Did you use a large can of tomato sauce or small?  Do you also have an enchilada recipe?  Do you put the chicken in the crock pot frozen? Thanks!

I just cooked this on low all day and chopped the chicken up with kitchen sheers. It made a tasty burrito filling with leftover pinto beans and cheese and I have enough left over to make enchiladas. I think I'll double it next time and freeze most of it.

It was the standard size. LIke 15oz I think. It was not the big family size can, but not a little bitty one either. I don't have a chicken enchilada recipe. I was just going to roll the mixture into corn tortillas that have been softened in enchilada sauce. Pour enchilada sauce over them and cover with cheese and bake. I might add some raw onion as I like the crunch. This chicken mix was yummy as a soft taco. It would be good on nachos too, you would just have to use a slotted spoon to drain off some of the juice.  Yes, the chicken was frozen.  Adding extra cumin is a critical step I think. I want to make this for some non-pork eater friends who are coming over.  I would like to try it with beef.  Does anyone know what cut of beef I would use to replace the pork and would I cook it any differently?

Here is one of our favorite crock pot recipes (just made it this weekend):
CHALUPA!!

In heavy kettle or crock pot mix:
1 lb. dry pinto beans, soaked overnight and drained
3 lb. lean pork roast
1/2 cup chopped onion
2 minced garlic cloves
1 TBS. salt
2 TBS. chili powder
1 TBS cumin
1 teaspoon oregano
1-4 oz. can green chillies, chopped
7 cups water

Cover and simmer for 5 hours, or 10 hours on low in the crock pot, or until meat falls apart and beans are done.
Remove bone (if you have one) from the meat and mash beans. (I don't always do this--we like them more on the 'whole' side)
Uncover and cook about 1/2 hr or until desired thickness.
Serve over a plate of corn chips or Tostitos, or in warm flour tortillas and pass the toppings!!

Toppings:
chopped tomatoes, chopped avocado, chopped fresh onions, shredded cheese, lettuce, olives, taco sauce, sour cream, you get the idea...

(Note: I like to use a boneless roast--I look for them on sale! This recipes makes a LOT! This recipe easily serves 12 people, or we can have leftovers and DH likes to take this in his lunch Smiley)

This smells soooo good when it's cooking!! Be ready for a hungry crew  Wink

Should be fine. I haven't bought pot roast in a while & I tend to identify roast by looking at them instead of the cut names so I just found this quote on Hormel's (not recommending Hormel, it's just the quickest thing I found) web site:

"The top round roast is obtained from the top round muscle. It is one of the better cuts from the round primal in terms of flavor. Pot-roasting is still the recommended cooking method for a top round roast, because it can be a bit chewy if cooked with dry heat methods."

Since cooking in a crock pot is pot roasting it should be good. Since DH doesn't care for pork much, I may try it myself.

BTW- you might want to pan sear roast before putting it in the crockpot. This is a standard 1st step in cooking a pot roast & it keeps the meat from losing too much of it's flavor to the liquid it's cooked in. Otherwise, the meat can end up somewhat tasteless. (voice of experience  Roll Eyes Roll Eyes

We don't eat pork So I made this with Chuck Roast and it turned out great!  It shredded just great because the crock pot always makes it so tender!  (I didn't even defrost it before putting it in.)  Hope your's turns out good!

No, you don't need all 7 cups. I would probably start with 4-5 and watch it carefully. Sometimes you have to add water if it is getting too dry and the beans aren't quite done yet. I've found this happens if I make the Chalupa in a Nesco. When I make it in a crock pot, this really isn't a problem, as the crock pot tends to hold in more moisture.

Edit: Ok, I just checked my own recipe (DUH) and the recipe calls for beans that have already been soaked. So, I guess I would use close to the 7 cups it calls for. But back to the Nesco--if you are using one of these babies, definitely keep an eye on it. They really tend to lose a lot of water during cooking.

I got a recipe from a website called maryjanesfarm.com
I have made it about once a week all summer because my family loves it. It is one whole chicken , Put in the crock pot sprinkle 3 table spoons of Old Bay spice. then cover and cook 6 to 8 hours on low. It turns out really good, No need to add any liquid. I made mashed potatoes to go with the gravy the chicken made.
 Then I made a top round roast the same way, with the Old Bay spice and put little onions and finger potatoes and it it was great.
 I am going to make the roast again and this time I am going to try it with yucca potato things. They are long and the ones i see in the grocery store have a wax coating on them to keep them fresh I guess.  Oh and the Old Bay spice has celery salt in it so no need to add any salt it is quite salty to me.
   I think this recipe is healthy.

This sounds sooooo good Faith!  We got back from Maryland and DC this summer, so I have been craving Old Bay for awhile, now.  Can you find this spice in a store out here?  I don't recall seeing it.  Will look this week!

It is really good , I had never used Old Bay before.
 I think you can get it anywhere.
 I found it super size in Sam's Club and in the grocery store in the seafood area. I guess you could get it from the internet.
  It doesn't say you can use on beef but I did. And I am going to make a lamb roast soon with it.

i'm sure you've made it by now, but i make mine in a crockpot and only use about 4 to 5 cups water (i soak beans overnight) because the first time i made it i used 7 cups and thought that much water really diluted the spices so it wasn't as flavorfull as it should be.  using less water the next time helped.  that probably only applies if you are using a crockpot.

Okay I know this is late but if you get things too watery with crock pot put it on high and take the lid off for a while. That will help the water to evarporate some.  On a side note I forgot to soak my beans for chalupas put everything in my crock pot with just about 3 cups water (maybe not even that much.) And my roast was frozen. cooked it all day and it was GREAT.  So it's pretty hard to mess this up too much.

Well, that's encouraging and disturbing all at the same time.  Undecided

I was SO excited to try this recipe today, and it didn't work out.  (yet?)

I soaked the beans last night.  The roast was thawed out completely.  I put it all in the crockpot at 9:30 this morning on HIGH.  I would rather it have been done early than late, so I figured if it got done before dinner time, I would just shut it off.  Much better to have to warm it up if necessary.  Beans were still crunchy and meat not falling apart by 6:30 when I gave up and made a whole 'nother meal.  Sad Angry  I noticed the beans were good by 9:30-10 pm, but the meat is still not tearing apart with forks and there's still so much liquid it looks like soup.  Roll Eyes  I took the lid off about an hour ago to hopefully cook off some liquid.

So... I'm thinking my crockpot's shot.  This isn't the first mishap with similar results.  Angry  I wonder if it's cheaper to repair or replace? Undecided

I made this in the crockpot last Sunday and it turned out soooooooo good!  It was a big hit with our guests along with some fresh bread and salad.  It's so nice to come in on a Sunday from church and have dinner all ready to go!  This recipe also freezes really, really well if you leave out the pasta.

1 lb. ground beef, browned and drained
1 onion, diced
1 lg. carrot, grated
3 stalks celery, chopped
3-4 cloves garlic, minced
2, 14.5 oz. can diced tomatoes (I use a quart of home-canned crushed tomatoes)
15 oz. V-8 juice
15 oz. tomato sauce
1 tbs. white vinegar
1 1/2 tsp. salt
1 tsp. oregano
1 tsp. basil
1/2 tsp. pepper
1/2 tsp. thyme
BEANS - (several options here)  You need a pound of your favorite dried beans, soaked and fully cooked, or 30 oz. of canned beans.
The original recipe calls for 15 oz. kidney beans and 15 oz. great northerns with their liquid.  I hate kidney beans, so I substitute cannelini beans OR, to be super authentic to the Italian recipes, I use about a pound of dried cranberry beans that I've already soaked and cooked in the same crockpot I'm putting the soup in.  I like the dried bean method the best actually.
1/2 lb. ditalini pasta (prepared) - may substitute any very small pasta shapes

After browing the ground beef, drain it and rinse it, and add it to the crock pot.  Saute the onion, carrot, celery & garlic in the same pan until they are soft.  Add all of the ingredients to the crock pot (except for the pasta) and stir it up.  Cook on high for about 4 hours.  Add the pasta just before serving.

this sounds really good, what shape is ditalini?  never seen it around here, so i will look for something that shape.  thanks!

i found old bay spice at walmart and i am trying this whole chicken thing today...
questions: my chicken is frozen...how should i adjust cooking time??? low for 3 hours then high for a few?
should i add the spices after it's thawed?
this is the first time i've used a crockpot...i'm so excited!
keep those favorite recipes coming...inquiring minds want to know!

I use 4 cups water with mine. I did soak my beans and got it in the crockpot at 9:00am.  By 4:00 the beans were soft and ready.  The meat was probably too but we didn't eat until almost 7:00.  I just let it cook an low the whole time.  It turned out great.  And it was not soup. But I did use a slotted spoon to serve.  (the leftovers the juice has thickened some yum!)
So sorry to say youthful one but I think you need a new crock pot.  By the way I used my big 7 qt. size one. Hope that helps anyone doing thei recipe. Happy eating Smiley

This is the easiest and one of the tastiest lasagna recipes!  I got this from a friend and we have been eating it for over a year, now.

Lazy Lasagna

1 # beef
1 small onion
2 jars spaghetti sauce
shredded cheese(mozzarella, provolone, or both)
whole wheat lasagna noodles

Brown beef with onion and add sauce. 
Layer in a crockpot:  1 1/2 cup sauce, noodles, sauce, cheese, etc. until used up.  Make sure your last layer is cheese and sprinkle with dried basil or parsley.

HIGH 3-4 hours           LOW 5-6 hours.

Just wanted to say I made this yesterday and it was a big hit! I added the cottage cheese that is in most lasagna since I had some in the fridge! Thanks SC this will be our Friday meal!

Mushroom Beef

4 tablespoons butter
4 ounces mushrooms, sliced
3 tablespoons flour (sprouted or WW or unbleached)
1/2 tsp salt
dash pepper
1 cup milk or cream
1 cup beef stock
1 lb of stew meat

Melt butter in a saucepan. Add mushrooms and saute until limp. Whisk in flour, salt and pepper and cook over low to medium heat until the flour begins to brown slightly. Pour the milk and stock into the mixture in a slow stream, whisking the whole time to avoid lumps. Bring to a boil, reduce heat and simmer 5 minutes.

Place stew meat in crock pot and pour sauce over top. Cook until meat is tender. Serve over rice, egg noodles, or potatoes.




I made this last week and just wanted to thank you Whiterock for a really yummy recipe! My children are not big beef eaters and I got one of them to eat this and ask for more Smiley YEAH! DH absolutely loved it too!

I added onion and garlic to the mushrooms and also added parsley at the end of the crock pot cooking.

We have very hectic Monday afternoons so Monday has been our crock pot day. I look forward to trying more of these!

Ditalini is short, stubby tubes of pasta.  They're quite small - probably won't even fit on tip of your pinky.  Barilla brand sells it, but it isn't the easiest to find.  Elbow macaroni or mini shells would probably substitute well - anything really small.
