It comes out thick but we like thick oatmeal so we can pour a little bit of raw milk over it in the bowl. We also add a pat of cultured butter and sweeten with maple syrup in the bowl (the original recipe is cooked with 1/2 cup of brown sugar). The leftovers make wonderful Oatmeal Cake.


WR you have such good recipes!  I made this again putting my crock pot on warm all night (instead of low) MMMM it was Great.  I also used pears instead of apples because that's what I had.  Delicious.  Can't wait for dinner now were trying your mushroom beef.  Thanks for the recipes! Yummy

I'm always looking for good "Sunday Recipes"... the kind that you can fix up in a crock pot and have it cook while in church so lunch is basically ready to go when you get home.  I especially like these kinds of recipes because we often have company over, and I don't like to spend an hour in the kitchen while my company sits around waiting for dinner!  Anyway, if anybody has some good "Sunday Recipes" to recommend, I'd love to hear them!

This past Sunday, I tried Debi Pearl's "Sunday Recipe" for Chicken and Dumplings from CTBHHM.  I made a few variations, but it turned out amazingly good, so I thought I'd post it on here.

* 2 lbs. boneless skinless chicken breasts
* 1 onion, diced
* 2 stalks celery, diced
* 3 cloves garlic, minced
* can of cream of chicken (or homemade equivalent - I make my own)
* approximately 6 c. chicken broth
* 10 small flour tortillas, cut in half, then 2" strips

I trim the fat off the chicken, cut them in half (makes them stretch further!), and brown them in a skillet in some butter.  You could skip this step, but it makes the chicken nicer.  Add it to the bottom of the crock pot.  In the same pan, soften the onion, celery & garlic in some butter and add it to the pot.  Next, I fix up my cream of chicken soup in the same pan and add it to the crock pot.  Then, I add about 6 c. of chicken broth and turn the crock pot on high.  At this point I also add my seasonings - a little bit of salt and pepper and some herbs.  Turn the crock pot on high.  Just before heading to church, I throw in the tortillas and give it a good stir.  When we got home, I fixed some steamed green beans and carrots and a salad and we had a gourmet meal!

There are some really great recipes here!  I will be spending the next 2 weeks researching them all because my dh is taking us with him on a job up north so I will be cooking atleast 2 meals a day only with 2 crock pots Roll Eyes.  Wish me luck!

I couldn't find anything about baked potatoes in a crock. Are you sure it was a crock pot recipe?  I searched for baked potatoes and nothing like that came up?

I couldn't find anything about baked potatoes in a crock. Are you sure it was a crock pot recipe?  I searched for baked potatoes and nothing like that came up?

I have done baked potatoes in the crockpot several times.  Once they came out great without the foil.  The next time, they were gray; oxidized.  We have stuck to wrapping in foil and they come out just like in the oven.
I just had a thought, though.  Maybe if you coat them with fat (butter, coconut oil, olive oil...) it will keep them from oxidizing and turning gray.  I'm going to try this next week.

I got a recipe from a website called maryjanesfarm.com
I have made it about once a week all summer because my family loves it. It is one whole chicken , Put in the crock pot sprinkle 3 table spoons of Old Bay spice. then cover and cook 6 to 8 hours on low. It turns out really good, No need to add any liquid. I made mashed potatoes to go with the gravy the chicken made.
 Then I made a top round roast the same way, with the Old Bay spice and put little onions and finger potatoes and it it was great.
 I am going to make the roast again and this time I am going to try it with yucca potato things. They are long and the ones i see in the grocery store have a wax coating on them to keep them fresh I guess.  Oh and the Old Bay spice has celery salt in it so no need to add any salt it is quite salty to me.
   I think this recipe is healthy.
I'm finally getting around to trying this, but I have a stupid question:

Am I supposed to skin the whole chicken first?

I was a vegetarian most of my adult life until the last couple of years, so this stuff is new to me.  I can't picture in my head how it is going to turn out if I leave the skin on. Huh Huh

You're welcome. I guess some other ladies haven't had such good luck with their chalupa (too soupy), but I'm glad your dh loved it. It has become one of those 'standby' meals here at our house, like so many other good recipes....

"Easy and Delicious Chicken"

6 skinless, boneless chicken breast halves
Italian dressing**
10 ounces heavy cream
1 1/2 cups chicken broth
10 ounces cream cheese
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
salt and pepper to taste

DIRECTIONS:
1. In a slow cooker, combine the chicken breasts and Italian dressing.
2. Cover, and cook on Low for 6 to 8 hours.
3. Drain off the juices, and shred the chicken meat. In a medium
bowl, mix all the other ingredients and pour it over the chicken in the
slow cooker. Continue cooking on Low for 1 hour.


**Mix together:
4 ounces white vinegar
8 ounces olive oil
a few shakes basil
a few shakes dried onion
a few shakes time
2 tablespoons garlic (I love garlic)

this is an awesome recipe, not sure where i got it, could be on WTM somewhere but here it is anyway, might be able to sub reg. chicken breasts somehow, but haven't done that yet. 

Peanut Chicken

Mix together:

1/4 c. peanut butter
2 T chopped peanuts
2 T soy sauce
1 T minced onions
1 T minced or dried parsley
1 clove crushed garlic
several drops of red pepper sauce
1/8 t. ground ginger ( i used real--maybe 1/2 t)

brown one side of 4 skinless boneless chic. breasts then put 1/4 of above mixture in the middle of each and fold in half.  secure with toothpick and put in crockpot.

then mix:

2 T. soy sauce
2 T. honey
1 T. melted butter
10 1/2 ounces chicken broth

pour over chicken.  cover and cook on low for 4 to 5 hours.  Remove chicken from pot and turn to high.  dissolve 1 T. cornstarch into  a little cold water and mix in. ( i always do this on the stove, cuz my CP doesn't get hot enough) spoon sauce over chicken and serve.  we used rice under it.  it was delicious!   Grin

I have the solution for the soupy-ness.  This recipe usually makes 3 meals for us.  We eat one and freeze 2.  To prepare the frozen ones, rather than doing it on the stovetop, I bake it in a pan in the oven, uncovered, and it thickens up really well.  I also put cheese on top and let it melt when I do this.  So the first one, we just serve with a slotted spoon, the other 2 we bake.

I have it in the crockpot now.  I didn't bother to fold it (too thick and I didn't feel like pounding it.)  I also didn't brown it.  I just smooshed the pb mixture all over the chicken and covered with the sauce.  Not sure how it will turn out.  The rub might just incorporate into the sauce.  I'll let you know later.
 I'm sure if you were doing it per the instructions, the brown side would be out.

'I love using my Crockpot.. my sister gave me this idea for a crockpot recipe.

BBQ Shredded Chicken
4 boneless skinless chicken breasts
1/2c water
1 tsp lemon juice
barbeque sauce to taste
1/4 to 1/3c water

With the crockpot on LOW, cook the chicken, water, and lemon juice for 6-8hrs or until no pink is showing. Turn off CP and let chicken cool. (You can even do this part the night before). With a fork, shred the chicken and put back into the CP. Add BBQ sauce, water, and turn on low for an hour or two. Pile high onto a wholewheat bun and enjoy!

i browned it because my hubby prefers everything "crispy".  to give the illusion of crispiness!   Wink  i folded it to the outside.  it was really good and he didn't complain of "boiled" chicken.   Roll Eyes  it was a hit with everyone--and i am always wishing for more recipes that go in the CP that the family enjoys.

You leave the skin on.
If you want to remove the skin, do that after it cooks.  The skin keeps the chicken moist but none of the fat absorbs into the flesh.

Thank you for the help.  Mine is almost done now, just have to cook up the asparagus to go with it.  It looks and smellls so good.  I made the lemon garlic chicken last night.  It was also excellent.  My family all liked it.  I have not done much crockpot cooking before.  Its fun to have new food that I can get done earlier in the day.  I think I will try the oatmeal tonight or tomorrow.  Lisa

If you can get your hands on an electric skillet, they are great for not having a stove.

So, what creative ideas do you guys have for rehashing this dinner for tomorrow night?

Here's what I was thinking:
1. Mix it all with brown rice & lots of cheese & bake. Add tomatoes maybe??
2. Do some kind of layering thing w/ corn tortillas, chalupa mix, cheese...

I'm excited to hear your ideas,and thanks for this delicious meal. I'm sure it will become a regular in our house!  Smiley

Pull them out and microwave for about a min on each side or put them in the oven to reheat.  You don't even need to thaw them out.  Enjoy

That sounds good. It also gave me another idea...I could deep fry them and have chimichangas!! With sour cream sauce! YUM!!

I may have to do what you do & freeze them, then pull them out another night & fry them, so it's not like the same dinner twice in a row. I guess I could do bacon cheese fries tomorrow night instead...

Exactly how you said! Make the burritoes then deep fry them. You can also do a white egg wash on them too if you want.  but you had it right.
