  HEALTHY crock pot recipes

Can anyone guide me to a cook book of healthy crock pot recipes? I am trying to use the crock pot more often, but am not coming up with great ideas on my own and every crock pot cook book seems to use cream of something soup in most of the recipes. There are so few healthy ones. Thanks

I don't have a book title to give you, but I do want to give some advice about recipes that call for cream soups.  You can make your own "cream soup" without the hydrogenated oils and msg that make the canned type undesirable.

Most standard crock pot recipes can be modified by directly substituting the undesired ingredient with a more healthful alternative.

In the meantime and good crockpot book that i use a lot is "Fix it and Forget it"  Love that book.  TOns of great recipes.

To find a cream soup recipe, type cream soup in the search bar at the top of the page.  I believe that there is a thread on this particular recipe.  Hope that helps! Smiley

Leanne Ely has some great healthy crock-pot recipes in her e-mail menu mailers, she NEVER uses creamed soup and they're always very easy.   I love using her service (I'm not affiliated in any way, it's just been really helpful for me).  Here's her site: www.savingdinner.com  You can get free sample recipes (menus) there if you look here: http://www.savingdinner.com/menus/sample_menus_spring/sample_spring_CCMM_pdf.pdf
The only thing I do differently is to make my own chicken broth and freeze it in small portions to use instead of canned chicken broth.  You can buy organic free range chicken broth in paper boxes too.

I make my red beans and rice in a crock pot.  I put dried red kidney beans in the pot in the morning (I don't soak them or anything...can't figure out what that is for).  I add Tony's cajun seasoning and some diced onions and celery a little while later.  A couple of hours before I am planning on serving it, I add cut up turkey or deer sausage.  Served over brown rice....YUUUUMMMMM.   My kids love it.

Just a note on the cream soup thing. My kids are allergic to dairy, so I subsitute thickened chicken broth for the soup.

Why wait for winter? They are a God Send in this summer heat! They heat up your kitchen much less than the oven....that is unless you do most of your cooking outdoors in the summer. Wink

I never buy creamed soup I use a homemade sauce. It's not as thick but it works in everything I use it for.
2 Tablesp butter
2 heaping Tablesp flour seasoned with salt, pepper and whatever other flavor you like.
1-1/2 cups chicken broth or beef broth, I've even used milk
Melt butter in saucepan over med. heat add flour whisk together to make a paste. Add liquid all at once continue to whisk until thickend.
I've never tried this with whole wheat flour but I think I will.

i second "Fix it and forget it".  Hamburger Barley soup on page 35 is awesome!  i subbed out potatoe for the tomatoes and added 2 cans instead of 3 of Campbell's condensed beef broth (bad i'm sure) and 4 cans of water.  mmmmm i'm getting hungry just typing it!!!  i hope to try more recipes out of there soon!   Grin  it is awesome with some homemade bread or cornbread and a side salad.

Here is one of our favorite crock pot recipes (just made it this weekend):
CHALUPA!!

In heavy kettle or crock pot mix:
1 lb. dry pinto beans, soaked overnight and drained
3 lb. lean pork roast
1/2 cup chopped onion
2 minced garlic cloves
1 TBS. salt
2 TBS. chili powder
1 TBS cumin
1 teaspoon oregano
1-4 oz. can green chillies, chopped
7 cups water

Cover and simmer for 5 hours, or 10 hours on low in the crock pot, or until meat falls apart and beans are done.
Remove bone (if you have one) from the meat and mash beans. (I don't always do this--we like them more on the 'whole' side)
Uncover and cook about 1/2 hr or until desired thickness.
Serve over a plate of corn chips or Tostitos, or in warm flour tortillas and pass the toppings!!

Toppings:
chopped tomatoes, chopped avocado, chopped fresh onions, shredded cheese, lettuce, olives, taco sauce, sour cream, you get the idea...

(Note: I like to use a boneless roast--I look for them on sale! This recipes makes a LOT! This recipe easily serves 12 people, or we can have leftovers and DH likes to take this in his lunch Smiley)

This smells soooo good when it's cooking!! Be ready for a hungry crew  Wink

I use this and it is pretty free of the "can of this, packet of onion soup mix, etc."  On the back cover "...recipes you can use to prepare a tremendous variety of foods in your slow cooker using fresh, wholesome foods rather than packaged convenience foods."  I love the corn chowder!

I have some for you! When I had my second I became a HUGE fan of the crock pot! What a wonderful way to know that dinner is going to be ready each night!

This one is one of my hubby's favorites that he frequently requests. I am not a big cookbook person I just usually find my recipes online.

Lemon Garlic Chicken - 6 Servings

Ingridients:
1 teaspoon dried oregano (I usually use a little more depending on how much chicken I use)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
1/4 cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chopped Fresh parsley

Chop the onion and place in the bottom of the crock pot.

In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker on top of onion.

In the same skillet, mix the water (I use chicken broth in place of water and bouillon), lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.

Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time. (I cook mine on low for 6-7 hours).

I serve on rice with fresh green beans - yummy! It is kid approved in this home too by a 3 year old and 1-year old!

so that's 4 lbs of chicken, 1 tsp of salt, 1/2 tsp pepper, 4tbsps of butter mmmm, 1/2 cup of water,  Grin    i think there were some cut and paste issues.... Cheesy

mmmmm... that garlic lemon chicken *does* look good!!!   Roll Eyes  Can't wait to try this!  It looks like a good one for Sunday after church lunches - I'm always looking for those!  This one even sounds company worthy!

We tried the Garlic Lemon Chicken this week.  FABULOUS!!  I had to make a few changes to work with what I had.  We used a whole chicken (5lb.) and I used limes instead of lemons.  And I didn't brown the chicken first, since it was whole.  I removed the skin, rubbed on the oregano mix and put it right in the crock.  The whole family loved it!!  I will definately be making this more often!  Thanks for sharing!!   Grin

Not Your Mother's Slow Cooker Cookbook did turn out to be a great resource. I ended up buying it after getting it from the library.

I had to laugh--I finally tried making oatmeal overnight in the crockpot. Now I wonder how I ever lived without making it regularly. It is a perfect breakfast.

Just wondering how you make your oatmeal taste good.  I've tried a few times (not in the crockpot yet) and have added everything from honey, stevia, cinnamon, vanilla extract, and even mashed bananas and it still doesn't come out tasty  Tongue.  My kids don't like it and I can tolerate it just a little.  I would love ideas from you or anyone else reading this.  Thanks!

I don't add anything until we are about to eat. I only add water and oatmeal to cook and then add maple syrup or a little vanilla or whatever and milk or cream right in their bowl.

Maybe you would like it more in the crockpot. It is really creamy.

I checked out Not Your Mother's Slow Cooker Cookbook, too, and boy was it great!  I tried the granola, but it didn't quite work out right.  I think I did too much in my size pot.  When I get the $$ I hope to buy that book!  thx for the recommendation!

Someone mentioned Leane Ely's Menu Mailer, but I wanted to mention her cookbook Saving Dinner.  It is loaded with crockpot recipes, and there are no processed convenience foods to be found.  The cookbook is a spin-off of her Menu Mailer except it is a year's worth of recipes in one book, including a weekly shopping list.  I have not used the cookbook that way, I just pick and choose what I want to cook.  But there are a TON of really good crockpot recipes, especially in the summer section because she wants to keep you from heating up the kitchen by turning on the oven.

I need a recipe ASAP!  I am looking for a fabulous tasting baked beans in the crock pot recipe.  We are down to the nitty gritty in our cupboards, but I have a lot of navy beans.  I used the other half to make the Nourishing Traditions recipe that turned out BLECH Tongue 
I want it to be really saucy(is that a word?) like Busch's Baked Beans.  But all the crock baked beans I have tried have been dry and yucky.  Any recipes?

This recipe doesn't specifically call for navy beans but I tend to use whatever I have that is similar in all my recipes.  I hate planning meals ahead and tend to fly by the seat of my pants  Shocked but my husband never complains and says I need to start a restaurant so other people can experience my creations  Grin.  I told him a restaurant would be impossible for someone that never plans ahead. 

So here is my SIL baked bean recipe and you can decide if you would like to substitute navy beans or not.  You can also add 1/2 lb ground meat (deer or beef) to this for a main course.

1/2 lb bacon, cooked and crumbled (I rarely buy bacon and sometimes go without it)
1/2 medium onion, sauteed
1 can pork & beans, drained
1 can baby butter beans, drained
1 can red beans (or kidney), drained
1/3 cup brown sugar
1/3 cup white sugar (or use 1/4 cup honey to replace brown and white sugars)
1/4 cup ketchup
1/4 cup barbecue sauce
1 Tbl mustard
1/2 tsp chili powder
Bake at 350 for 45 to 50 minutes or simmer in crockpot on high for 3 to 4 hours.

Thank you!  I will try substituting the dry navy beans.  Have to do a little guessing, but sometimes I have made mistakes taste better than recipes.

Mama Sita, THIS is a WONDERFUL recipe. I doubled the beans and soaked them overnight in filtered water with whey. I drained the water and pre-cooked them in more filtered water for about an hour. Then, I drained them again and cooked an additional hour, skimming off the foam. I increased the volume of seasonings to make up for the larger batch and used a chuck roast. The other change was that I used fresh peppers.

I don't have a large enough crock pot, so I just used a stainless steel sauce pot & lid in my oven. I served it on sprouted tortillas with cheese and sour cream. WOW, are my guys in heaven! I plan to try this with chicken next. This has been a budget stretcher for us as we have had to replace a hot water heater Cry. Your recipe has saved the budget and made me quite popular. Thanks! BAKED BEANS
I got this recipe from the cookbook, “Cooking from Quilt Country” by Marcia Adams.  This cookbook is a collection of Amish recipes and it is one of my favorite cookbooks!  This recipe serves 8, but I usually double it.  The leftovers freeze very well, so consider making extra for later!
- 1 lb. Navy beans
- pinch baking soda
- ¼ lb. Salt pork, cut in half
- 1 onion
- 2 tbs. Brown sugar
- ½ tsp. Powdered mustard
- ½ tsp. Salt
- ¼ tsp. Black pepper
- ½ c. molasses (dark or light according to your taste)
Soak the beans for about 8 hours with enough water to cover them.  Do not drain.  After soaking, dump them in a stockpot, bring them to a boil and add the baking soda.  Lower the heat, skim off the foam, and simmer, partially covered for about 20 minutes, or until the skins peel back when blown upon.  Add the onion, brown sugar, mustard, salt, pepper and molasses and mix well.  Place a piece of salt pork in the bottom of your crockpot and dump the beans on top.  Place the remaining piece of salt pork on top.  Cook on low in the crockpot for at least 10 hours.  Do not stir the beans until just before serving.

Here is my favorite Chili in the Crock Pot recipe.
Dry pinto beans soacked over night in water. ( however many will feed your family, I use about 2 cups)
Next day rinse and drain and recover with water in crock and turn them on HIGH at noon.  Maybe a little earlier if you are cooking more beans than that. 
By 4:00 p.m. beans are about done.  Add 1lb of browned ground beef, 1pkg of your favorite chili seasoning and 1 small can of tomato sauce(8 oz). Add more tomato if you like the chunky tomato thing. Let simmer until supper time and serve with corn bread or crackers.  We like to add chedder  cheese and sour cream individually.
Leftover chile makes good filling for tostada's, taco's, buritto's , etc.

Another recipe that I used for Sundaynight after church was crock pot taco's.
Sunday afternoon I simply layered a tortilla, taco meat (leftover chili) and cheese in  crock. Keep layering till it is enough to feed your family.  Turn crock on low before you leave for church.  when you get home add some salsa, sour cream, chopped lettuce, etc.and serve.

You're definitely right when you say how good this smells while cooking!  It is amazing!  We were planning on having a big crew from church come over today for lunch, so I made a double batch of the Chalupa.  Only about half the people actually came, so now we have TONS of Chalupa for just my husband & I to eat!  I think I'm gonna have to freeze some!  It was absolutely delicious though!  Soooooo tasty!  I got lots of compliments and it is definitely an easy and economical way to feed a crowd!
