Okay gals.. I need more recipes!!  I would really like to see some more beef ones!  I use my crock pot all the time!! 
Here's my favorite one..

Slow cooker Spaghetti Sauce

4 14 oz Cans diced tomatoes (or 2 24 oz)
6 6 oz cans tomato paste (or 3 12 oz)
1 lb Ground beef
1 cup beef broth or red wine
2-5 cloves garlic (however much you want)
1 Tbl. spoon Dried Basil
1 Tbl. spoon Dried Oregano
1 Tbl. spoon Dried Majoram
1 Tbl. Spoon Dried Parsley
Chopped Cremini Mushrooms (optional)

Brown Ground beef. Put all in slow cooker on Low for 5-6 hours. Until bubbly.   This makes 4 quarts.  But freezes Great.  I make one pot we eat it that night and I usually have enough to freeze for 2-3 more meals.
Also great for pizza sauce.

Update: I made this tonight and had no mushrooms but have zucchini coming out my ears.  Wink So I cut some up and put it in and it was Great. Just another way to vary it.  Smiley

Garlic Beef (or venison)
Take a large roast cut of beef or venison.  Cut several slits in the meat and stuff with slices of fresh garlic.  Season with salt and pepper.  Cook on low for 7-8 hours.  Don't add any liquid!  You can cover it with sliced onions, if you like.
We eat this one night sliced up like pot roast, then I will shred leftovers and use for nachos, tacos, or sandwiches.  BBQ sauce is great on the shredded meat.
Couldn't be simplier, but it tastes really great.

Another favorite:

Apricot Chicken
Put two cups rice in bottom of crock.  Lay chicken breasts or thighs (4-6 breasts, 8-10 thighs, boneless skinless) on top.  Add chopped red and green bell peppers, yellow onions, chopped dried apricots.  Pour 3 cups chicken broth over this.  Then mix 1 10 oz jar apricot jelly, 3 Tablespoons apple cider vinegar, 1 teaspoon salt, 1/2 teaspoon black pepper.  Pour over all.  Cook low 6-7 hours, high 3-4 hours.  Sometimes I check and see if it needs more broth for the rice, but usually it's juicy enough.
If you like crunch, add some slivered almonds or water chestnuts.

Those are two of our current favorites.  You can adapt and make healthy MOST crockpot recipes, and there are TONS on line, just by googling "crock pot recipes."  During the school year, if I have my dinner in the crock pot by 10 in the morning, I feel like the world's best mother and wife  Grin

Mushroom Beef

4 tablespoons butter
4 ounces mushrooms, sliced
3 tablespoons flour (sprouted or WW or unbleached)
1/2 tsp salt
dash pepper
1 cup milk or cream
1 cup beef stock
1 lb of stew meat

Melt butter in a saucepan. Add mushrooms and saute until limp. Whisk in flour, salt and pepper and cook over low to medium heat until the flour begins to brown slightly. Pour the milk and stock into the mixture in a slow stream, whisking the whole time to avoid lumps. Bring to a boil, reduce heat and simmer 5 minutes.

Place stew meat in crock pot and pour sauce over top. Cook until meat is tender. Serve over rice, egg noodles, or potatoes.

Shredded Beef on a Bun
Serves:6-8

3 lb. roast (chuck roast)
1/2 stalk celery, chopped fine
1 1/2 onion, chopped fine
1 bell pepper, chopped fine
8 oz. ketchup (1 cup)
3/4 cup water
1 1/2 Tablespoon apple cider vinegar
1 1/2 teaspoon chili powder
1 1/2 teaspoon pepper
 
Place all ingredients in crockpot. Cook on low for 8-10 hours. Shred beef. Return to crockpot. Cook on low for 1 hour. Serve on hamburger buns or bread.

I haven't made this but I got it from a friend who makes it for gatherings at her house and it tastes wonderful. I'm sure it would be just as good with healthy substitutions -- like honey (or whatever) for the sugar.

Beefy Beans

1 lb. ground beef
1 onion, chopped
1/2 lb. bacon, cut up
1 cup brown sugar
1 cup ketchup
1 or 2 cans each kidney beans, butter beans, navy beans, or whatever beans you like or have on hand, drained
1/3 cup vinegar
2 teaspoons dry mustard
1 teaspoon garlic powder
2 teaspoons salt

Brown bacon, drain fat. Saute onions in bacon grease til soft. Drain and set aside. Brown ground beef, drain. Add seasonings. Simmer 30 minutes. Mix in beans, bacon and onions.  Place in large baking dish and bake at 325 degrees for 45 minutes or in crockpot on low for 2 hours.

Wow WR! That's a lot of beef!  Shocked Hee hee. That beefy beans sounds like it would be great with sauerkraut as a side (and homemade bread and butter, of course). I am making up my menu tonight and have lots of new and delicious sounding ideas, thanks to you all!

Here's one of our favorites. Always a hit with company:

Chicken enchilada soup Serves 6-8

*   1 1/2 lbs skinless, boneless chicken breast, cut into peices
* 1 tablespoon vegetable oil
* 1/2 cup diced onion
* 3+ clove garlic, minced
* 5 cups chicken broth (add more if you like your soup thinner)
* 1 1/2 cups corn
* 1 cup diced green pepper
* 1 cup enchilada sauce
* 1 teaspoon salt
* 1 teaspoon chili powder
* 1/2 teaspoon ground cumin
* 2 cups shredded Cheddar cheese (some recipes add it directly to the soup, we prefer to serve it on top as a garnish)

DIRECTIONS

1. Cook chicken breasts in oil until well browned on all sides.
2. Cook onion and garlic in remaining oil until onions are translucent. Add to crock pot.
3. Mix together broth, enchilada sauce, salt, chili powder and cumin. and add to pot.
4. Shred cooked chicken and add it to the pot. Cook on low for 5-7 hours
5. Serve with corn biscuits or corn chips, sour cream, cheddar cheese, greens onions, and guacamole!

I have a question about how any cans of beans, total...is it 1-2 cans each of 3 varieties, totalling 3-6 cans?

It's not certified organinc or, of course, it would cost more. And one more reason it's so cheap is because the folks who raise the cattle are partners with the family who processes them so they don't have to pay for processing. I found them through my local chapter of the Weston A. Price Foundation.

Mama Sita, this recipe is wonderful!!  My family loved it!!! Thank you!

Here is one of our favorite crock pot recipes (just made it this weekend):
CHALUPA!!

In heavy kettle or crock pot mix:
1 lb. dry pinto beans, soaked overnight and drained
3 lb. lean pork roast
1/2 cup chopped onion
2 minced garlic cloves
1 TBS. salt
2 TBS. chili powder
1 TBS cumin
1 teaspoon oregano
1-4 oz. can green chillies, chopped
7 cups water

Cover and simmer for 5 hours, or 10 hours on low in the crock pot, or until meat falls apart and beans are done.
Remove bone (if you have one) from the meat and mash beans. (I don't always do this--we like them more on the 'whole' side)
Uncover and cook about 1/2 hr or until desired thickness.
Serve over a plate of corn chips or Tostitos, or in warm flour tortillas and pass the toppings!!

Toppings:
chopped tomatoes, chopped avocado, chopped fresh onions, shredded cheese, lettuce, olives, taco sauce, sour cream, you get the idea...

(Note: I like to use a boneless roast--I look for them on sale! This recipes makes a LOT! This recipe easily serves 12 people, or we can have leftovers and DH likes to take this in his lunch Smiley)

This smells soooo good when it's cooking!! Be ready for a hungry crew  Wink

I made the Chalupa's last week and we all loved them.  I was making my list on friday before I fell and wanted to make them again this week - it easily makes enough food for 3 meals.  on my way to the car to go shopping i tripped and hurt my hand bad so i am very thankful that God had put this easy, huge recipe on my menu this week.  All  i'll have to do is reheat!  Thanks for the great recipe!

I made this today and it was really yummy.

6 frozen chicken breasts
1/2 cup taco seasoning(I buy in bulk)
1 can of tomato sauce
couple extra shakes of garlic powder and cumin


I just cooked this on low all day and chopped the chicken up with kitchen sheers. It made a tasty burrito filling with leftover pinto beans and cheese and I have enough left over to make enchiladas. I think I'll double it next time and freeze most of it.

mama sita- We loved this recipee too!!  Nothing like coming home in the evening to that smell!!  I haven't tried it with chicken, maybe I will next, the pork is just so yummy.

Another good pork recipee is Kalua pig:
5lb pork- shoulder or "carnita" cut
1 1/2-2 Tbs liquid smoke
Hawaiian sea salt (or other salt)...  Just cover the roast/ meat in it, add more if not salty enough later.
1/2 a head of cabbage, shredded (optional) 
Just through everything but cabbage in crockpot and cook on low for 16 hours (put it in night before, ready for dinner next day).  Add cabbage last 4 hours of cooking.  Also turn roast halfway through cooking.
Serve with rice.

Mama Sita!  Great recipe. It was a huge hit here. We don't eat pork so I used a Chuck roast and it was GREAT  Grin  My whole family liked it!! I will defiantly be keeping that one.

I've noticed in the last few years that crockpots are hotter than they used to be. Now they will boil things on "Low". I have more than one crockpot (gifts and hand-me-downs) and so I use the old one when I need a lower temp, but if your newer crockpot has a Warm setting it will sometimes work well for a "Low". So I would try cooking it on Warm all night.

I made something in the crock pot the other night that I wanted to share.  I thought it turned out really good (if I do say so myself).  I bought a lamb roast.  We love lamb, but I don't buy it often because I can't find anywhere to purchase organic or "natural."  They tell me at the grocery store that lambs are not given anti-biotics/hormones, but I would rather hear that from someone besides the person at the meat counter trying to sell it to me!  Roll Eyes  Anyway, I put it in the crock pot with a little vegetable broth to start it out moist.  I put in a few pink lady apples cut in large chunks, a few large chunks of sweet potatos (skins and all), and some fresh rosemary.  I put salt and pepper over it all and I squeezed a couple of tablespoons of agave nector over the whole thing.  I cooked it on low for about 5 or 6 hours.  It was kind of sweet, but with a good rosemary flavor.  It was really good.

Lazy Lasagna

1 # beef
1 small onion
2 jars spaghetti sauce
shredded cheese(mozzarella, provolone, or both)
whole wheat lasagna noodles

Brown beef with onion and add sauce. 
Layer in a crockpot:  1 1/2 cup sauce, noodles, sauce, cheese, etc. until used up.  Make sure your last layer is cheese and sprinkle with dried basil or parsley.

HIGH 3-4 hours           LOW 5-6 hours.

I've just GOT to try that lasagna.  That's a dish that we all love, but I don't like to heat up the kitchen and clean up the mess.  Crock pot style would sure be easier.

Here's a recipe that my d-i-l just sent me.  Her dh (our son!) says that this is their new favorite company meal.  He'll invite people just to get this on the table.   Wink

Turkey Breast with Herb Sauce

(5 to 6 lb.) turkey breast, fresh or thawed
2 Tbsp. butter
1 green onion, chopped fine
1 clove garlic, chopped fine
2 oz. cream cheese, softened
1 Tbsp. soy sauce
1 Tbsp. minced, fresh parsley
1/2 tsp. dried basil leaves
1/2 tsp dried thyme leaves
1/2 tsp. poultry seasoning
1/4 tsp. pepper


WHOOPS!!  I forgot to ask her how long to cook in the crockpot!  Will be back soon!

Okay, she emailed me that it cooks for 4 - 6 hours on high or 8 - 10 hours on high.  YUMMY!   Grin

These last two dishes look delicious! I'll have to give them a shot this week. My range was fried in the t-storms we had the other day..so that set in motion a remodeling of our kitchen LOL! Nothing like a little lightning under our feet (literally!) to get us going on it. It's completely gutted now...so we're eating out of the crock pot this week. (I did use the microwave to boil noodles in though..they turned out ok!)  Wink
