HUMMMMMMMMMMM!! We love hummus here is the recipe i use to make ours.

1/4 cup Tahini paste
1 can chickpeas(or 1 cup fresh cooked and cooled chickpeas)
3 cloves garlic(we like a bit more)
3 tablespoons olive oil
1/4 teaspoon salt
1/4 cup fresh cilantro( i do not add this)
1/4 cup fresh parsely
small pinch of cayenne pepper
small pinch black pepper
1/4 cup lemon juice

Grind all this in the food processor until desired smoothness. You can dress this up anyway you want. we serve this with olive oil drizzled on top with fresh parsely and olives. YUMMY.

It totally warms my heart every time my kids ask for hummus on toast or crackers...they are so cosmopolitan Cool I just started making my own...still working to perfect it. A girl I know made parmesan spinach hummus once...OH MY! Twas fabulous.

Black Bean Hummus is also really tasty.

It's actually the same recipe that Jeri posted above, except use black beans instead of garbanzo beans. I also add extra cayenne pepper to make it hotter, like a bean dip... I guess it is a bean dip... Cheesy

I like to make the basic recipe (like Jerri's) (without cilantro  Grin), and add sundried tomatoes.  If I do that, I use the oil from the jar of dried tomatoes to give more tomato flavor.  We always have a big container of hummus in the fridge because it's so versatile:  a spread on a sandwich, a dip for chips or veggies, add some vinegar and you have a salad dressing (I don't do that a whole lot).  My husband loves the stuff -- in fact, he's the one that makes it most often!   Wink

Funny you should ask- I have this most simple and outstanding recipe I got from the Egyptian lady that was one of my Arabic Teachers at DLI:

3 cans garbanzo beans (regular soup can size)
3 cups tahini
3 lemons juiced
3 cloves of garlic

Put it all in a blender, and blend it.

Add cumin, salt and pepper to taste- blend it too.

You may need some water (maybe 1/2 cup) to thin it out, depending on how much juice is in the cans of beans.

My version of this is called Dragon Hummus, and it has onions ( about half an onion) and cayennes to taste (about 2 or 3)  Cool.  Those are optional though.

The tahini adds an incredible amount of highly absorbable calcium to this dish :-)

I have been able to find it at my local grocery in the health/whole foods section.   It is really yummy !  My daughter just returned from Turkey, and the hummus we have made, similar to the recipes above, she says are just as good as what she ate while there.  Enjoy.

I have a couple of gallons of sesame seeds.  Can I make my own?  Is there some other use for this besides Hummus?  MIL bought a 50 lb bag of sesame seeds while she was in Chicago (much cheaper this way) because we use them in all of her Korean recipes.  I already have to toast & pop them myself for these recipes, but it would be interesting to know if there were other uses for them.

I've made nut butter in a really good blender, but I've never got it as smooth as store-bought tahini. Tahini with lemon juice (blended) is also good drizzled on pita wraps, shwarma meat, as pita dip, etc... In Israel it is drizzled on falafel and shwarma meat sandwhiches.

3 cups tahini
3 lemons juiced
3 cloves of garlic

Put it all in a blender, and blend it.

Add cumin, salt and pepper to taste- blend it too.

You may need some water (maybe 1/2 cup) to thin it out, depending on how much juice is in the cans of beans.

My version of this is called Dragon Hummus, and it has onions ( about half an onion) and cayennes to taste (about 2 or 3)  Cool.  Those are optional though.

The tahini adds an incredible amount of highly absorbable calcium to this dish :-)

What kind of tahini do you use?  I have the Joyva brand, but it can easily be very dominating if I put much in when i make hummus.  Also, I made falafel last night (from a mix) and I have had it served before with tahini drizzled over, but the tahini I have is way too thick for pouring.  Any suggestions for a different brand?

I am Lebanese and grew up on hummus  Roll Eyes

I use whatever brand is at the produce market (usually it is in Arabic).

However, we use far less than the above mentioned recipe.  This is how we make hummus:

Blend:
1 can chickpeas w/liquid (I reserve one or two tablespoons and only use if needed to blend well)
1 or 2 cloves (small peices) of garlic, minced first
juice of one lemon
about 1/4 cup olive oil
2 T (or to taste) tahini sauce.

To make the tahini sauce, blend 1 T tahini with 1T water and 1T fresh lemon juice.

We adjust the taste by adding boatloads of the following - fresh garlic, lemon, olive oil (virgin) and/or red cayenne pepper to taste.

Our Israeli neighbors use Parsley in theirs, and it tastes wonderful Wink

The best hummus in the world can be purchased at Costco, by the way!  We always buy it there when we can.

Yeah I get my tahini at the asian market.. I use a lot less than the 1 recipe as well. I do add lots of whatever I want or have around the house. first I make my own garbanzo beans than put them in the food processor and add the tahini and garlic, salt and pepper, than maybe cumin, cilantro, salsa grn chilies (can or cooked), jalepeno whatver...last time i added spinach (uncooked, just fresh) and a red pepper again uncooked. YUMMY!! the food processor I bet would work great to make the tahini.

Well, tahini is ground sesame seeds - sort of like peanut butter - a paste.  To make tahini sauce, check the label.  Usually you mix equal parts of tahini paste with water - stir until it becomes white and smooth.  Then add FRESH lemon juice.  Canned just doesn't do it.

It is a condiment - so, it has a nutty, sesame taste.  If you use it with chickpeas (falafel or hummus) it makes a complete protein.

I made my own Tahini a while back and it was bitter.  Is it supposed to be this way?  My Hummus was NASTY, and I love the stuff.

It sounds like your sesame seeds were rancid. Always test seeds & nuts before using. Chew some & hold in the mouth & if it's bitter or burns, esp near the back of the mouth it's rancid. HTH Blessings ~herbalmom

Just tasted them and they are a little bitter but not REAL bitter.  Still think they are Rancid?
