The granola should already be made.  This recipe is for granola bars.

WOW, that's a lot of sugar/honey to make bars.  I think I'll stick with the crumbly stuff.

I tried the egg whites, but didn't really know how.  I took 3 egg whites and whipped them a bit but not till fluffy.  Then folded them into the oats.  I was afraid to mix them with the sugar, for fear the heat would cook the whites before they were mixed.  Can you give me better instructions on how to use them??  Undecided

I tried my new batch with egg whites and honey.  Chewy not crunchy.  Still getting there.

Hi HB!  here is what i did for my granola and it is pretty crunchy! 

Toss together:

6 T. brown sugar (or a little less and sub. some raw sugar)
1/8 c. wheat germ
1/2 c. coconut
1 c. sliced almonds
1 tsp. vanilla
1/2 tsp. cinn
3 c. rolled oats
1/2 tsp. salt
 
then heat 1/4 c. oil
add 1/4 and 1/8 c. maple syrup
mix with granola mixture
then separate 3 eggs and mix the RAW egg whites with the mixture. 
Bake at 250 for approx 2 hours stirring every 15 min. til crunchy.  (of course you have to keep tasting it to see   Wink )

then when it's done i add raisins.  yummy!   Grin

Hi HB!  here is what i did for my granola and it is pretty crunchy! 

Thanks.  I was hoping for a much simpler recipe tho.  I really like the plain brown sugar oats with nothing else added except for maybe the raisins, but it's just not crunchy.  I baked mine for almost 2 hours with egg whites, except I used 3 whites to 8 cups of oats.  I guess that means I would need 8 egg whites.  TOO many.  I think I'll just stick with my original recipe I posted earlier.  I'm going for inexpensive as well as good.  If I have to add nuts, wheat germ and a dozen eggs, I'm getting well over the price of a box of granola cereal from the store.

Okay, here's a really easy Granola Bar recipe, but not sure how healthy it is. Anyway, it's fast, easy, and they turn out crunchy for us. Yum. I need to make a batch today.

3 c. rolled oats
1 c. peanuts
1 c. raisins
1 c. sunflower seeds
1 stick butter, melted
1 1/2 tsp. cinnamon
1 (14 oz) can sweetened condensed millk

Mix well. Line a 15X10 jelly roll pan with aluminum foil; grease. Press bars into pan. Bake 25-30 min @ 325 degrees until golden brown. Cool slightly. Remove from pan and peel off foil. Cut into bars.

Actually, I just throw them into the pan, but I remember them sticking a little bit, so grease your pan well.

I remember one time I baked them a little too long, and then waited too long to cut into bars. So, I just crumbled it up all on the pan and the kids just sort of ate it like granola. They loved it! Grin

I like it crunchy too, and I altered my recipe by adding more oats/dry ingred. and making the whole mixture more dry (I think it is a 2 c. wet ingred. to 16 c. dry ingred. ratio). Then I bake it at a lower temp (300) for 3-4 15 min. segements, stiring between, and the longer bake time at a lower temp combined with a drier recipe makes it more crunchy. Of course, you could always "over bake" it!  Wink.

245 degrees for an hour, plus I leave in the oven even after I turn if off while the oven is cooling.

I tried it at 350 and I had to stir it.  At 245 I don't and yes it gets very dark without burning.

something that is mentioned in my granola book is to "toast" the grains before mixing the granola.  it says:

"place the grains in an even layer no more than one inch deep in a roasting pan.  Toast in a preheated oven at 325 for 5-7 min, stirring a couple times to heat evenly.  Each grain should be warmed through and crisp to the bite.  a slight deepening of color may occur but that is not characteristic to look for during this step.  over toasting will scorch the grains and give them a bitter flavor." 

it also gives stovetop directions. (pretty easy)

it also suggests warming the liquids to make them easier to mix with the dry stuff.  just thougth the toasting might help your crunchiness.   Smiley

I personally don't care for coconut, so I don't add it.  When I make this granola, even people who don't like granola eat lots of it!  They love it!  Big hit!

That sounds so good....I love peanut butter.  We recently switched to natural peanut butter.  I cannot believe the difference it makes!  I ended up eating some of the processed name brand peanut butter yesterday - yuk!!  It tasted so oily....I think I'm ruined forever on cheap peanut butter

So my question...

Have you made this with natural peanut butter?  We still have the processed peanut butter so it might be a good way to use it up. (We have a 6 lb can I buy at Sams! Shocked)

I haven't yet, but I will!!!  We are working on changing our diets.  I too have lots of peanut butter to use up before we switch Smiley  Let me know if you try it!

When you use natural peanut butter, don't you have to stir it before each use?  I was thinking of buying a 15 pound bucket friom Azure but the thought of having to stir that monster all the time turned me off.  But the price was good. Huh

colefam- Yes, you do have to stir nat. pb, but when I buy a bucket of it, I stir it once, then spoon some into an old glass pb jar, and store that in the fridge where it won't seperate.  I only need to stir when I'm refilling the little jar.

My bucket is only a 9 lb. bucket (it looks like a gallon), not a 55 lb. bucket! I use a stainless steel spoon turned around (I hold the spoon part, and stir with the handle). My pb is very soft, so it's not hard to stir. My cuz keeps her fridged portion in a super sized cottage cheese container so she doesn't have to refil. And no, I have never fridged the bucket, and it has never gone bad or rancid. This is the Midwest, though, and it's cold here more of the year than not. I just keep it in the pantry.

You only have to stir it once if you keep it cold.  Try putting some in a smaller container and keeping it in your fridge.  It's worth the effort.  Natural peanut butter is so much yummier than Peter Pan (and that WAS my favorite for many many years).

4 teaspoons vanilla
1 teaspoon salt

Melt all ingredients except oats and pour over oats, stir well.  Spread on cookie sheet.
Bake for 2 hours at 250 degrees.

Personally, I didn't like the honey flavor, so I took it out.  Just not a honey kinda person, I guess.

HealthyBratt, I used your recipe for granola.  It turned out great!  Instead of butter I used oil, added a little extra water and some cinnamon and we love it!  I also used minute oats because it was what I had.  It turned out perfectly crunchy.  Thanks!

I tried making the granola with honey this morning.  Actually, I only used 1/3 c. honey with the brown sugar.  Just that little bit of honay caused it to be soft instead of crunchy.

I made this the other day with a few minor changes, (i.e. milled flax seed instead of wheat germ, bad peanut butter, sucanat)  Hubby LOVED it!  Thank you for the great recipe...it was wonderful with plain yogurt, yum!

No, I added it before baking, but a very good point....I probably should have added it after baking it...not sure how it works out with wheat germ....anyone know if that looses it's nutritional value as well?

We buy natural peanut butter.  DH puts the whole 4 quilos in the Kitchen Aide and mixes for 5 - 8 minutes, he then puts it back in the bucket.  It stays in the pantry for up to 6 weeks if I'm lucky  Roll Eyes  and we never have to remix it.  Just take out the amount to refill the pot that stays on the counter.  As most of you know, we live here in Brasil where it is NOT cool and have not had any problems with rancid PB. 
On a PRAISE note, this PB is quite the BLESSING!!!  We have been here as a family for 6 years.  My DH was raised here.  When we came the first time my MIL told me to bring a couple of Sam's large containers of PB.  What she could find here was nasty and sweet.  Lips Sealed  Well, about 5 months ago we were at another missionary family's house for a picnic and the mother pulled a pot out of the cupboard and told me to taste "this" that she found in the city..........................we went out the next day and bought 2 buckets!!!  Shocked Shocked  The funny thing is the Brasilians use it to make peanut flavored ice cream NOT TO EAT!  AND the vendor told me they've been selling it for OVER 10 YEARS!!!  My poor MIL!  Now we know and are SO THANKFUL for the little things GOD blesses us with!!!
