Here's my latest invention!   

Oatmeal Raisin Granola Cookies


½ c Butter
1 Egg
1 tsp Vanilla
2 c Oats
½ t Soda
1 tsp Cinnamon
¼ tsp Salt
½ c Apple Sauce
Coconut
Raisins
¼ c Honey

Mix, bake at 350 for 15 – 20 min, either in cookie shapes or pressed into 8 x 8 pan.

There's enough sugar in the granola and the raisins to make up for the tart in the yogurt.  If not, you can always add a dab of honey or sugar and some vanilla.  I do this when I want to eat it plain.  Not too shabby.  It just took awhile for me to figure it out.

I add it after refridgeration because it needs a few hours to set up.  I haven't actually tried to add it before - it might work (although I've read that you shouldn't disturb the yogurt before you set it up in the fridge or it will come out runny).  Then I usually add sweet as I go, because we don't always sweeten it.  It depends on what we eat it with.  Sometimes we eat it as a sour cream replacement and no sugar for that.

I'm making some tomorrow morning...was going to today but by the time I got to it it would have been done at 1am so I'll start it in the am.

hi Vanessa!  i have gotten spoiled after making my own granola to put plain yogurt on, so that now i don't really like the store bought.  i use my homemade yogurt (oven variety) and add a little raw honey & blueberries or strawberries just before eating it.  i never remember to add flax seed.  Roll Eyes oh, well can't be perfect.  i've never tried adding sweetener, to it, to have my kids just eat it.  they love rasp. from the store, that would be kinda hard to do at home for me.  raspberries are soooo expensive if you don't have a bush.  i do get my kids to eat the same thing i eat.  i eat it every day, they eat it once a week (and i know they like to pretend it's terrible, but my son devours it!)  are you going to put your yogurt in the oven?

Back to talkin' Granola . . . It dawned on me that you can get a 25 lb. bag of Rolled Oats for $18 from a grain supplier. They also make a 7-grain Rolled Oats! Cheesy Wouldn't that make a great granola!!  I'll be doin' this since I've already made 3 batches this week to keep up with my guys eating it! Grin

ok, so who is this supplier?  i'm just sure i've never seen them at my place in kalona, though they do have very clean grains, etc.  how much granola are you baking and for how long?  i make a big batch, which is about 3 pans to bake for 2 hours at 250.  seems time consuming to me.

I have a recipe for granola bars that I would like to make healthier. Here is the recipe:
4 c rice crispies cereal
5 c quick oats
1 c wheat bran
1 c chopped nuts
1 bag small marshmallows
3 tbs margarine
1 tsp vanilla
1 tsp cinnamon
Mix dry ingredients. Melt margarine and marshmallows in a large pot. Stir in cinnamon and vanilla. Remove from heat and stir in dry ingredients. Pour onto a greased cookie sheet and roll flat with a rolling pin. Refrigerate for 30 minutes. Cut into bars.

We like them because they are fairly soft and not hard and crunchy at all. Does anyone have any suggestions for something to substitute the marshmallows and margarine with? We would really like to keep them on the softer side, rather than crunchy.

Use butter or coconut oil for the margarine.  I don't know any subs for marshmallows.  Maybe you could look up a homemade marshmallow recipe and that might give you some ideas.

I would think you could use dried fruit instead of marshmellows w/o changing the consistency. Papaya or mango or pineapple would still be sweet. Kind of expensive though.

I have a great granola recipe that I have made in the past.  However, I got it out and started to make it today.  It calls for wheat germ and I am out!  Does anyone know....do you think I have to have it in order to make it?  Isn't it just another one of the healthy ingredients?  the other ingredients are stuff like sunflower seeds, honey, molasses, oats, etc

No, I don't think you have to have it.  It's just a healthy addition. I just made HB's granola recipe today and it didn't have any wheat germ in it. -KG

I think you can pretty much do whatever you want with granola.  All I put in mine is oats,coconut,pecans, butter, honey and cinnamon.  It's a hit.

I will say that the granola turned out delicious, but it was very crumbly...I think a little more than usual.  It is a great combo still though....nuts, oats, coconut, cinnamon, honey, mollasses, brown sugar (ugh...that is not a good one!  Any thoughts on substituting), sunflower seeds, ....ummmmm...I think i have to go have some...

Wheat bran muffins!  I often throw a handful of wheat bran into any baked item.

Personally, I like to add wheat bran into things I'm baking or cooking.  But wheat germ has a great, nutty taste, and I put that on all kinds of things (eggs especially) and sometimes eat it plain.  It doesn't need to be mixed in to taste good.

Hey I'm wondering if anyone out there has any suppliers for bulk nuts and seeds.  I'm making granola and trail mix a lot and I need to find cheeper almonds, walnuts, or cashews as well as pumpkin seeds, sunflower kernals, etc.  I am involved in a wheat montana co-op where I get my grains, but they don't have nuts and seeds.  Thanks!!

I just got this great granola recipe from the internet.  I changed a bunch of things and it turned out great and very crispy!  Here's my version:

 INGREDIENTS

    * 6 cups rolled oats
    * 1 cup blanched chopped almonds
    * 1+ cup chopped walnuts
    * 1+ cup chopped pecans
    * 1 cup pumkin seeds
    * 1 cup wheat germ
    * 2+ cups chipped (big flakes) unsweetened coconut
    * 1 cup unsalted sunflower seeds
    * 1 1/2 tsp salt
    * 1 tsp cinnamon
    * 1 cup coconut oil
    * 1+ tsp vanilla
    * 1 1/2 cups honey (I used 1 cup agave nectar...this might make a difference in crisp/chewy factor)
   
DIRECTIONS

   1. Preheat the oven to 300-325 degrees
   2. Stir together the oats, nuts, seeds, wheat germ, coconut, cinnamonand salt. Stir together the vanilla,oil and honey in a pan on med. heat until blended.  Pour over the oat mixture, and stir to coat evenly. Spread out in an even layer on two or three cookie sheets.
   3. Bake for 25-30 minutes in the preheated oven, stirring about every 10-15 min, until the oats and nuts are toasted. The original recipe added dried fruit after cooking (about 2 cups stirred in -- whatever fruit mix you like) but I don't like it in my granola.  Cooking and texture might be different with honey...

I used to make granola bars by mixing up a granola batch w/o baking it, add some beaten eggs to bind it, pack it into a greased baking pan & baking it. If I remember correctly, it needed to bake at around 300-325 deg. range. It came out kinda cookie/cakey texture. Don't have my exact recipe anymore. I would sub. cocoanut oil for the marg. & maybe some honey instead of marshmallows? HTH

I call this my "granola for people that don't like granola". I'm not a granola person, but I came up with one even I like.

In a bowl mix:
1/2 c. oil
1 c. honey
1/2 c. brown sugar or sucanat
1/2 c. milk of some kind
1 t. vanilla
1 t. cinnamon
1/2 c. wheat germ

Once well mixed, add:
12 c. quick oats (reg. works as well)
4 c. brown rice crisps (or rice crispies)
nuts, optional

Bake at 300 degrees, on 2 cookie sheets for 3, 15 minute segements, stiring between, or until golden brown. Stir while cooling to help prevent clumping. Makes 1 gallon jar full.

This is so yummy!  Thanks for the recipe!
