  Egg Nog - Mmmmm!

I have a severe weakness for egg nog.  And, I now know just how AWFUL the storebought yummy, delicious, and full of garbage egg nog really is (I read the ingredients Lips Sealed Sad)

So, do any of you have any tried and true homemade jobbers?  We're not squimmish about raw eggs (I think you need to use those...) but what else would you put in it???

Oh, I have one!  Thanks for the reminder, I had forgotten about this.  My dh and I drank tons of this a few years ago.

Combine in blender:
1 Cup milk
3 Tablespoons powdered milk
1 egg
1 1/2 Tablespoon honey
Nutmeg, cloves and vanilla to taste

Blend and serve.  If you chill, stir before serving.

Recipe can be multiplied as much as your blender will hold, or if you have a hand blender like mine, you can make a gallon of it at once.

You can leave out the powdered milk.  It is not quite as thick, but still good.  I haven't tried it, but some added cream would likely be a good substitute.

By the way, I can't stand store bought egg nog.  Nasty!  I only tried this recipe to please my man.  I only did one serving that first time.  However... I drank most of it and had to make more.  He loves the store stuff, and says that this is way better.

We have a Boxcar Children's Cookbook by Diane Blain.  My 12yr. old son loves to find things in their and make them!  Last night he begged me to make the eggnog.  It was really good!  The only thing I would do differently is double the recipe but use only 1 recipe's worth of milk during the heating process.  Then, after it has cooled whip it in the blender with the other recipe's worth of partially frozen milk.  Did that make sense?  It was not thick like store bought and I believe whipping with partially frozen milk would take care of that.  Here is the recipe:
1 egg

Eggnog

6 eggs
1/4 cup sugar
1/4 tsp salt
4 cups milk (divided)
1 tsp vanilla

In a large saucepan, beat eggs, sugar, and salt. Stir in 2 cups of milk. Cook over low heat, stirring constantly until thick enough to coat a metal spoon with thin film. Remove from heat and stir in remaining 2 cups of milk and the vanilla. Cover and refrigerate overnight. STRAIN* into a pitcher just before serving.

*I didn't strain it last time and the occasional bit of cooked egg could be found. Yuck.

Did the added cream make it thicker?  We have Jersey milk so it is pretty creamy anyway but would like it to a touch thicker.

Our recipe is from Betty Crocker's Cookbook for Boys and Girls. It is about the same as one posted but you don't cook it.

1 egg
2 T sugar
pinch of salt
1 cup cold milk
1/4 t vanilla
1 cup cracked ice.

My 11 y.o.s. makes this in the blender. We enjoy it.

Here's my mom's recipe.  She has made it every year for us since we were little kids.  It's different from the others posted so far.  It's easy to make and it is thick and creamy.

ORANGE EGG NOG
3 eggs
3 T. sugar
2 1/2 c. ice water
12 oz. can frozen orange juice
1/4 c. lemon juice
1 sm. bottle ginger ale
1 pt. vanilla ice cream

Beat eggs and sugar until light and lemon colored.  Add water and juices.  Pour into punch bowl.  Add ice cream and mix.  Add ginger ale.  Stir and serve.

I haven't tried this but it's something different in the eggnog category so I thought I'd add it here. If any of you try it, let us know how it went.

˝ cup Coconut Milk
˝ cup Milk or Half & Half
˝ tsp. Coconut Extract (more or less, to your taste)
2 whole eggs
2 Tbsp. raw honey (more or less, to your taste)

Mix all together in blender.

I have a recipe that is awesome and for those you are squeamish about raw eggs.  I am not about one egg or two, but this recipe calls for 15 eggs.  It makes a big batch, about 3/4 a gallon maybe.

Ingrediants

1 quart sugar or honey
15 eggs (I have used 12 with no noticed difference)
1 T cinnamon
1 T nutmeg
1 t ground cloves
1 quart cream, whipped
1 quart milk

Whip sugar, eggs, spices and milk together on high for 15 min.
heat to 140 degrees on the stove
Cool and add whipped cream
beat until well blended and foamy.  Serve immediately.

This keeps in the fridge pretty well.  It is very thick, so we usually half it with milk.  The leftovers also make really good french toast.

Cheesy  'Tis the season (we had our first frost this weekend)!  I ran across a recipe in my address book...maybe it's from WTM?

~1 3/4 c. cream (from a gallon?).  Add milk to make 2 cups.
4 eggs
3 T. maple syrup
nutmeg
BLEND!

I want some so badly, but we don't have the ingredients currently.  Sad

The only stuff I've ever tasted is the vile swill from the grocery store.  I just asked dh about making it with good eggs and milk and he said "go for it" so it looks like there will be a batch in the near future.
Yooper, I think I'll try your recipe, because the maple syrup sounds really good.

I've been using this recipe from mercola.com and LOVE it.  I modified it, though, to make it taste really creamy.  I whip the cream separately until it's whipped cream, then I mix up all the other stuff in a separate container, then I nicely mix the whipped cream into the other stuff till it's all incorporated.  This is SOOOOO good.  I've had to limit it to one a week.   Grin  Oh....and I also add stevia to it. 

   1. In a tall glass, pour half a glass of raw milk.
   2. Top the glass off with raw cream.
   3. Pour milk & cream into jug, bowl or large measuring cup.
   4. Add a fresh raw egg.
   5. Sprinkle a touch each of cinnamon and nutmeg.
   6. Add a few drops vanilla extract.
   7. Whiz up with immersion blender and put back into glass.

I tried the Pumpkin Spice Eggnog in the the dairy case.  Homemade would be much better.  The ingredient list was pretty standard.  There was the addition of pumpkin puree and nutmeg.  I think you could add 1/2 cup pumpkin puree plus an extra dash of nutmeg to a 1-qt recipe of eggnog.  Maybe a dash of ginger, too.

Well it is eggnog season and I just found out I am pregnant. A friend said oh no now you can't have eggnog! I would probably just drink it anyways, but to be smart...can someone explain why I shouldn't and such so I can decide if I should? I know I could make my own with homegrown eggs, but it would gross me out! I am a wimp!

I thought it was b/c of the risk of salmonella w/ raw eggs?  Shoot.  I forgot about it, but I probably will still drink it.  We have in the frig from the store that's OK.  Need to perfect my recipe!

Ummm....can you tell me why you're skipping raw milk for now?  I've heard pople say to avoid it, and have read that book by Jodi Piccoult "Plain Truth" that had an Amish woman's baby die b/c of something in the raw milk...why can't I think of the name of it...Huh
