Vinegar [Egg Free] Cake

Wacky Cake
From Diana Rattray,

There are no eggs in this chocolate wacky cake, and mixing is easy.
INGREDIENTS:

    * 1 1/2 cups unbleached all-purpose flour
    * 1 cup sugar
    * 3 tablespoons unsweetened cocoa
    * 1 teaspoon baking soda
    * 1/2 teaspoon salt
    * 1 teaspoon vanilla
    * 1 teaspoon vinegar
    * 5 tablespoons vegetable oil
    * 1 cup cold water

PREPARATION:
In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened.

Actually, that part is optional.  I like to eat this cake right out of the bowl with a spoon.

Me too. When I was teenager I would mix this up just for the sake of eating half of it before baking. ::) Now I stop after a spoonful or 2. :D

Here's another eggless (egg-less) cake:

Maud King's Hoagy Cake

               9x9 pan          9x13 pan
flour            2C                  3C
soda             1t                  1.5t
bkng pwdr     1t                  1.5t
salt               .5t                  .75t
butter           .5C                 .75C
sugar            1.25C             scant 2C
buttermilk      1.25C            scant 2C
vanilla or citrus rind for flavor


Mix flour, leavening and salt.
Cream butter, sugar and flavoring.
Add these alternately with buttermilk just until smooth.

Bake at 350 until tests done (I would guess about 30-40 minutes for a 9x13).

I have always wanted to make this and the chocolate cake batter above and make an eggless marble cake.  Haven't gotten that far yet.

I have a few recipe cards marked as "No Egg" or "No Milk" or "No something-basic" for the times when I remember I need to have a dessert made for tonight and I am out of something.

And, I have a friend who has an egg allergy.
I have learned enough to know I still have lots to learn.  Teach me.

In our house it's called Crazy Cake, and it can be mixed RIGHT in the baking pan.  No bowl, no mixer, no nothing.  Just a wire whisk or fork.  Dump it all in, mix and then bake.  The pan should be buttered and floured, even if some of it comes off during the stirring.
Of course, it would NOT be complete without a batch of Chocolate Cream Cheese Frosting!
4 ounces soft cream cheese
4 ounces soft butter
4 cups powdered sugar (I think)
1 t vanilla
2-3 T milk
mix til smooth, frost cool cake!

I found the recipe because I was out of eggs and having cravings for cake.  I never actually made it.  I tried eggless bran muffins instead.  We ate them, but not a recipe I'd be esteemed to pass on.   ::)

i just made this and it didn't rise.  looks more like brownies.  is this right?  or did i do something wrong?

i didn't see that anyone posted the pan size, but i went with the brownie sized pan 8X8 (or equivalent).

HB...I've made this one dozens of times, and it is GOOD! This recipe has been handed down in my family, and is the family favorite for Chocolate Cake.  Popular during the Depression, the cake is called “Crazy” because it is made without eggs or milk…plus it foams when you add the vinegar to the baking soda.  But it’s really, really moist and chocolatey (and you can’t taste the vinegar at all).  It's not brownie like, and does rise like a regular cake.

Crazy Cake
Yields: one 9x13 (half recipe for a 9x9 pan)

3 c. flour
2 c. sugar
1 c. cocoa
2 t. salt
2 t. baking soda
2 T white vinegar
2 t. vanilla
¾ c. oil (or 2/3 c. for layered cake)
1 c. cold coffee or water

Put ingredients in bowl in order listed, pouring water over all.  Mix well.  Pour into an ungreased 9x13 pan.

Bake at 350 for 30 minutes.  Watch it closely and don’t overbake. 

I like it with this frosting and fresh strawberries  ;)

The Best Cream Cheese Frosting/Filling:
2 c. heavy whipping cream
16 oz. Cream cheese (2 packs)
1 1/2 c. brown sugar (packed)
2  t. vanilla extract

Combine cream cheese, brown sugar and vanilla in bowl of mixer (or large bowl).  Beat until soft. 

In another bowl, beat whipped cream to soft peaks, then fold or whisk into cream cheese mixture.  Layer onto your favorite cake recipe.

thanks gwen, but that's the same recipe that i just made (first post).  it was well...weird.  i don't really need an egg free cake.  i only tried it because sarahk said her kids liked it.  mine did too, actually, but hubby and i were not impressed...it reminded me of malt 0 meal, which is okay, but not my idea of 'oh goody, we're having cake!'   ;D

We LIKE Chocolate Wacky Cake.  It is crumbly, though - I use Pamela's GF Baking Mix instead of wheat flour, so maybe that's why.

We also like the gingerbread version:

    * 1 1/2 cups unbleached all-purpose flour
    * 2/3 cup brown sugar
    * 1/3 cup blackstrap molasses
    * 3 tablespoons spice mix: cinnamon, ginger, allspice, cloves (your choice.  I use mostly ginger.)
    * 1 teaspoon baking soda or baking powder
    * 1/2 teaspoon salt
    * 1 teaspoon vanilla
    * 1 teaspoon vinegar
    * 5 tablespoons butter, melted
    * 3/4 cup cold water

PREPARATION:
In a large mixing bowl, mix flour, sugar, spices, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the butter. Pour the cold water over the mixture and stir until moistened.

Bake in an 8x8 baking dish at 350 degrees about 20 minutes until just done.

I think your recipe used a lot more water, and not as much cocoa.  I've had 'wierd' versions, but a good recipe of this is WAY better than a box mix cake.

thanks for your help guys.  i have given up for now.  i have to make a cake by saturday and i'm all out of patience.  >:(  going to find the 'not healthy choco cake thread' and use one of those.   ::) ;D
