My children have been craving one of their favorites, Tamale Pie.

I make polenta with toasted, stone ground corn meal cooked in water and cooled in a loaf pan. (also known as 'Mush')

POLENTA

2 cups corn meal
1 tsp. salt
Mix this into 2 cups cool water
Stir gradually into 4 cups boiling water. Cook and stir for about 5 minutes, cover and cook on low for about another 10 to 15 minutes, stirring from time to time. Pour into buttered pan and cool. (better the next day) Slice and serve - or fry

To make Tamale Pie, I brown the ground beef and season with onions, garlic, cumin, a little oregano, pepper, and salt. Then add a couple of cans of tomato sauce or stewed tomatoes, whatever you prefer. I like to add sliced black olives to this, too.

Lay slices of the polenta over the bottom of a buttered baking dish. Put the meat mixture on top of the polenta. Sprinkle a cup or two of grated cheese over the meat. Cover the whole dish with more sliced polenta and another layer of grated cheese. Bake at 350* until bubbly.

Funny, I have a boy who's been wanting me to make this too- the slice and fry version. We serve it with maple syrup.

OK, so this is two meals.
meal 1
ground beef enchiladas as main dish
fiesta cornbread as side (cornbread with diced tomatoes cummin, cilantro, & garlic)
mex-mix rice as side (rice, black beans, corn, salsa, seasonings as above)

Meal 2
in a casserole dish layer
leftover mex-mix rice
ground beef
sour cream
cheese
heat in oven til bubbly and cheese melted then remove and add shredded lettuce and salsa, serve with leftover cornbread.

this casserole freezes well for later. Wink
