Grain Diet" book.  It has moderate, healthy carbs that are at a level that would make yeast cleansing possible.

I'm sorry that I don't know much about you.  I was assuming that you were pregnant.  Now I'm thinking that maybe you aren't.  My concern for people to eat a minimum of 2600 calories a day only applies to pregnant women.

Does that diet probably have at least 2600 daily calories in it?

How long of using this diet is necessary to cleanse from the yeast?

If this is for yeast throughout the body, and not just in the vagina, what are the symptoms of that?

He gives lots of recipes in his book (I would let you know more, but I rented it from the library and no longer have it) and although I might moderate some of them while cleansing from yeast (especially within the first 2 weeks), I think they have a decently low amount of carbs without being extreme.  It's actually a lifestyle diet and not intended for low-carb yeast cleansing, but I find that with a little tweaking, it works.

I have had the same thought about ketosis...I'm about your size and don't need to lose any weight.

I did feel it would be ok to do this cleanse since you can have 60 carbs a day.  Hubby has low carbed for weight loss and he had to get under 20 carbs a day to get into ketosis.  I think I'm going to start weighing myself everyday just to make sure I'm not losing any weight.

Did you know that strawberries  are fairly low carb (for fruits) and can be eaten in moderation?  A couple of strawberries sliced on a spinach salad is awesome!
strawberries 6.6 net carbs per cup

I made these low carb pancakes that would sub nicely for a tortilla or crepe if you leave out the sweetener.

Low-Carb pancake from Mr. Breakfast.com

2 eggs
2 1/2 tablespoons of wheat gluten
2 tablespoons of heavy whipping cream
1 tablespoon olive oil
1 tablespoon water
1/2 teaspoon baking powder
1 teaspoon splenda or 1 packet of sugar substitute

Stir together well, it will want to clump on you.  Cook on lightly greased skillet putting a pat of butter on top of each pancake after you cook them.  The butter melts and makes a yummy stack of pancakes.  They are more on the thin crepe side for size and texture.  I also added a Tablespoon of ground oatmeal one time to give them a little texture.
