  Stevia recipes?

I'm trying to cut sugar from our diet, so I checked out some books at my library about Stevia.  We have a great inter-library loaning system, but I still only came up with 3 books.  So then I tried Candida recipe type of books.  There were quite a few more of those, but here's my problem:

So many of the recipes call for "unusual" ingredients (especially the candida books).  Well, I'm being stretched enough to experiment with the stevia (and my family is being stretched enough right now, too. Smiley ) I don't really want to also be experimenting with alternative flours, milks, etc. at the same time.

Do any of you have recommendations for good stevia cookbooks?  Or maybe some "family favorite" recipes to share with me?  At this point I really just need a few recipes that look like "normal" Wink pancakes, "normal" cookies, "normal" cake, "normal" whatever.

Also, it seems to me that some of my recipes I can just put a little (not too much!) stevia in my usual recipe.  But for others, like cookies, where the sugar is really a major ingredient, that might not work as well.

Thanks for any help you can give me.

I'd be interested in these cookbooks/recipes as well.  I once tried to make brownies with stevia and used rice flour to make up for the loss in bulk from the sugar.  One word -  Lips Sealed
For now, I just use it to sweeten my coffee, tea and kool-aid.

So, what form of Stevia are you using?  And how much/how do you use it in your kool-aid?  (Kool-aid is one of the things I was wanting to try, hoping it would help get a  "Hmm, this isn't so wierd after all" response.)

The stevia I'm using right now is SweetLeaf stevia extract at (choke!) about $10.00 for 0.9 ounces!  I also like SteviaClear liquid, vanilla creme flavored, in my Stash Chocolate Hazelnut Decaf tea.  Yumm!!!

I use Pure Stevia extract powder.  I get a 1.3 oz bottle for $12.99.  I use less than a B*B size serving in a large cup of coffee.  Even at 2 cups of coffee or tea a day it takes almost 2 years for me to go through a bottle.  Koolaid, we measured the other day and I would estimate 1/4 tsp for a gallon.   

I've also got some unrefined powdered herb form.  This is not as sweet as the extract and it has a grassy or herb taste.  It's better in herbal teas and such and is a bit less expensive.

My bottle says a serving is 42 mg and I have 905 servings per container. (if this means anything).

A NOTE on Koolaid.  You would think that all flavors are created equal - check again.  I stopped sugar recently, so I've been reading more labels.  It seems that the only flavor that has no processed sugar of any kind is black cherry.  All the rest have dextrin and/or modified food starch - strange!   I wish they would make the black cherry in the invisible variety so I wouldn't feel bad having red dyes.   Tongue

Thanks, Healthybratt, for the heads up on the Kool-aid.  I know it's full of chemicals and colors, but I didn't even think to look at the ingredients for sugars.  (With all the label reading I've been doing recently, I don't know why I didn't look.)  I guess I just thought that with all the sugar you're supposed to add, they wouldn't have put any in.

I tried a recipe last night that the kids thought was ok.  (The ones completely off of sugar thought it was great!)

Golden Corn Bread

1 cup whole wheat pastry flour
1 Cup cornmeal
5/16 tsp. stevioside
1 Tbs. baking powder
1 tsp. salt
2 eggs
1 cup milk
1/4 cup vegetable oil

In a mixing bowl, mix all dry ingredients. Add eggs, milk and oil. Mix until batter is smooth.  Pour into a greased 9x9x2 inch baking pan.  Bake in 425 degree oven for 20-25 minutes or until golden brown.

Makes 8 servings.

(Edited to say that each serving is 27 grams of carbohydrate.  I remembered that some with diabetes might want that information.)

One more recipe that my daughter made for us.  (Again, the kids completely off of sugar thought it was great.)

Peanut Butter Cookies

1/2 C. butter
3/4 C. creamy natural peanut butter
3/4 tsp. stevioside
1/4 C. milk
1 egg
1 tsp. vanilla
1 1/2 C. flour
1 tsp. baking soda
1/2 tsp. baking powder
3/4 C. chopped roasted peanuts ( optional)

In a small bowl, combine dry ingredients.  Mix well and set aside.

In another bowl, combine butter and peanut butter.  Beat until fluffy.  Beat egg, milk and vanilla into peanut butter mixture.  Slowly add dry ingredients to wet ingredients.  Beat until thoroughly combined. 

Shape dough into 1-inch balls.  Place 2 inches apart on an ungreased cookie sheet.  Flatten by crisscrossing with a fork.  Bake in a 375 degree oven for 7 to 9 minutes, or untill bottoms are lightly browned.  Cool cookies on a wire rack.

Makes 36 cookies. 

We have one with a peanut allergy, so we use almond butter instead of peanut butter.  Also, we used whole wheat pastry flour.

(Edited to add:  Each cookie is 6 grams of carbohydrates.)

That cornbread recipe is very similar to the one on the package.  It looks to have a bit less baking powder and of course no sugar, but that should make it easier to remember.  I love cornbread, but if you're trying to cut out sugar altogether, corn has tons of it.

I have been using stevia for about 4 years due to some  carbohydrate intolerance issues. Stevia is not good in recipes where it has no flavors to enhance. I think it is terrible in baked goods unless they contain fruit or dairy. Using stevia with very small amounts of honey or maple syrup can also help. Stevia makes good strawberry cheesecake, yogurt fruit smoothies etc. If  a recipe contains fruit and dairy, the results are usually excellent. I have had some success in recipes containing peanut butter.

I have tried all the stevia cookbooks and did not like any of them. So I have not recommendations here.

I get my stevia bulk from Frontier Herbs (has website) and they are the cheapest I have found and their white 80% stevioside is excellent in taste. If you can locate a food co-op in your area you may be able to get wholesale prices like we do from Frontier.

aaahhh!!  i was so excited, seeing all this!  somebody gave me a box of stevia packets a long time ago and i thought i still had them.  went downstairs and looked and i must have gotten rid of them, thinking i didn't know what they would be like.....stupid!  i didn't even try them in my coffee first...........old dog, new tricks.......humph!    Tongue

I tried another recipe today, and it was a hit with all the children.  (Well, all but the one who asks, "Is this made with that stuff?" Smiley)  I actually doubled the recipe and put it in a 17"x12" pan.  And, Healthybratt, I made it with a mixture of whole wheat pastry flour and "just plain old" whole wheat flour. Wink  I also didn't have enough cocoa powder Shocked, so I only used about half what it called for.

Chocolate Cake Brownies

1 tsp. stevia extract
1/2 C. apricot spreadable fruit or sugar-free jam
3/4 C. butter, softened
1/2 C. cocoa powder
2 eggs
1 tsp. vanilla
1 1/2 C. flour
1 tsp. baking powder
1/4 tsp baking soda
1/2 C. milk
1 C. chopped nuts (optional)

In a bowl, combine cocoa, flour, baking powder, baking soda, and stevia.  Mix in spreadable fruit or sugar free jam, eggs, vanilla, butter and milk.  Beat till well combined.  Fold in nuts.

Pour batter into a greased 15x10x1-inch baking pan.  Bake in a preheated 350 degree oven 10-15 minutes or till a toothpick inserted near the center comes out clean.  Cool in pan.  Cut into bars.  (Makes 36 servings, 8 grams of carbohydrates each piece.)

I just realized as I was typing this in that I forgot the milk.  They turned out fine, so I guess it's not really necessary. Wink

Seems to me that strawberry or raspberry jam would be good in it too.

I found the jam at Winco. (Don't know if this is just a local store, it's just a "bag your own" type of grocery store.)  But I think you could find it in any store with the other jams.  It's called "Sugar free" or "Spreadable fruit."  Technically, I think it's probably a "cheat" for candida diets, because it's full of fruit sugar.  I decided that the amount for the recipe wouldn't matter that much.  It makes a good treat. Grin

I wish I would have waited on this one...indefinately.  UGH.  It calls for 3/4 tsp stevia and I put in 1/4 to start with and it was bitter like cocoa, so I added another 1/4 and it was so nasty beyond sweet my body seized up for a sugar headache that didn't come because--no sugar--hahaha fooled ya.  Anyway, my opinion on this recipe isn't very positive.  This is the last time I waste my ingredients on a stevia recipe.  I've made up my mind that if I want cookies then I'll take my chances with sugar, else I'll just do without. Tongue

I've done this, too.  If you add cocoa, then you get chocolate frosting. Smiley

Also, I've been trying these different flavors.  (Let's see if this will work.)  http://www.sweetleaf.com/category.php?subcat=products&subpage=steviaflavors  I've been getting them from Azure Standard, and I haven't paid 13.98 per bottle yet.

I usually put the drops in my tea.  (Some chocolate drops in my mint tea, vanilla cream in my chocolate hazelnut tea, etc.)  But we've also discovered that a couple of drops of the rootbeer flavor in milk very nicely simulates a rootbeer float for my little guy who can't handle sugar.  Also, a couple of drops of the cinnamon flavored one added to the milk makes his Rice Chex "scrumptious!"

Anyway, I've tried most of the flavors (not all at once, but over the last year or so) and I'm very pleased with them.  Since they're liquid drops, they don't really work so well in some recipes, but then the subtle flavors would be lost in recipes.  I think they're best as a special little treat (a couple of lemon drops in water and my son thinks he's getting Kool Aid!)

I have tried several different "types" of Stevia lately.  We are a sugar family trying to cut WAY back, and learn to use alternative sweeteners so our tastebuds are still freshly used to the mainstream sugar taste of recipes.  Tongue  Anyway, in the course of my "testing" the vanilla flavored liquid extract has won rave reviews over every other form of it.  I haven't tried any other flavors but plan to.  It seems like that is going to be the only realistically viable option of me incorporating Stevia into our everyday lives without hearing complaints.  Wink Just wanted to share this with those of you who have only ever tried the powder, or un-flavored extract and decided to ban Stevia forever from your baked goods!  Grin

I know this is an old thread, but wanted to let you know a recipe I just tried.  We just started trying stevia, as we want to cut out sugars to start an anti-candida diet in the summer for my DD.  Although the cream wouldn't be allowed then.  Just went to the Asian market to stock up on rice noodles and buckwheat noodles!  Here's the recipe.  We used it to dip apples.  We used Penzey's natural process cocoa.

Debra's Chocolate Cloud

I always whip this up fresh and eat it right away, though you could make it up in advance and refrigerate it. It also tastes great frozen--a kind of fluffy ice cream.
makes 2 servings

1/2 cup whipping cream
1/4 teaspoon vanilla
1/4 teaspoon white stevia powder
1 teaspoon unsweetened dark cocoa powder*
Whip cream, vanilla, and stevia in a bowl until stiff peaks form.
Stir in the chocolate with a spoon.
Enjoy!
* When I make this at home, I generally use Scharffen Berger or Green & Black's cocoa powder. At my in-laws' they only had Hershey's. The Hershey's required a lot more cocoa powder to get any flavor at all, so adjust your cocoa to taste.

When I was using it more, I learned that a combination of stevia and veg. glycerin worked out the best.  I did copy a bunch of stevia recipes out of a cookbook.  What were you looking for?

  I am doing a yeast cleanse at the moment so need no sugar grains or fruit...
But all recipes are more than welcome as we are trying to lower our sugar intake.
