Here is one i just made for Fabulous Fahitas from Taste of Home many years ago!

Brown in oil 1 1/2 lbs. sirloin or round steak cut into strips (tenderized round is good)
Add:  2 T.  lemon juice
1 clove garlic
1 1/2 t. ground cumin
1 t. seasoned salt
1/2 t. chili powder
1/4 to 1/2 crushed red pepper flakes

Cook on Low for 2 1/2 to 3 hours (7 was much better!)

Then add:  1 large green pepper sliced
& 1 large onion sliced

Cook for 1 hour longer.  Serve in flour tortillas with sour cream, cheese, salsa, lettuce and tomatoes.  yummy!   Grin 

UPDATE:  i remember this being good a long time ago, but tonight when we had it, it was chewy.  i would recommend pounding the meat to tenderize, or using more liquid, or a different kind of meat, or possibly cooking longer.  otherwise the flavor is great.  i would be interested in anyone's ideas or suggestions.  i was trying to impress my protein dieter and it was frustrating for it not to turn out. Tongue Undecided 

after tenderizing the meat and cooking it 3 to 4 hours extra it was excellent!

What is Salt Pork?  Is it something you add just for flavoring or do you eat it?  I've always wondered that and now I've seen it in these bean recipes.  I'm not crazy about pork, is there anything that could replace it?

Last night I mix up my recipe for Taco soup and put it in the crock pot, because we were going to be gone for a few hrs. Came home and had the soup. I'd never used the crock pot to just cook something for 2 hrs. and to have it warm when I got back. Thought I'd give that quick tip.

Salt pork is basically uncured bacon.  I was introduced to it by my MIL who cooks it up with potato dumplings and gravy.  A very norwegien meal out here in the midwest.  It doesn't have a lot of flavor.  I think you could find it in the meat section of your grocery store, but I have never bought it.  I get it from my inlaws when they slaughter a pig every fall. You might be able to substitute bacon in some recipes, you'd have to experiment a little.  Smiley

Have you ever soaked the meat in/cooked it with some vinegar?  This works in some marinades I've used.  I think I used 2-3 Tb with soy sauce, ginger, garlic & oil in a marinade for pork chops.  I've also used vinegar with venison with good results.

You're definitely right when you say how good this smells while cooking!  It is amazing!  We were planning on having a big crew from church come over today for lunch, so I made a double batch of the Chalupa.  Only about half the people actually came, so now we have TONS of Chalupa for just my husband & I to eat!  I think I'm gonna have to freeze some!  It was absolutely delicious though!  Soooooo tasty!  I got lots of compliments and it is definitely an easy and economical way to feed a crowd!

hey Sarah!  thanks, i was just thinking about this today as i was cleaning out my freezer, i was going to put the steak and vinegar together to thaw it, and hoped it would make it better!  i'll let you know when i do it.

Good and Gooey Crockpot Oatmeal

2 cups regular, rolled oats (the old fashioned kind, NOT instant or quick-cooking)
1 can apple pie filling (or substitute peeled sliced apples)
1 cup raisins
4 cup milk
1 tsp. cinnamon
1/2 tsp. sea salt
2 Tbsp butter 

Put all ingredients into crock-pot and stir. Cover and cook on low over night or about 6 hours. It comes out thick but we like thick oatmeal so we can pour a little bit of raw milk over it in the bowl. We also add a pat of cultured butter and sweeten with maple syrup in the bowl (the original recipe is cooked with 1/2 cup of brown sugar). The leftovers make wonderful Oatmeal Cake.

I like to make chicken noodle soup on cold days in my crockpot. It warms you up inside and tastes delicious!

Chicken Noodle Soup

Put 2-3 cans of chicken broth in crockpot.  Add carrots, onions, celery, and garlic.  Let cook on low for 4-6 hours.  Add cooked chicken (use leftovers - I use canned chicken).  Add noodles.  Cook for approximately one hour until noodles are cooked, but not overcooked.  Season with other seasoning, if desired.


The first time I made this, I put everything in at once and the noodles turned to absolute mush!  The times for cooking are approximate - just cook veggies and noodles how you like them.

I cooked this last night and it was great and easy.

Too Easy Beef Stroganoff

1 sm. beef roast
2 cans of family-sized cream of mushroom soup **
half can of water
salt and pepper to taste
12oz to 1# of extra wide egg noodles
1 c. sour cream

Put a sm. beef roast into a Crock Pot (even very cheap cut of beef works well) with 2 cans of soup and water. Cook on low all day.

Take meat out of broth and pour broth into a large pot on the stove. Add enough water to make it stir easily. Bring to a boil on the stovetop. You might want to add salt and pepper to taste. When at a rolling boil, add noodles and cook to tender.

Add shredded meat and sour cream to noodles. Stir and serve.

I make homemade Cream of Mushroom soup. I make a large quantity and freeze it in pint jars for future use. I don't have time to fix the soup every time, so I cook the large quantities. Let me know if anyone wants the recipe.

You can cook this with all healthy ingredients such as organic meat, sour cream, noodles, etc. or everything from the grocery store.

This made a large quanity. Next time I plan on only using half of the roast and 1/2 of the noodles. I will still cook the entire roast. I will just have one meal of roast and the other half of the roast in the stroganoff. We have a family of 4, but a family 8 it would be perfect and easy!

Homemade Cream of Mushroom Soup

4 TB butter
16 oz mushrooms chopped
1/2 c. onions chopped
1/4 c. celery chopped
2 cloves garlic chopped
2 TB parsley
2 pinches of nutmeg
pinch of cayenne pepper
2 TB WW flour or arrowroot or corn starch
1/2 tsp. salt
1/8 tsp. pepper
4 c. chicken broth
2 c. milk or light cream

Heat butter. Add mushrooms, onion, celery, garlic, parsley, nutmeg, pepper, salt. Saute until mushroom softens and loose their liquid. Sprinkle flour over mixture and continue cooking for several mins. Add chicken stock gradually stirring constantly. Boil. Reduce heat, cover and simmer 15 mins. Puree mix in blender and return to pan. Stir in milk and heat throughly. Add more salt if needed

This is runnier (is that a word? of well) than can soup but it taste great. We always eat a bowl for lunch. I double and sometimes triple the recipe. This single recipe makes apx. 5 pts. or cans.

Cream of Chicken Soup

4 TB butter
1/4 c. celery chopped
1/4 c. onion chopped
2 cloves garlic (1 tsp)
1/3 c ww. flour or arrowroot
1 c. half and half, cream or milk
3 c. chicken broth
1 c. cooked chicken, chopped
1/4 tsp. white pepper
pinch of nutmeg
1/2 tsp. salt 1/8 tsp. cayenne pepper
1 TB parsley

Heat butter. Add celery, onions, garlic, and saute. Add flour mixture over veggies and mix well. Cook several more mins. Add broth, chicken and seasonings. Bring to a boil. Reduce heat, cover and simmer for 15 mins. Puree in blender and then return to pan. Stir in milk and heat throughly. Freeze or use.

Makes about 4 pts. and once again I double it. I don't use Cream of Chicken as often as cream of mushroom.

I'm a total canning dummy!  Do you freeze this in jars like people use for canning - the ones with the lids and rings?  Or is there another kind used for the freezer?

I just use my canning jars. Don't put the soup to close to the top. I leave about 2 " from the top (like the part that will overflow) . I happen to have lots of jars. I get mine at garage sales. I wish I could share mine. I met a lady a yr. ago that said she had some 1/2 gal jars and she would call me to buy them. I like the 1/2 gal size for my goat milk. Anyway, she called today to come take ALL her jars for free. I went over and she filled my car. I have so many jars. I'll have to give some to my friends. God will use it to bless many!

You can freeze the soup in other things too. I try to stay away from plastic, so the jars work for me. I am thinking of trying to get a recipe that I can actually can. I think I will have to add the mlik after I open the jar. That is another adventure. For now, the freezing method works. Good luck, thanks for being brave enough to ask!

Wide mouth are the best. Just don't overfill. Give 2" headspace. They work great to freeze any liquids such as leftover soup, tomato sauce, etc.

Thanks!!  I'm looking forward to trying the cream of mushroom and cream of chicken soup recipes.  I've just not been making anything that calls for those because I stopped buying the canned stuff because of the msg in it.

Here's another recipe for the condensed soup. I got it from KerryAnn, owner if the TF-recipes Yahoo group (TF=Traditional Foods).

16-ounce can sliced mushrooms
1 tbsp olive oil

1 bay leaf

Drain the liquid from the mushrooms into a measuring cup and add water, if needed, to bring the total liquid to 1/2 cup. Set aside.

In a small saucepan, heat oil over medium heat. Add flour and bay leaf, stirring constntly for 1 minute. Gradually add mushroom liquid , milk, butter and pepper, stirring constantly until mixture thickens, about 2 to 3 minutes. Remove pan from heat. Remove and discard bay leaf.

Pour into a blender or the work bowl of a food processor fitted with a metal blade and blend until smooth. Add mushrooms and garlic powder. Blend until pureed.

Use this when a recipe calls for condensed cream of mushroom soup

One note: I don't puree this soup. I like the mushrooms to be kind of chunky so I just chop them up a little, but the original recipe said to puree it. It's up to your taste.

I make a pretty big batch of this and refrigerate or freeze it. You can spice it up if you want, but I find it is better to prepare it as is and then modify it to suit whatever you are cooking. Hope someone can use it!

Yes the WIDE mouth pints are can & freeze jars. If you look you will see that the sides are straight & there isn't any nipping in at the neck like it does on the reg mouth jars. Some 1 cup jars whether reg mouth or wide mouth are straight sided also. So are some jelly jars but not all of them. I don't leave a 2" head space though-more like an inch in the pints & 1/2 inch in the reg mouth cup size jars & a little less in the wide mouth cup size jars. It depends what you are freezing, some things expand more that others. I don't remember what expands more- I know that doesn't help much but for this I kinda wing it. I freeze with the lid loose or with plastic on the top so the air has somewhere to go as the food expands & my jar won't break if I over filled it then I put the lid on tight once it's frozen.

BTW- in case you don't know there are now 4oz canning jars. They are straight sided so you can freeze in them & are convenient for a lot of things.

I have some for you! When I had my second I became a HUGE fan of the crock pot! What a wonderful way to know that dinner is going to be ready each night!

This one is one of my hubby's favorites that he frequently requests. I am not a big cookbook person I just usually find my recipes online.

Lemon Garlic Chicken - 6 Servings

Ingridients:
1 teaspoon dried oregano (I usually use a little more depending on how much chicken I use)
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
1/4 cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 pounds skinless, boneless chicken breast halves
2 tablespoons butter
1/4 cup water
3 tablespoons fresh lemon juice
2 cloves garlic, minced
1 teaspoon chicken bouillon granules  (I use chicken broth instead to cover the chicken once I put it in the crock pot!)1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh parsley
1 medium onion chopped

Chop the onion and place in the bottom of the crock pot.

In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker on top of onion.

In the same skillet, mix the water (I use chicken broth in place of water and bouillon), lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.

Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time. (I cook mine on low for 6-7 hours).

I serve on rice with fresh green beans - yummy! It is kid approved in this home too by a 3 year old and 1-year old!




In case any of you haven't tried this chicken recipe...you SHOULD!!  DH and I put it in the crock pot this a.m., and tried it earlier and it's delicious!  And, are you ready for the BEST PART...it is sooooo EASY!  WOO HOO!!  (Just pay attention, because some of the ingredients ended up being duplicated!)

Here's another very quick and easy one with good taste.

KONA CHICKEN
2 (2 pound) broiler chickens, quartered
1/2 cup chopped green onion
1/2 cup soy sauce
1/4 cup dry white wine
1/2 cup water
1/2 cup honey
ground black pepper to taste

DIRECTIONS
Place chicken quarters into a slow cooker. Stir together the green onion, soy sauce, white wine, water, honey and pepper in a cup or small bowl. *I usually put in the green onion just prior to the end of cooking so that it is a little crunchier and overcooked. * Pour over the chicken. Cover, and cook on high for 4 hours.

OK - here are my changes. I use chicken broth instead of wine. I add in two chopped or pressed cloves of garlic. I also usually use boneless skinless chicken breasts since I buy those in bulk and freeze them. I usually cube the chicken and serve over rice.

I love this one like the lemon garlic chicken that I posted because I usually have all of these ingredients on hand at home so it is great for those days where I have not thought about dinner!

Usually you want to put herbs in at the very end of cooking, stir through and then serve. Some herbs hold up well in the cooking process like rosemary. Also you can put some herbs in at the beginning and some at the end to get the cooked and fresh herb flavor. I am assuming you are talking about fresh herbs and not dried. If dried I would say just put them in whenever.
