Good Morning Whiterock!!  Any chance I could get that Oatmeal Cake recipe?  I made a big batch (too big for my crew) and have lots of leftovers!!  I'd hate to waste it all, but I don't know what else to do with it!

Good and Gooey Crockpot Oatmeal

2 cups regular, rolled oats (the old fashioned kind, NOT instant or quick-cooking)
1 can apple pie filling (or substitute peeled sliced apples)
1 cup raisins
4 cup milk
1 tsp. cinnamon
1/2 tsp. sea salt
2 Tbsp butter 

Put all ingredients into crock-pot and stir. Cover and cook on low over night or about 6 hours. It comes out thick but we like thick oatmeal so we can pour a little bit of raw milk over it in the bowl. We also add a pat of cultured butter and sweeten with maple syrup in the bowl (the original recipe is cooked with 1/2 cup of brown sugar). The leftovers make wonderful Oatmeal Cake.

Mushroom Beef

4 tablespoons butter
4 ounces mushrooms, sliced
3 tablespoons flour (sprouted or WW or unbleached)
1/2 tsp salt
dash pepper
1 cup milk or cream
1 cup beef stock
1 lb of stew meat

Melt butter in a saucepan. Add mushrooms and saute until limp. Whisk in flour, salt and pepper and cook over low to medium heat until the flour begins to brown slightly. Pour the milk and stock into the mixture in a slow stream, whisking the whole time to avoid lumps. Bring to a boil, reduce heat and simmer 5 minutes.

Place stew meat in crock pot and pour sauce over top. Cook until meat is tender. Serve over rice, egg noodles, or potatoes.




We had this over rice on Sunday.  YUM!!  Tonight I warmed the leftovers, added a little more broth, thickened a little with arrowroot then added dumplings.  Turned out great!

I want to make the famous Chalupa.... but I have a boneless boston butt that's 4.85lbs and my pinto beans have not been soaked - so is it possible?

Also, are the chilies supposed to be hot? I have a can of mild, chopped, green chilies but I also have some home-canned jalapeno or some peperoncini that I can add if heat is needed.

Help please!

I think that your roast would work fine.  And I've made chalupas without soaking beans first and it came out great. 
Chilies can be mild ones and if you want more spice add the jalapenoes.
Heat is not needed and just if you want it.

YIKES!!  I'm glad you posted this... I'm supposed to take some to a family  thing Friday night and I need to get started sprouting my beans....
I actually sprouted them the last time I did chalupas and they were some of the best I have ever made!

We had leftover chalupas for lunch today. The kids and I really like them, dh said they were ok, but he had Mexican food for lunch yesterday (I didn't know) and wanted something different for dinner. I think the recipe is a keeper. I know we will at least try it one more time when dh is in the mood for Mexican food and see how that turns out.

Here is one of our favorite crock pot recipes (just made it this weekend):
CHALUPA!!

In heavy kettle or crock pot mix:
1 lb. dry pinto beans, soaked overnight and drained
3 lb. lean pork roast
1/2 cup chopped onion
2 minced garlic cloves
1 TBS. salt
2 TBS. chili powder
1 TBS cumin
1 teaspoon oregano
1-4 oz. can green chillies, chopped
7 cups water

Cover and simmer for 5 hours, or 10 hours on low in the crock pot, or until meat falls apart and beans are done.
Remove bone (if you have one) from the meat and mash beans. (I don't always do this--we like them more on the 'whole' side)
Uncover and cook about 1/2 hr or until desired thickness.
Serve over a plate of corn chips or Tostitos, or in warm flour tortillas and pass the toppings!!

Toppings:
chopped tomatoes, chopped avocado, chopped fresh onions, shredded cheese, lettuce, olives, taco sauce, sour cream, you get the idea...

(Note: I like to use a boneless roast--I look for them on sale! This recipes makes a LOT! This recipe easily serves 12 people, or we can have leftovers and DH likes to take this in his lunch Smiley)

This smells soooo good when it's cooking!! Be ready for a hungry crew  Wink

NEW ENGLAND BAKED BEANS MADE IN A CROCK POT


1 lb. dry navy beans

Wash and pick over beans, removing any stones, broken beans, etc.
In a saucepan, cover beans with water (about 1 inch above top of beans). Simmer beans for 10 minutes. Let cool 5 minutes.

Transfer to CrockPot, along with water they were cooked in. Cover and leave to soak overnight.

The next day add:


1 cup brown sugar, packed
1 additional cup water (if beans are dry)
4 tsp. dry mustard
4 tbsp. molasses
2 tablespoons ketchup (optional)
1 tsp. salt (or to taste)
1 large onion, sliced
onion powder, to taste (optional)
1/4-1/2 lb. salt pork

Mix ingredients (except for salt pork) and stir into beans. Slash salt pork in 1/2 inch slices nearly up to the rind, but not all the way through. Cut across the previous slices until the salt pork is deeply scored. Submerge salt pork in beans. A slice of hickory smoked bacon can be placed over the top of the beans.
Turn CrockPot on low setting. Cover and cook for 6 hours, or until beans are tender. If beans start to become dry during cooking, add a small amount of hot water.

When beans are tender, taste and adjust seasonings before serving. Slice up bits of the pork to add to each serving.

Traditionally, the cooking is begun on a Saturday night. Baked beans make for a leisurely Sunday lunch and can be served with good quality natural casing frankfurts or kielbasa.

I wanted to bump this thread up. I love crockpot cooking in the summer for keeping the house cool. I'll even put it outside on the picnic table on the really hot days. I found this recipe on the flylady site. It's my husbands new favorite meal.



Santa Fe Chicken

Combine the following in your crockpot:
1 can black beans, drained
2 cups frozen corn
1/2 cup salsa
After stirring, add:
4 boneless, skinless chicken breasts
1/2 cup more salsa

Cook on low for 3 hours. Then add,
1 block of cream cheese
Cook one more hour. Serve over rice.
 
I just throw everything in the crock pot in the morning and add the cream cheese late afternoon. I chunk up the chicken when I add the cream cheese.

I didn't get anything out of the freezer last night (shame, shame!) and now it's NOON!  Is it too late for a crock pot meal? 
I've got all kinds of stuff in the freezer from our buffalo and pig....pork steaks, roasts, different steak cuts, ribs, country ribs, ground meat.
Does anyone have suggestions?  I'd also like to do some sort of potato.  Can I thaw a meat for a few hours and still have it cooked via crock pot by around 6?  Can I throw potatoes in, too?

If you have some ground meat you could cook before you put it in, that would work.  Crock pot can still work, if you do it right now, and put it on high.  The high setting is the same as double the low setting, so 5 hours on high is like 10 hours on low.  I make my calico beans around now a lot, and it's fine.
