  homemade syrup

Hello, I thought I would share something I started a few years ago with my kids. WE always have enjoyed making homemade pancakes. We would usually just put honey on them. One day I added maple flavoring to the honey (I think you can buy pure maple flavoring by the vanilla at the store.) THe honey syrup was still too thick to really be syrup like so then I added water to it, not alot of water just a little and it became perfect honey syrup. It is good too!

Last night my mom was over and we were making TONS of waffles to freeze and the subject of syrup came up.  She was telling me that her grandmother always made her own syrup and it sounded so easy I am going to try it.  She said that my Great Grandmother boiled water, butter, sugar and maple flavoring and that was it.  If anyone has used this recipe (or another one) and has any more specific directions I would really be interested.  Unfortunately I don't have any maple trees to tap Roll Eyes  THANKS!

I used to make it often! But I haven't in a while, because of the sugar.  Wink

Pancake Syrup
 1 cup white sugar
1/2 cup brown sugar
1 cup water
Bring to a boil. Cover and boil/cook 1 min.
Cool slightly and add
1/2 -1 teaspoon Vanilla
1/2 - 1 teaspoon of Maple flavoring  ("Mapleine" -from Walmart works fine)

Use immediately or refrigerate for later use. DH enjoys it hot, so we often added a little butter for flavor and used it all. Don't add butter if you plan to store it as it will separate and harden on the top.

I have also made this into a fruit syrup by replacing the water with fruit juice and using all white sugar.  Blueberry, raspberry and blackberry all make good syrup.  I skip any additional flavorings.

My kids don't handle white sugar well and we are GFCF, so sometimes I make them fruit syrup by taking frozen fruit (strawberries or blueberries work best) and thawing it in the microwave for a few minutes until runny.  Then I put it in the blender and crush it all up until it's liquidy.  Then I put it in a pan on the stove and add pure maple syrup and heat until it's slightly thick and sticky.  It's yummy on pancakes and waffles, (or even ice cream  Wink).  You could even add a little vanilla extract for extra flavor.   Grin

BUTTERMILK SYRUPmeasurements corrected 1-22-07

Melt 1/2 cup butter in large saucepan
Add 1.5 C sugar
3/4 c buttermilk
2 Tb corn syrup
1 t baking soda

Bring to boil & boil 7 min. (it gets really fizzy so be sure you have pan space for it or you have a big, hot mess.)

remove from heat & stir in 2 tsp vanilla.

makes about 2 cups.

Ooooh, I'm interested.  I don't like maple straight and regular syrup from the store has sooooooo much corn syrup in it.  I'd rather do the sugar thing for sure.

That is kind of what I was thinking as well.  The conversation started as I read the syrup bottle and the main ingredients were Corn Syrup and High Fructose Corn Syrup... yuck!

This isn't something you can make, but another option for "maple syrup" is brown rice syrup. They have regular, honey flavor and maple flavor and the maple tastes like a less sugary sweet version of what's in the store. Just another option (w/o corn syrup) that tastes great! Smiley

For those who would really like to make maple syrup but think they can't  because they have no Sugar Maple trees, you can make maple syrup from any maple tree.  Sugar Maples just have a much higher concentration of sugar, and therefore it takes less sap to boil down.

We make a really easy syrup.  It does have sugar, but not the high fructose corn syrup like the stores.  It is a little of this and a little of that, but you jsut adjust to what you like consistency and taste.  1c brown sugar, 1t vanilla, 1t male syrup, water to consistency.    Warm in a pan until all is disolved, then boil to consistency desired.  Use very little water at first and add if necessary.  Enjoy

I use soft butter, honey, and concentrated blueberry juice. Mostly butter, and probably equal parts of the juice and honey. The juice concentrate I buy is the kind they sell as a health food for people to use as an antioxidant supplement. The kids love it, sometimes they want that instead of jelly on their toast. I keep leftover amounts in the fridge. Smiley

Hey Guys!
     We make syrup all the time because it can't be bought here!  We have a couple of different recipes.  

Regular syrup:
4 cups sugar (we use 1/2 white and 1/2 rapadura)
2 cups boiling water
Combine and boil about 15 minutes.
Remove from heat and add 1 tsp. of maple flavoring or vanilla flavoring

Rapadura syrup:
1 cup of water
1 kilo bar of rapadura (about 2 lbs)
Melt solid rapadura, stirring almost constantly
Sometimes we add vanilla to this and sometimes we just use it as is.    
Depending on the flavor of rapadura you buy, this can be pretty strong (sweet) and you may want to add more water.

My Husband LOVES chocolate!  So sometimes we melt semisweet baking chocolate and mix it with an equal amount of natural peanut butter and 1/3 the amount of butter and put this over the pancakes or waffles.
Disclaimer: THIS IS WAY TO RICH FOR ME!  But you should see the kids and DH go for it!

We keep all extra syrup in the fridge.  It keeps for weeks.

I like all the different ways you guys make syrup.  We are going to try a few.

I made this recipe today Smiley I used 1/2 white and 1/2 brown sugar, a squeeze of molasses (from Aldi) and vanilla flavoring. It has a stronger flavor than the store bought that we usually get, so I think we will end up using less syrup, which is ok with me! It was really yummy, and its thickening up beautifully in the fridge.

When we were low on money a while back all we had for a while it seemed was the ingredients for pancakes and plums from a relatives yard, so every day for breakfast we had pancakes with homemade syrup. All I did was put the plums into a pot whole, and cook them (beating them too) until they were very mashed and liquidy. Then I strained out the peelings and seeds. Added sugar to taste and boiled it until the pancakes were ready. If I boiled it for longer it would get thicker, but we were usually so hungry we didn't mind the thinness of the syrup. Poured hot over pancakes.... MM it was SOOOO Good! Plum syrup is the best! Oh and it works only really well with plums that are soft and mushy. If you have plums laying around that are getting soft and mushy and no one wants to eat them, use them for syrup!
