  Taco Seasoning
« on: January 24, 2007, 07:19:55 PM » by milmuth
I've seen a few ideas, and several recipes on here that require taco seasoning.  Most say a package or measured amount.

Does anyone have a taco seasoning recipe so I can get the store bought mix off my shelf? (and all the ? stuff in it too Smiley  )

Thanks!

Taco Seasoning:
1/4 cup dried onion
1/4 cup chili powder
1 tablespoon salt
4 tablespoons cornstarch
1 tablespoon minced garlic
1 tablespoon cumin
1 tablespoon crushed red pepper
1 1/2 teaspoon oregano

mix well.  use 2 tablespoons mixture with 1/2 cup water for 1 pound of hamburger.  Very good recipe, and every body comments on how good it is.

Thank you!!!!

How do you store it?
How much does it make total, if you know?
How long does it last?
for the minced garlic, could I use a garlic press, or do I really need to chop it up?

Thanks again!  This looks great! Smiley

I have the following Taco Seasoning recipe and it makes exactly the amount that would come in one packet, so you can mix it up when you need it and not need to worry about storage.  I would say it is a medium heat.  Enjoy!

1TB chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1 tsp sea salt
1 tsp black pepper

In a small bowl mix all ingredients together, store in an airtight container or use immediately to season one lb of ground meat.

I store it in a plastic ( Shocked) container.  A pint jar would work great, or even a half a pint.  It lasts a long time as long as it doesn't get too warm or moist--just like all your cooking herbs.

It makes a lot.  Probably just under a cup total.  You'll get several uses out of one mix, but it's nice to just have on hand for tacos or taco salad.

As for the garlic, I used dried minced garlic, that way it lasts longer.  Otherwise I would imagine you could omit the garlic for storage, and use your garlic press to press one clove in with your mix when you use it.  Fresh IS best! Smiley  Let me know if you do it this way. I never even thought of that, and I just made a new batch last week so I'll have to wait to try it till the next time.

Jenny4wenn those are the exact ingredients I use!  I can't believe it!  I'm not sure of quantity, I probably use a little more garlic, but wow!  I just came up with that on my own!  I feel so smart.   Grin  Sometimes I add cinnamon, too.

That's exciting, ShabbyChic!  I am not good at coming up with my own concoctions for ingredients yet.  I'm getting better. Smiley  That was a recipe a friend gave to me.  I'm impressed!  Cheesy

That sounds great! I will have to mix up a batch. We usually buy our Taco Seasoning in bulk at Sam's Club. We use a lot of it for home made refried beans, burritos and taco meat.  Smiley

This recipe comes from TopSecretRecipes as a replacement for TacoBell Seasoning.  I use it all the time.

2 teaspoons chili powder
1 1/2 teaspoons dried minced onion
1 1/4 teaspoons salt
1 teaspoon paprika
3/4 teaspoon crushed beef bullion cube
1/4 teaspoon sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
dash onion powder

(I don't use the bullion cube and it works fine for tacos)

If you like the consistency of Taco Bell meat, you can take the seasoning and add to the meat (1 lb) along with 1/4 cup flour and mix like a meat loaf.  Then throw in the pan with 1/2 cup water and stir in while cooking.  If you can't handle hamburger grease then this recipe is not for you because you do not drain.  We love it.  Makes the ground beef a softer texture, also great for burritos.

ADDED: 2009 Feb 13

I've modified my recipe for simplicity (laziness) and availability of spices.

1 T chili powder
1 tsp salt
1/2 onion dried minced (I leave this out sometimes cuz I'm usually out of it)
1/2 tsp paprika
1/4 tsp onion powder
dash garlic powder

I've been using this simplified version since I can remember.  I have it on a cheat sheet in my kitchen for easy reference.  I also use the flour and water technique everytime.  No complaints when I make tacos.   My 4 year and 7 year old both ate 6 a piece the other day.  Hubby had 8 (I think).  Shocked

Oh...I just remembered, I've recently started adding 1/2 tsp cumin as well.  This gives me the essence of beans in my tacos without the texture that my husband doesn't like.  It's quite tasty this way as well.

I don't really like too  much seasoning in my taco meat or beans.  I have tried different taco seasoning recipes, but they all seem to overwhelm the meat.  I have started using a TBSP each of cumin and chili powder.  I think i got the idea from a bean burrito recipe of Rebekah's.  It is really tasty with out being a whole conglomeration of spices.  I was really pleased a few weeks ago when my MIL was eating supper with us.  I had made tacos, which is pretty common around my house.  She asked me what I put in my meat and when I told her, she told me it tasted just like really mexican taco meat.  We have both lived in West Tx so that was a really nice compliment.  Sometimes I add a little bit of garlic and salt and pepper, but just cumin and chili powder works really well.  DH loves it too.  He will even eat just bean burritos now with no meat...now, THAT is a miracle!!!

Hey HB if you still use this recipe do you ever make it in bulk? if so what would be the amount of seasoning per lb of meat?

If you are concerned about MSG exposure, you might want to leave out the beef bullion cube.

I make my seasoning in bulk. Here is the recipe that I have been using for many years. I also used this last month while we were participating in a Daniel's fast to flavor black beans in a Taco Salad. My whole family loves it.

Taco Seasoning Mix

Mix ingredients together and store in a jar. To use, add 2 T mix and ½ cup water to 1 lb meat. May be used to flavor soups, stews, and meatloaf.

¾ cup dried minced onion      2T salt
¼ cup chili powder         1T oregano
2 T cornstarch         1 T Red pepper
2 T minced garlic         2 T cumin
