  Faux [Non Pork] Sausage Recipes

I tried this once and it was gross.  Got a recipe?

HB - for 1 1/2 pounds ground beef or turkey to make "Italian" sausage you can add 3 t paprika, 1 t fennel seeds, 1/2 t black pepper, 1 t salt, 2 garlic cloves, 1 t oregano and then if you like it spicy you can add red pepper.  I use a fattier beef so it is more like sausage.  For a "Breakfast" sausage it's the same paprika, but then 1 t sage, no garlic or oregano, and then add 1 T maple syrup.

It's ok, but not as nummy and moist and porkie as the real deal.

Okay I tried this for lunch.

It was too bland so I'll put my approx additions in parens.  It still isn't quite right, but the biscuits and gravy weren't too shabby.

2 lbs ground turkey
1 1/3 tsp paprika (1 1/2 tsp)--this probably should have been 4 tsp
1 1/3 tsp rubbed sage (2 tsp)
4 tsp maple (left this alone - cuz it was almost too sweet)
2/3 tsp black pepper (1 tsp)
1 1/3 tsp salt (1 1/2 tsp)
dash red pepper

If you experts see something wrong with my conversions, be sure and let me know.

Actually now that I look at it, I may not have used enough paprika, but it was pretty orange and by taste, I thought the sage was not strong enough.  I just don't know enough about this set of seasonings to know.  I also didn't have any fennel - maybe this makes a bigger difference than I thought.  I might have to get some.

I have used fennel, sage, red pepper flakes, ground black pepper, and salt. I never heard of using paprika before, and I don't like maple in my sausage.

This is from "Lucy's Specific Carbohydrate Diet Cookbook". I'm sure it could be made with other ground meats.

Breakfast Pork Sausage

3 lbs ground pork, unseasoned
1/4 cup warm water
3 tsp powdered sage
2 1/2 tsp salt
2 1/2 tsp fresh ground black pepper
1 3/4 tsp marjoram
1/2 tsp savory
1/4 tsp nutmeg
1/4 tsp cayenne

Stir the spices together in a small bowl. Place pork in a large bowl and add spice mixture. With your hands, or a large spoon, kneed to distribute spices evenly.

Form into small patties for frying. Use a small amount of oil in pan and brown patties on both sides over medium heat.

Uncooked sausage can be kept in the fridge for only a day or two, but can be frozen in small packets.

I am not sure what FAUX means but I assume the non-pork means any recipie made with a meat that is not pork? So here is one...
1 lb Ground Lamb
1t salt
1/2 pepper
1/2 t cloves
1/2 t cayenne
1 t garlic powder
1 t onion powder

Mix and brown.

Just in case no one knows, even the non-pork sausages you buy at the market are still often stuffed in pork casings.  If you're making them yourselves, though, you know what is in them.

Italian Sausage

For every 5 pounds of ground pork or turkey:

1 cup water
2 T garlic salt
2 T fennel seed
1 T dried parsley
1 tsp black pepper
1 tsp crushed red pepper

Mix thoroughly with the meat, package in 1 pound packages with freezer paper and freeze; or, if stuffing for sausage links, wash casings before stuffing


I would imagine you could use ground beef also!

I made some changes to the Turkey Breakfast Sausage from N.Traditions. For one, I didn't make it turkey  Grin I thought it would be dry. I used beef (and once 1/2 reg. ground beef and 1/2 ground venison). I just made sausage patties as I wasn't going to fuss with stuffing. DH liked it so much that I think we will use this recipe when we butcher this fall.

1 lb         ground turkey (or whatever)
1 small    onion, peeled and finely chopped
1/4 tsp   (I think I was generous with this) each cumin, marjoram,           
              pepper, nutmeg, oregano, cayenne pepper, and ginger
1/2 tsp    (again, I was probably making this a bit rounded on the spoon)
              each, dried basil, thyme, sage,
2 tsp       sea salt
1/2 cup    bread crumbs (originally called for 2 TBS but more bread     
               crumbs makes it moister - also I use gluten free bread crumbs 
              made from my leftover bread)
1            egg, lightly beaten
2 TBS      butter (I omitted this with the beef)
I added some organic cane sugar - maybe it was 2 TBS???

Mix all ingredients and chill well. Form into patties and fry (may need to add a little fat to the pan depending on how lean the meat)

The following recipes are for 10# of ground meat.  I use beef.

Hot Sausage
1 T Crushed red pepper
3 T Paprika
3 1/2 T Salt
2 T Sugar (I use a sprinkling of stevia powder)
1 1/2 tsp White Pepper
1 T Ginger
2 T Fennel seed
Enough water to help it all blend together nicely.

I have mixed it into raw meat as well as adding the seasoning to pre-cooked ground beef.  Both are tasty!

Sweet Sausage
1 T Ginger
1 1/2 T White Pepper
2 T Sugar (again, you can sprinkle on some stevia)
1/4 c Salt
2 T Sage
Water
