OK, I've tried black tea, green tea, white tea, earl gray, blueberry, raspberry, mint, strawberry and ginger... but at the end of the week they all taste like vinegar! What am I doing wrong? I use 5 bags of red rose tea and 5 bags of a flavor tea and one cup of sugar for each gallon I make. They all sit for different amounts of time but I seem to always get vinegar. I am sure I am still getting the health benefits but I would like to get some taste benefits too. Any suggestions?

It's most likely either your brewing time or your sugar amounts.  Try more/less sugar (probably more), and a longer or shorter brewing time.  Are you getting any baby SCOBY's?  How big?  What's the brewing temp?  This might help indicate what you need to change.

Have any of you tried using honey to make your 'bucha? I saw a recipe online for it. You have to use honey and malt powder or syrup. I am curious so I may try it myself.

If any of you have tried it, could you tell us about your results? I wonder if the taste is affected or any of the medicinal qualities. Thoughts?

My friend (YouthfulOne) has gluten allergies in her house and we had just happened to talk about malt having gluten. Today I went into the local beer making supply store and he had a note posted saying he now carries gluten free malt syrup. So all of you gluten avoiders, take heart that you too can try honey 'bucha!



I am brewing my first batch with honey b/c I didn't have any sugar in the house when I acquired a Mother.  This is my first time, but everything appears to be going well.  I had some honey called "Really Raw Honey."  I asked about it on another thread and someone stated it would work fine, but that one should switch to sugar as soon as you can to avoid breaking down the scoby over time.  I don't see any mold and a baby is growing on top of the original mother.  My closet smells like vinegar when I've checked on it. I suppose that's good.  I haven't actually tried any yet because (I'm a little chicken Cheesy) I'm waiting for the sugar content to reduce to VERY little b/c I'm diabetic.  It's been 10 days since I've started and I checked it using my blood sugar meter and it read 486! For comparison, I do have some from the HFS and it says it has 7 carbs per serving, but the sugar tests over 600 on the meter!  So I feel like I'm making progress. I was hoping using raw honey would add some type of nutritional bonus, but I really don't know.

Just wanted to update---day 11 of the honey brew.  I tasted it this AM and it's wonderful.  The sugar count went down 100 points overnight so I decided to brave it this AM.  Even if my sugar goes up, it was well worth it.  I'm sooo excited.

depends on how sweet you want it.  if you are going for health, maybe the longer time.  just taste it daily and harvest when you think it's good.

Before I tried this, my favorite was Bavarian Wild Berry tea (also by Lipton). It's good but it's been moved into "2nd place" now!

I have cran-apple zinger going (so glad it's summer and it brews faster!)  I just ran out of black tea and have it on my list--white works, too? Huh

I didn't see this post until today, but we started using the Lipton White Tea with Island Mango & Peach flavors about 3 brews ago.  It is beyond wonderful!!  We use 4 bags black tea and 2 bags of the flavored white tea and it is the best we have used so far!.

I read about using a vaniila bean. It sounded yummy and I was gong to try it. I haven't bought any for awhile and am all out. Today I went to the store to buy some and it was $20.49 for one long bean! Geesh!  Did NOT buy it!

"It is $10.00 for 8 vanilla beans.  We also sell them by the pound as well as the 1/2 pound.  They are $45.00 for 1/2 pound, or $90.00 a pound."

Any of you who have usd a vanilla bean in your 'bucha, did you use it more than once? Did it still flavor your 'bucha? Could you cut it in half or Huh I saw someone post that they were going to try using it again but hadn't heard any result report.

Have you reused your SCOBY after using it to make ginger kombucha with real ginger chunks? Has it bene effective and/or prolific again? I need to decide if I should reuse it or toss it.

mine grew a new SCOBY and I had to peel them apart so that I could peel the ginger chunks off the SCOBY.

mine grew a new SCOBY and I had to peel them apart so that I could peel the ginger chunks off the SCOBY.
Mine grew huge and I've used it many times since.

The vanilla bean I am definitely reusing. I've used it twice now. The vanilla flavor is good when I first bottle it, but seems to lose a little strength after sitting for a week, but the bucha is still good. I think next time I'm going to try slitting it down the middle to brew. Also I might slip it into the HOT water with the tea to steep. I also think it would help if I put it directly into a new batch after harvesting instead of back into the fridge.
Did you ever post what tea flavors you used w/ the vanilla bean to make it like vanilla cream soda? Huh

I made bucha using peach and apricot tea I had in my cabinet. It tastes and feels (fizzy) like sparkling apple juice.

This is the only batch I have made since the weather turned hot that has actually turned out to be yummy. Many of them are not fizzy or yummy. And this one was not very good until I harvested, let it sit out a couple days then refrigerated it for a couple weeks.

I made a new batch today using 4 Lipton regular and 5 Tazo Berryblossom White (with hints of blueberry and white cranberry). The tea tastes very good so hopefully the kombucha will too. I added an extra half cup of sugar to see if it will help in the heat. I figured maybe it eats more when it is hot, unlike myself:)

I think youre right. When its in the cupboard for 7 days, its great. Any longer and  Shocked Lips Sealed

I just checked my ginger kombucha after 5 days, and the two chunks of ginger I put in were covered in green fuzz!   Tongue Yuck!!  Did anybody else have that happen??  What should I be doing differently?  I tasted it anyway (the drink, not the ginger)  Embarrassed and it tasted ok, but went ahead and threw it out ~  Undecided  I've never had mold before ~

I've had my ginger mold before . Usually I'll still have a little chink left in the bag in the fridge and it will be moldy too. Trying not to buy it (at Walmart Tongue) unless the whole stock looks very very fresh and never if there is any piece w/ mold already visible. Not had it go bad on me since I started watching when I buy it more closely.

Hmmm....I did buy this ginger at Walmart.  I usually don't shop there much less buy produce, it was a fluke thing!  I guess I'll try it again with fresher ginger because I was really disappointed that didn't work out!
