Okay as a kid I was a TOTAL TV junkie, and am I the only one who remembers Granny from the Beverly Hillbillies dabbing vanilla behind her ears as parfum?  I asked my mom if you could actually do that and she said her grandma did.

When we got married I used imitation vanilla, but I bake so much my husband insisted that I switch to real vanilla (and real butter).  We bought 20 oz. at Sam's Club for $20.  I've kept it in the very back of my dark cabinet and it's lasted a long time.  My grandmother said for me to switch it from the plastic container that it came in to a glass one, but I never did.  Will it last longer in glass?

Plastic contains toxins and alcohol may cause the plastic toxins to break down and contaminate the vanilla.

What he does is take the vanilla beans, slice them open and stick them in a bottle of Vodka. I think be puts around 20 beans in a bottle. They sit in there for six months, and ocassionaly he shakes the bottle. Making Ice cream with this vanilla is oh so good! Unlike any vanilla ice cream you have ever had. Grin
 Hubby buys the vanilla beans on ebay.

I just made my first bottle of vanilla, am letting it sit, but was told I only needed 2 beans???  Do you NEED more?  Also, we didn't cut the beans, put them in whole - should I take them out and cut them open?Huh

As for HB's comment about plastic, I debated and debated in the liquour store - not a place I spend a lot of time in Wink - about which vodka to use.  I ended up buying the more expensive kind, and the fact that it was in a glass bottle did influence me.  Glad it was a wise choice, even though I didn't know why at the time!

I used 6 beans, and just slid them in the bottle and let them sit until I ran out of my old vanilla.  I will admit, I used Jim Beam Bourbon instead of Vodka, because when I smelled my vanilla (Pampered Chef Double Strength Madagascar Bourbon Vanilla) with the name and smell, I figured, I'll try this instead.  It is really good, and I've been using it for about a month now.

I did buy the expensive bourbon, and it was in a plastic bottle, but when I needed it, I poured it into a glass container.  Probably would have been better to have just bought it in the glass.  Oh well. It's good, just don't swig it! Wink

Liquor at Wal-mart is a store by store, or city choice.  There are so many license for liquor in a city, and sometimes stores like Wal-mart can't get a liquor license.  They may sell cheap beer (the less alchohol stuff) but that would be it unless they have a license.  I used to work at walmart, so the knowledge.  I'm not a booze hound!  or a hawkeye!

The size of your Walmart.  The small ones with no groceries are 1 star.  The med size with groceries are 3 star.  The one in Kansas City formerly known as Hypermart is 4 or 5 star.

I am amazed at your knowledge.   

I see a lot of stuff on this site about the benefits of shopping at Walmart, but where I live, the current trend is to be politically correct and bash Walmart.  I can't tell you how many arguments my husband has had with our liberal neighbors about whether Wally World is or is not a monopoly.  Shopping at Walmart is looked down upon as being for the lowly, uneducated of this world.  HA!  I tell you in warms my soul to go in one with the knowledge of my college diploma safely tucked away in my trunk of unused things from a former life!  I will tell, that we have a friend who is a big shot  business lawyer(who could spend days upon days telling you about monopolies), his wife is a pyschiatrist, and they shop at Walmart too!

And yes, I know, I am off topic of this thread! Sorry!! Cool

Some of you all use homemade vanilla. I know you do... so tell me true! Does the homemade stuff disappear during baking? We love it in smoothies and kefir drinks, but it doesn't seem to flavor baked goods at all. Is this because of the alcohol base? Would a glycerin base work better for baking?

From what I've recently read, it is the alcohol evaporating that makes the flavor disapear. I have not tried a glycerite, though. I think it would be worth trying...

 Like dara says I've read somewhere that vanilla in an alcohol carrier can evaporate in baking/cooking especially since the flavor comes mostly through the scent, but the vanilla site says it works fine.  Huh
I guess I could just chop up vanilla beans if I really want the flavor but that would be less economical.  Roll Eyes I do that for icecream sometimes ... Oh well, I guess there is a price to pay for the REAL thing. Has anyone tried a glycerite base? ( what's the diff between glycerin and glycerite)

I cut the beans in half before I put them in the vodka.  Maybe that helps? 
A glyerite is a what the tincture is called if you use glycerine.  Get it?  Wink

I cut my beans in half also.  I read somewhere that it needs to steep for 2-3 months.  I started mine around Labor Day weekend and figured it would be ready for Christmas.  Do you think you just need to let it sit longer?  I hope mine comes out good.  Undecided

After four weeks mine was amber glass colored - pretty dark.  It seems pretty strong.  This morning I accidentally poured a *little* too much in some coffee - WOOHOO!  No, it was gross, way too strong, tasted, well, like an alcoholic drink!  I think it was 1/4 cup in maybe 6 ounces of coffee  Shocked Shocked Shocked
