HB, any potato recipe with the skin on is a plus for me.  I do NOT like peeling taters!
Me either - oh the fry recipe is skins on too.  I guess they all are except the hashbrowns, but honestly I don't know why you couldn't leave the skins on there as well and just shred them along with everything else.

Anytime I make something with potatoes I leave the skins on, even mashed potatoes.  If you are making it for a young toddler the skins can cause a gagging/choking problem, so if making it for young toddlers I usually will take the extra time to peel.

Here is a potato "gravy" that I made up.  We serve it over biscuits or whole wheat bread.  This actually helped us get through one of those really lean months when money was tighter than usual!!

1/2 onion, diced
1 stalk celery, diced
olive oil
1/2 cup water
3 large potatoes, sliced thin
2 cups milk
1 tsp salt

Saute onion and celery in olive oil until soft.  Add potatoes and stir.  Add water, bring to a boil, reduce heat and cover until potatoes are very soft, about 10 minutes.  Add milk and salt.  Stir until thickened.  Add more milk if too thick.


If I have it, I add some butter and sour cream to this sauce as well.  It's really very good and very inexpensive.

Thanks for this recipe.  I tried it today and it was yummy!  I made one 9x13 with ham and another 9x13 with sharp cheddar mixed in.  I didn't cook the taters first, though and it took 3 hours !!! for the potatoes to be done.  Oh well.  Live and learn.

Here's my scalloped potatoes recipe.  I just made this last night with our home grown red potatoes.  It was wonderful!  It's also cheap, filling and easy! It takes a lot of time in the oven, but while it bakes, you can be doing other things.

Scalloped Potatoes
3 pounds of potatoes (about 9 medium)
3 tbs. butter
1 clove minced garlic (I double this)
3 tbs. flour
1 tsp. salt
1/4 tsp. pepper
2 1/2 c. milk
1 medium onion, finely chopped
Cubed or sliced ham (opt.)
1 tbs. butter
2 c. grated cheese (opt.)

Heat about 1" of water on the stove and boil the potatoes whole until they are tender (about 25 min.). While they are cooking, make the white sauce.

White sauce: Melt the butter in the skillet over low heat and toss in the garlic. When it sizzles, whisk in the flour, whisking constatnly until it bubbles. Stir in the milk and heat to boiling, stirring constantly. Boil and stir about 1 min. Set aside.

Slice potatoes thin. Arrange 1/2 the potatoes in a greased 13x9 pan. Sprinkle the onions & ham on top. Top with the other half of the potatoes. Pour the white sauce evenly over the top and dot with butter. Cover and cook in a 350* oven for 30 min. Uncover and cook for another hour. Sprinkle the cheese on top and broil until the cheese is melty and bubbly.
