I got my granules just before Thanksgiving.  I haven't had a creamy batch yet.  It all separates and gets chunky.

Ive used it for baking but nothing else.  It would be nice to get something creamy going.

Dom's site said to leave it out for 24 hours in a cupboard... once I started doing this, I finally had THICK kefir. Also, the pics on his site show what it's supposed to look like after 24 and 48 hrs. I now have normal kefir! Wink

So.........you can kefir with storebought homogenized pasteurized milk?  What about the whole fat crystal peircing your gut etc?  We have not drank store bought milk in well over a yr.  I have never kefired with it.  I do however get really stingy with the raw milk and "worry" about my grains b/c if we run out we run out and I just have to wait..It is an hour to the closest place to get raw milk for us.  I am just wondering if the store bought milk causes an allergy in my son(and it does)will the kefir benefit him or not with store bought?  I DID pay 20 dollars for my grains only it was probly less than a 1/4 of a cup.  More like a blob and they have never grown like Homefrees showed.  I do only make a quart at a time though.  I am not particular about saving the babies though either.  I strain them thru a colander.  I have given away only three blobs myself b/c they don't seem to grow that much or that fast.  Maybe b/c they sit sometimes?

You may want to go back to the first pages of this thread and read through (all 20! Roll Eyes ) Most of my questions have been answered just by reading.

I'm relatively new at kefir making, but have had great success just applying what I've learned here. DH told MIL that the kefir was one of the best things about this site! Grin Grin Grin Grin Grin

Another suggestion for your grains is to divide them into 2 mason jars and see if that helps any.

The best thing I've learned here is that you can't really mess up kefir making and it's all trial and error! Wink

yup.  sadly, raw milk is illegal here and i can't find any farmers who want to skirt the law.  Sad we just use store bought skim (AE) for everything.

Well, for me Kefir was the biggest thing I DIDN'T want!  Grin Roll Eyes I had been making it for a few weeks and using it in smoothies...and then morning sickness. Just the smell was enough to send me over the edge. So I kept making it sometimes just so my grains wouldn't die, and stored it in the fridge in between (well, until an unknowing houseguest threw them away, which led to another symptom of pregnancy, the emotional meltdown...but I digress  Tongue). But it probably just depends on the person. Probiotics did help me somewhat, but I couldn't stand the smell of anything fermenting during my morning/all day sickness.

So, I'd like to sneak some of the kefir into foods where he won't notice the difference.  He can get the benefits without knowing it.  Does anyone have any suggestions or recipes?  Does it kill the beneficial part of it to cook with it?  I have 14 more pages to read through on this thread, so if someone knows where the answers to these questions might be posted please let me know.  Grin

I'm not sure if cooking with kefir kills the beneficial part or not. I cook with it anyway. I use it in any recipes that call for yogurt or buttermilk. When I make biscuits for breakfast, I soak the wheat flour in kefir milk over night. I also soak my wheat flour for all bread products in kefir milk. I make my dh a coconut yogurt smoothie for breakfast but substitute kefir for yogurt and he can't tell the difference (he knows I do it so maybe that's why he can't tell a difference).

I'd use it. Slightly sour milk doesn't scare me, it just tastes a little weird which you won't notice in kefir. Also, I think the grains will kinda "freshen up" the milk. I don't have any documented proof for any of this- just my feelings and thoughts. Roll Eyes Grin

If sour milk would work, what about buttermilk? It's soured to begin with... or is the sugar content not enough to feed the grains? I'm under the impression that sour milk isn't harmful for you; it just tastes bad Tongue not that you asked me for my opinion or anything! Grin Wink

That does sound to me like more grains than you need for 2 c milk. Guess you could try less, like only two of your "blobs" and see if it smells less yeasty.

I'd give it a try. You can use kefir grains in all kinds of juices, teas, and even water, so why not cream? Smiley

I may have asked this b/f, in fact, I know I did but never got an answer.  It looks like I may have to resort to doing store bought milk atleast some of the time for my kefir.  Has anyone done both store and bought and did you notice a difference?  I am wondering if the whole homo problem with drinking the milk would be the same with kefiring or even baking with it?  And is it better to use whole or skim?  I would really appreciate some help on this as my 8 yr old really has had problems with store bought milk in the past.  Thanks.  Smiley

I think skim is better than whole store bought milk.  I read on here that Rebekka said she used powdered milk because it is not homogenized.  I think.  I will have to try to find the post.  It might be an alternative.
I have noticed a difference in store bought and raw. We like the raw better, always has a little cream in it.  Wink  HTH
