  Amaranth

i was searching on here for what to do with amaranth and didn't find a thread, so thought this would be a good place to post recipes for it in one place.  i bought some cuz i heard it was good for us,  Roll Eyes i do that a lot, and have kept in in the freezer, cuz i just don't really know what it's for!  can it be added to soup like rice or pasta?  any ideas?  thanks!

I believe you can pop it like popcorn...although it is tiny little puffs.  I also have eaten it cooked per package directions with chicken and a sauce on top.  It is gluten free as well.

I can eat it cooked as a hot cereal, although the cold pasta-type salad recipes I've seen look like they might be a better choice. Smiley Amaranth has a flavor that reminds me of corn silk.

Popping like popcorn sounds interesting!

We love amaranth!

Our favorite way too prepare it is with cumin.  We do 2 1/2 c water to 1 c amaranth, add salt and a generous amount of cumin powder to the pot, bring to boil and then simmer for 20 minutes.  I usually serve it alongside chicken and a bunch of plain, steamed vegetables-- it just seems fit to go with something meaty.

Amaranth will come out really sticky-- like a solid mass of sticky grain.  It's kind of a neat texture, actually.

I've also added popped amaranth to buckwheat pancakes (we had to go gluten free around here for awhile) and I thought that added an interesting texture, also.  But my popped amaranth wouldn't have served as a snack, unless maybe mixed into something like granola bars or something.  It's too small.  Kind of like "popping" cumin seed or mustard seed, if you've ever tried that.

Sometimes we just add some Amaranth to our brown rice when we're cooking it. It has a kinda nutty flavor! I might try popping it...that is interesting. Whenever I give it to my kids as a warm cereal or something it just comes out whole in their diapers so it makes me think they are not digesting it properly and maybe not ready for it? I don't know it makes their diapers SOOOO nasty that i don't make it that much cause its a pain. sorry to be gross!

We like it as a cooked cereal.   It is really good for you!  It is a high quality balanced protein.   It has twice the fiber of wheat and is high in vit E, iron, and calcium.  Also no gluten.    You can also grind it into flour and use it in bread.

We had it today for breakfast. It's a supergrain and food of the Aztec people. It's sooo yummy. For cereal, cook on stove top for about 20 minutes and keep checking you have enough water. Serve with a dollop of organic virgin coconut oil (tropicaltraditions.com) and some "raw" honey for a real immune booster and a bit of sea salt.

For baked goods, toss a handful into a brownie mix or bread mix. When it bakes up, the grains are cooked to the point where there are still a bit crunchy giving the sense that your baked item has nuts in it. You can also do this with millet grain (B-17 vitamin cancer-fighting/illness preventing food).

I tried popping it in coconut oil but just had a batch of browned to burnt oily grains. Not sure how the Mexicans do it.

Here's what I found doing a Google search:
Amaranth is used in various cultures in some very interesting ways. In Mexico it is popped and mixed with a sugar solution to make a confection called "alegria" (happiness), and milled and roasted amaranth seed is used to create a traditional Mexican drink called "atole."

Since it's Smiley whole grain, you are getting maximum vitamins/minerals that tend to dissipate within three days of turning them into a milled flour that would sit on your shelf for months with the natural oils and fats inside going rancid.

i have some amaranth that i ground up, is it possible to do a bread with it by itself, as in no wheat?
