Mild food ideas for invalid eating solid foods again
« on: August 13, 2008, 10:52:31 AM » by Blue Rose
I am taking care of an elderly invalid lady who is just starting to eat solid foods again. I have been crazy busy in my kitchen creating good things for her to eat, but I have run out of ideas and she is tired of what I have fixed and can only eat the same thing for so long before it looses it's appeal. I am looking for new, healthy ideas/recipes of things that I can fix for her. They need to be mild in flavor, not too greasy, and not too creamy. Things with meat do not appeal. Can you help me? I am fresh out of inspiration.

Anything with eggs.  Any mild fish.  Any skinless white meat chicken.  All soups shoudl be good, as long as they are broth based.  My grandma used to like milk toast!  Yuck.  Most breads and pastas are good, with light spreads or sauces.  Potatoes of all kinds, cooked soft and lightly seasoned.  Winter squashes.

Think of it like feeding a baby.  Make sure her fats are good like raw milk (if you can), butter, coconut oil and olive oil.  Nothing processed or refined or preservatives or nitrates or nitrites or MSG.

What DOES she like and what is she TIRED of?

Well, she is tired of potatoes. Potato soup, potatoes and peas, mashed potatoes with carrots and parsnips. And meat isn't good. She ends up gaging on it. She can do some oil like for getting onions going, but that is about it. And eggs she is jsut about done with too. Had too many of those. Yogurt and cottage cheese are her stand bys when nothing else sounds good, but she is really tired of them. Fresh w/w bread isn't good either, doesn't digest well. She had milk toast the other day with a poached egg on it. I guess the bread was too much for her.

Ok, so I have made her:
Spanish Rice with beans instead of meat
Potatoes and Peas
Fried Cabbage and Noodles
Potato Soup

Next is Mac & Cheese and a Carrot Rice Casserole.
These are all things that she has requested, but she is out of ideas too. She actually asked me to ask you all for some good ideas of things to eat.

Her tummy is still really sensitive to spices and oils and things. I thought about making her a squash soup. That sounded really good to me the other day.

I use only good oils in what I do cook. Raw milk is unavailable right now, and yeah, nothing with preservatives is good because she can taste each one and it doesn't taste good to her. I try not to use them if I can anyway. She is supposed to have girlled Talapia tonight. A family member is cooking that for her. She was unsure if she could even eat that. She is just so sensitive to everything.

   Some ideas...

Lentil burgers

pumpkin pie (without the crust, if she wants) with whipped cream

Quinoa and stir fried veggies

Carrot salad

Onion soup (try to use the search button on here for a great one)

Can she have all natural peanut butter? You could stuff some celery with that or cream cheese

My family loves the all natural ezekial tortilla bread. If you are willing to search for it, you could try that out and see if that works. It has helped me a bunch with my candeda.

Soaked oatmeal.

Avocados mashed with a little salt on a tortilla.

Sweet potatoes might lend a little variety.

Egg salad, just don't go heavy on the spices.

Chicken noodle soup with out the chicken.

You can also mix slippery elm in to some of her food with some honey so she is getting lots of nutrients. It's great for this kind of situation. There is a thread just on slippery elm somewhere around here.

Oh, these are some really good ideas! Thank you.

Yes, she can have natural peanut butter and has tried that in some celery. She has been eating some oatmeal though I don't think it was soaked. Good thought.

I will ask her about the lentil burgers and pumpkin pie. Good ideas.

Anyone else?

Lemon curd is an old-time standby for invalids.

Pureed mango and papaya served cold is almost like a pudding, and very refreshing.  Also, puree of a soft fruit mixed with fresh fruit is nice.  Small portions recommended, though.

This is an interesting article: http://www.mrsbeeton.com/38-chapter38.html - It contains nursing hints from Florence Nightingale.  Several recipes are included, but they may not appeal to a modern audience.

Can she handle bone broths? You said no meat but does that mean nothing that tastes like meat or just no pieces of meat? If she can handle bone broths, they are very very nutritious and healing for the gut, so add them in whenever you can. Also cabbage juice is good for the digestive system.

How about coconut oil or coconut milk?

I was told by a nutritionist after having a stomach issue and then not being able to get back onto solid foods to eat lots of coconut oil to help heal my stomach.  She suggested I  add it to the yogurt I was eating along with some protein powder to get some better nutrients in.  It really helped and I was back to a normal diet in a few days.

"pumpkin pie soup"
pumpkin puree or canned pie mix
maple syrup
pie spices
cream or milk to thin
mixed and heated

go to the baby food Isle at the store or the frozen premade foods that always gives me Ideas that I wouldn't have considered.
