We are also looking at buying a really good ice cream maker, any suggestions?

I guess I haven't ever had this problem...my husbands family is know for the amount of ice cream they can eat in one sitting  Grin  Good tips for sure though!!!!

Thats funny  LOL. My family is also known for their monster sized bowls of ice cream.

I wonder if the creamy cooked milky  ice cream verses the non cooked ice cream makes a differance in the freezer burn process?

I like to make the creamy cooked kind with heavy whipping cream, it makes for a good thick creamy ice cream and does not seem to get freezer burn as fast as the more watery type of homemade ice cream. I also put them in air tight tuperware types of containers. I like the idea of using wax paper like some one mentioned above. I want to try lining the entire bowl bottom, sides and top with it next time I make some.

I make the creamy kind from Southern Living.  I've always done the custard kind, and we love it!  My favorite is fresh strawberry ice cream.  We don't usuallly have the problem of storing it...there's not much left.  Grin

Everytime I see your username I have to look twice.  My name is Bobbie Jo and when I see your name it throws me off.
We have a white mountain hand crank ice cream maker.  Don't know if you are looking for an electric one though.  We love ours, got it from the Lehmans store in Ohio.  We love to have company over and sit and crank together and fellowship.  Cheesy  LOL, that sounds funny!!  Ours is the big one that makes 6 quarts.  It is yummy!!

I use a RIVAL electric ice cream maker. I forget the price because I have had it a while. But since both my husband and I are cheapskates I'm sure it did not cost tons but it was not elcheapo either. I like it. I guess the only thing I don't like about is  that its freezer canister only holds 1 quart of ice cream  (actually slightly more). When I want to take the time to cook up some good Ice cream I want to make tons of it to store and share but thats OK.

Here is a recipe I got from the RIVAL booklet that came with it. I find this recipe to be very good. You can modify it by doing things like throwing in fruit, nuts, candy pieces, extra vanilla and much more. I find that home made ice cream when made with heavy whipping cream makes for a good thick cream ice cream that IMO no store bought ice cream can compare with. But to make it with heavy whipping cream can be expensive so because of that and my diabetes and our dairy intolerance's we can not make it much but every once in a  while it is a nice treat. I know it sounds weird to cook ice cream but this is how it is done.

INGREDIANTS for old fashion vanilla ice cream :

1/2 cup sugar
dash salt
1 cup whole milk
1 egg beaten
1 cup whipping cream
2 teaspoons pure vanilla extract

step 1-combine sugar, salt and milk in saucepan to cook over medium heat, stirring occasionally until mixture almost boils. then reduce heat  .

step 2-gradually stir about 1/2 cup of hot milk into the dish of beaten eggs
( this is very important and will help the eggs not scramble while they are being cooked in the ice cream mixture. I have had scrambled egg flavored vanilla ice cream several times from not being careful in this step. it actually isn't too bad! LOL)

step 3- Then add the milky eggs to the hot mixture from step 1.
Then cook it over low heat stirring constantly until slightly thickened which is about 2-3 minutes. ( very important to stir constantly to help keep the eggs from scrambling and to help the mixture not burn to the bottom of pan.) then remove from heat and refridgerate at least 2 hours. ( more helps).

step 4- after the mixture has been chilled in fridge for 2 hrs or more add the whipping cream, vanilla ( extra  vanilla makes it even better) into the chilled mixture stirring with a wire whisk to combine it all.

step 5- you can stir it by hand and throw it in the freezer at this point without the use of an ice cream maker  and it will still be great and thicken up  or you can put it in the RIVAL ice cream machine while it stirs that chilled ice cream mixture into a thick creamy highly addictive ice cream heaven. This is also the time to put in added ingredients like M&M, crushed up heath bars, fruit and all that good junk.

It is time consuming and expensive but worth it once in a while.


INGREDIANTS for chocolate ice cream from heaven :

1 1/2 cups whole milk
2/3 cup sugar
dash salt
2 ounces of semi sweet chocolate squares finely chopped
1 egg beaten
1/2 cup of half and half milk
1/3 cup whipping cream
1/2 teaspoon vanilla extract

step 1- combine milk,  sugar, salt and chocolate in a pan and cook over medium heat stirring constantly until chocolate is melted and the mixture almost boils.

step 2- gradually stir 1 cup of the hot mixture into the dish of beaten eggs . See above recipe step 2 & 3 for important info on the eggs and more )

step 3- add the milky eggs  to the rest of the hot  ice cream mixture. cook and stir over low heat until slightly thickened ( about 2 minutes). ( see above recipes , be sure to stir  a lot so eggs wont scramble)

step 4-stir in the half and half, whipping cream and vanilla. then cover  and refridgerate for at least 2 hours. ( before you refridgerate it at this point IMO it makes a heavenly divine hot chocolate drink IMO from the very likes of heavens hot chocolate cafe)

step 5 -  Put the ice cream in the freezer at this point AFTER you have stirred it or pour it into the rival freezer canister and let it stir and thicken it up into a chocolate lovers suprise. Yummy thick creamy chocolate ice cream.

The RIVAL ice cream canister should be all froze up in the freezer before we ever  pour the ice cream into it.


Thanks to my dad he has put into me, my offspring and my siblings and their offspring the wonderful addiction  to ice cream. LOL. Well not addicted but we love it. I grew up with giant heaping bowls of ice cream for our Saturday night treat when we could afford it. My dad was sure to be able to afford it often. He was the ice cream king and tried putting various stuff on and in  the ice cream. Fun times. Great memories that we still talk about today.

We just got an old electric ice cream maker from Goodwill for $8!!!  It works will and it holds 5 quarts.  Keep you eye out for the good deals!  With it there were really good easy recipes.  We prefer the no-cook ones.

I think I want one that you don't have to freeze the bowl first.  Maybe I'll go check E-Bay.

And, BJ, we do have an ice cream addiction.  We stock up when it's on sale.  Mooneys/Strohs is pretty good.  When they have the 2 for $5 half gallon sale we'll get like 10!  I've never even had Ben & Jerrys or Hagen Daz before.  Outta my price range.

My quick and easy recipe is this:

OR.....   use 3 cups of raw milk making sure you get alot of the cream on top....
add 1 cup sugar (warning: sucanat will turn it brown, strange but still edible)
1 tsp vanilla
Mix all together inbowl and then pour into icecream maker...

THis is pretty much it... you can add other extracts, color, substitute yogurt for the milk, or add chocolate syrup.... if you add chunky ingredients like chocolate chips add them when it's gotten hard and is almost done... you just want to mix them in...

I make mine just like this, except I add 3 raw eggs.  It makes it SO rich and creamy. And increases the protein value, too.

This is how ice CREAM was originally made! With CREAM not milk "enhanced" with guar gum, xantham gum, et.al.

So how 'bout some mint chocolate chip? It was my sisters idea so I modified a vanilla recipe. This makes about a 1/2 gallon of ice CREAM:

1 quart cream
3 egg yolks
1/4-1/2 c honey
1 t real peppermint extract
1/2 T booze (something w/o a lot of flavor...helps keep the ice cream smooth....can be omitted)
Ghiradelli 60% cocoa baking chips, chopped up a bit

Mix all but the chips together and run it your ice cream freezer (I have the KitchenAid Ice Cream Maker attachment). About halfway through, add your chocolate chips.

More later...or as they are developed! (Butter pecan, Rum Raisin, Dark Chocolate.....sorry, just drooling, er, uh dreaming! Grin)

I was going to say that you don't have to spend much at all to get a good ice cream maker. We have an electric one that will make 2 gallons of ice cream and it couldn't have cost more than $30 bucks=) I guess its personal preference;)
Thanks for the recipes. I love the old fashioned vanilla one with the eggs. It has more character...LOL.

   We have a white mountain electric  freezer and think they are one of the best out there.

This recipe brings raves from family and  friends !!!!

Soften 2 to 3 Tablespoons gelatin in 1/2 cup of milk.   Then heat about 2 cups milk and stir softened gelatin into hot milk.   

While the above process is happening we put in our blender 5 eggs,  1/2 teas. salt ,  1 1/2 cups honey,  ( we like to use half honey and half maple syrup)  2 or 3 cups cream, and  1 or 2 tablespoons vanilla.    Then we add  the above gelatin  mixture as well and blend everything together and put it in the ice cream maker and then add enough milk to fill line. 

Some variations we do is add fresh or frozen fruit and then add some pecans.   Make chocolate ice cream by adding  cocoa powder  and then put in a couple of organic dark chocolate bars broken in peices!!!!!    Shocked    Grin    This should give you enough ideas to get you started.     Wink

Has anyone made ice cream from coconut milk? We are currently CF and so I am trying to find a good alternative to regular ice cream. There is a little co. here in OR that sells a product called Coconut Bliss. It is ice cream made with coconut milk and agave syrup. It is VERY yummy but also VERY expensive. Anyhow, that is what made me wonder about the coconut milk. I also have hemp milk and rice milk on hand. Any recipes for those? Since there isn't really cream I wasn't sure if/how they would work. TIA!

My mom's had a White Mountain Ice Cream freezer for years. IMO- it's the best. Her's is 6 qt. electric, selling on ebay now for about $200, I think. The motors are really heavy, so they don't burn out easy. I remember hearing something about the way it's made that helps the ice cream come out so creamy. It's awesome.

My moms recipe is also sooooo easy.
Mom's Ice Cream
4 eggs
2 1/4 c. sugar (I use less than 1 c. maple syrup)
5 c. milk
4 1/2 t. vanilla
4 c. cream (I may use less cream, and more milk)
 Beat eggs, add sugar, beat awhile. Add the rest of ingredients and beat. Freeze according to the directions on your freezer.
Yield: About 4 qt.

Variations: When almost finished, add pureed strawberries or peaches. Yum!

This is a real Sunday nite supper for us. They're gonna' eat ice cream anyway, so might as well make them something good for them!

I've heard you can make really awesome ice cream from liquid nitrogen...
so i'm wondering if they have anything in the market that uses liquid nitrogen... that would be really cool, albeit a little too dangerous... but for great tasting ice cream, i'd think it would be worth it. Grin
