I have a question about the giblet gravy posted by Whiterock last year.
Do you put any spices or parsly onion in the broth to cook the gizzards in? What is the flavor.  I am going to make this gravy also along with the Turkey drippings gravy  I will make it today since I have all the giblets out of the turkey already is that okay?? Will it be good tommarrow?
I can't wait to try it. Let me know if I need to put any thing else in!

Mom doesn't put any other spices in it. But we always eat it over cornbread dressing and that has other spices in it. And since it's all eatten together mom said I should tell you how she makes her dressing too. ("Recipe" below)

I don't know how to describe the taste. It's not like any other gravy I've had. Most people either love it or hate it. We all love it.
 
You can make the gravy ahead of time and just reheat it with a little extra milk before serving.

EDIT: I forgot to tell you that mom said if there was a neck in with your turkey gibblets, then boil it with the rest and when you take it out, take all the meat from it, chop it up fine, and add it to the gravy with the giblets. She said that if there was no neck then it won't hurt anything but if there was, then it was a bonus.  Grin

Here's how she said she makes her dressing. This makes a lot of dressing; like two good-sized casserole dishes full.
 
Boil some chicken with the skin on, save the broth and let the chicken cool. Take the skin off, take the meat off the bones, and tear it into largish pieces.

Meanwhile, make a big cake of cornbread - NOT sweet cornbread. And she uses white corn meal but she said you can use yellow (I think the white meal makes it moister). Now, how big is a big cake of cornbread? Um, not sure what to say, but think large cast iron pan.

Crumble the corn bread in a large mixing bowl and pour enough broth over it to make it really soupy. How much is that? I don't know.  Add one medium onion chopped fine, 5 eggs, 1/8 to 1/4 tsp of sage, and salt and pepper to taste. Then she said to mash with a potato masher to brake up all the lumps and thouroughly mix together. At this point it should still be fairly liquid in consistency -- about like pancake batter, if it's thicker than that then add more broth.

Pour into casserole dish(s) and drop pieces of chicken into it here and there. Top with pats of butter and cook at 350º 'til golden brown on top and firm to the touch.

It is delicious!!!!!  But did I make it too thin? it is very watery but tastes wonderful. Should I do more butter and flour? To make it thicker or is it supposed to be thin?

Yes, it should be a tad bit thicker than that, but it depends on what you like. If it were me, I'd probably take out some of the gravy, stir some flour into it to make a thin paste, and then stir that back into the pot and heat 'til it's as thick as I like.

Thank you I did that and now it is thicker.
Can I make the corn bread casserole without the chicken or should I save that for another day?   We already are doing 4 turkeys and a ham. Two fried and two in the oven. They are small around 14 lb each. We are having 25 to 30 people. I would like the casserole but I think I am done with the meat. lol

I just made the most AWESOME dressing! I used a recipe from the food network and doctored it a bit. My son can't have wheat, so instead of croutons, I used a loaf of dried spelt bread. It has dried cranberries, apples, and leeks in it.  I omitted the pork sausage. YUM!

Just put my wild rice casserole in the oven and want to cry, missing my mommy.  They are in FL and this is her recipe.  It makes the house smell like Thanksgiving.
1 cup wild rice
1/2 cup chopped onion
1 box slice mushrooms
1/2 cup slivered almonds
1 stick butter
saute all til soft
add 3 cups chicken stock
cover and bake in 350 oven for 1-2 hours til liquid is absorbed

And yes, that is ONE STICK of butter.  So what, right?

My turkey is brining, the goose is thawing, pumpkin and pecan pies are done, cran/orange/apple relish done.

BTW - used Martha Stewart's recipe for brine and just had to note that her sweet 93 year old mother died last week.

Cranberry jello mold (my favorite since I was a kid!!)

Green Bean casserole (the kind with onions... a waste of good beans...)
Lentil salad
Mac & Cheese (from scratch) for the kids
Pickled okra, cucumbers
Deviled eggs (only we call them angeled eggs, don't want to give him credit for anything)

And chocolate fudge pie, chocolate mousse pie, chocolate pecan pie or chocolate chip cookies for dessert  (it's no wonder I turned out to be a chocoholic...  Roll Eyes Cheesy)

Shabby, your thing with angeled eggs made me smile because that's what we always called them in my family too!! (I realize it was a year ago that you posted that, but still). I actually was raised calling them angeled eggs, so it's kind of weird for me to see other people calling them deviled.

As for traditions around here:
Turkey
LOTS AND LOTS of gravy ( I crave this ALL year)
Mashed potatoes
Stuffing
Warm buttered rolls (usually brown and serve)
Yams... usually candied with marshmallows etc
Corn (sometimes)
C"an" berries (is there any other kind? grin)
Black Olives
Celery stuffed, some with peanut butter, some with pimento cheese
Angeled Eggs
Jello fruit salad
Apple pie and sometimes mincemeat pie

Hubby's tradition that HAS to be there is red peppers with French Onion dip.
His family never did the stuffed celery thing, and we went to his house one year for Thanksgiving and they asked if there was anything we had always done that wasn't there. I mentioned the celery. They looked at me cross eyed, but let me get it anyway. For some reason the turkey did not cook up at the intended time so everyone started snacking... guess what went first? EVERYONE dug into the celery and I had to make more twice I think.  Grin

I have two. I've used the first as a main dish, but it could be made into a side dish. I'm thinking about trying the second.

Baked Sweet Potatoes
Scrub potatoes clean. Bake in a 350 F oven until done. Serve with butter, cinnamon & honey drizzled over. YUM! For extra flavor, toss some diced apples into the oven to bake with the potatoes. If you want, you could halve or quarter the potatoes for making smaller portions

This next recipe is simple, but can be labor-intensive if you grate the potatoes by hand. (Good for keeping kids busy  Wink) It comes from a local publication by our electric company.

Sweet Potato Pone
  • 4 raw medium sweet potatoes, washed, unpeeled
  • 3 eggs
  • 1 1/2 tsp vanilla
  • 1/2 tsp almond extract
  • 1 cup xylitol (or agave nectar[3/4 cup], or honey [3/4 cup], or Maple syrup to taste, or 3/4 cup brown sugar & 1/4 cup granulated)
  • 1 1/2 cups all-purpose flour
          (I plan to use arrowroot or some other thickener)
  • 1/4 cup butter
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Preheat oven to 350 degrees. Grate the sweet potatoes with the fine side of the grater. In large bowl, using a wooden spoon, stir together sweet potatoes and eggs. Stir well. Add vanilla. Stir well, Add following ingredients separately, sitrring well after each :Almond extract, sweetener, flour, butter, cinnamon and nutmeg. Butter a shallow 9" x 13" baking dish. Bake uncovered 1 hour and 15 minutes or until browned. Serves 8-10
This makes a dense type of cheesecake/coffecake loaf
UPDATE: My Sweet Potato Pone is cooling now & I am sampling it. I know. I know.  I am bad  Sad But this stuff is GOOD  Smiley
I tossed in some raisins. For my sweetening, I used about 1/2 xylitol and 1/2 maple syrup. I skipped the almond flavoring and used Bob's Red Mill Gluten Free All Purpose Flour.
SOooo much BETTER than that old sweet potato soufflé (I think).
Mr. Bird should be done by the time we finish breakfast.  Smiley

Me too!  While we wait, here's what I did last year...

I put my leftover stuffing on the bottom of a pan, covered it with leftover turkey.  I poured some gravy over that, spread some cranberry sauce over it, topped it with mashed potatoes and put it in the oven til it was warmed through and the potatoes were starting to brown.  YUM!

Does serving pie for breakfast today count?   Grin  (I rationalized it as a somewhat rich pumpkin bread/muffin   Wink  -- and I used half the sugar in the apple slices and no corn syrup in the pecan pie -- thank you for the brown sugar recipe!)
Now we have just half the pecan pie to finish tonight.  Can you tell I'm not worried about the *dinner* leftovers, just the three pies amongst 8 of us in two days!    Tongue 

The leftovers casserole sounds yummy to me!  Unfortunately my family vetoed my suggestion to have tky dressing on our menu   Huh

I served turkey pot pie with the turkey and veggies. Plus today I made turkey tortilla soup. It was good on the cold day. I only have a few rolls left. We are having deer backstrap tonight. They are tired of turkey. Plus the turkey is finally gone.

Sweet potato fries:

INGREDIANTS:
-sweet potatoes either peeled or not
-oil ( I prefer olive oil)
-whatever spices you want ( examples salt, cayenne, garlic, pepper, cumin etc)

INTRUCTIONS::
Cut the sweet potatoes into length wise wedges like giant long fat french fries.
Throw the wedges into a bowl with the spices and oil so that they get coated.

BAKE:
Lightly oil the baking pan or cookie sheet

Put wedges on the cookie sheet in a single layer.

Bake at 400 degrees for about 30 minutes.

Bake until edges are crisp and potatoes are cooked through.

Serve right away.

There's very little salvageable meat on the neck, but my grandmother always boiled it with the giblets and then used the broth for gravy.

Sorry, I'm late, but you can just boil them and put butter, salt and sugar on them and they are yummy.  You can add pineapple, brown sugar, or whatever and they are pretty fail safe.  I add the salt after I cook them, because it cuts the "too-sweet" taste.  Personally, I think mashed sweet taters would be good too, but I've yet to try it.  You can also fry them.  Katy*did told me to boil them first, slice'em thick and fry and serve with butter and garlic if I remember correctly.  My MIL fries them and eats'em plain.  They are almost as versatile as white taters.  Grin

Oh, you can also substitute boiled and mashed sweet potatoes into your favorite pumpkin pie or pumpkin bread recipe.

My grandmother's pumpkin pie recipe.  It's Libby's but modified because none of our family has any particular fondness for cloves.

1 unbaked 9-inch deep dish pie shell (I use the recipe in the Better Homes cookbook, but I use 1 T of white vinegar and add a pinch of salt before I put in the ice water).

2 eggs
1 can (16oz) Pumpkin
3/4 c sugar
1 tsp salt
1 1/2-2 tsp cinnamon
1 1/2 tsp nutmeg (save 1/2 for top sprinkle)
1/2 tsp all spice
1-2 tsp vanilla
1 can (12 fluid oz) Evaporated Milk

Preheat oven to 425.  Beat eggs lightly.  Stir in remaining ingredients in order given.  Pour into pie shell.  Sprinkle 1/2 tsp nutmeg over top.  Bake for 15 minutes.  Reduce heat to 350 and bake for another 40-50 minutes or until knife inserted comes out clean.

This pie is a hair less spicy than the typical recipe and the vanilla really livens it up.   Grin

Sweet Potato Biscuits presented by Ashley Inn Bed & Breakfast    

Sweet potatoes are a staple food of the south, and there's nothing more southern than homemade biscuits. This recipe calls for mashed sweet potatoes. Try baking the potato then scooping it out to mash. The flavor is much sweeter than boiled mashed potatoes.

3 cups mashed sweet potatoes
1/2 cup sugar
3/4 cup butter (or margarine)
4 cups flour
1 teaspoon salt
3 teaspoons baking powder

In large bowl, mash potatoes, sugar and butter. In separate bowl combine dry ingredients. Add dry ingredients to potato mixture mixing well. Cover, let stand at room temperature at least four hours.

Roll out thick (1 inch) on floured board. (If dough is too sticky, work in more flour). Cut with biscuit cutter. Place on lightly greased cookie sheet about 2 inches apart. Bake in preheated oven at 400° for 15-20 minutes.

Serve hot with orange butter (see recipe below). Makes 2 dozen biscuits.

Orange Butter
    1 stick butter, softened
    2 teaspoons honey
    2 teaspoons grated orange rind

In small bowl, combine all ingredients. Press into a small serving container. Garnish with fresh flowers. On special occasions at the Ashley Inn, we garnish our butter with handcrafted butter roses.
