I am going to start another batch..no the grain do not reproduce like they do in milk, but in my experience yoiu can use the same grain for many batches and you really only need a pea sized one...that is the way I like it anyway.

I still make Kefir D'uva, but unfortunately I have noticed that while my grains work with juice, they don't reproduce, like they do with milk.  HTH!  Wink

Ok, I'm trying this (thank you, natural)!I've got a jar of grape juice with what looks like little purple brains floating in it, sitting on my counter. Can someone tell me a little bit about the process, like what should it look like on day one, day two, etc...

I made the batch last night around 8:00. This morning, there's a really thin sheet of bubbly foam on top. Sound about right? When should I check it? I don't want to open it too soon & let the fizz out!

BTW, I tried the first batch with milk. But I didn't like the taste. I don't like buttermilk at all, and I have to sweeten yogurt to eat it, so I don't know why I thought I'd like milk kefir!

Emily, your D'uva sounds like it is normal. Mine is usually done in two days, exactly.  I would try it after two days.  If you want it more fizzy, keep it another day and then so on.  Anything more than two days starts to taste like a Cabernet wine to me(barf)!  Grin

Hee-hee! I made hubby open it! It was good...almost like wine, but sweeter. I've started another two jars.

Here's a question: Since the grains won't reproduce in the juice like in milk, could you take part of the grains & put them in some milk, just to reproduce? Forgive me if that's a dumb question...I know nothing about all this! Just starting out...

From what I have read, once you go to juice, you should never go back to milk.  If you can keep a small container of milk going, just to reproduce more grains, you can use it just for kefir D'uva.  Just a thought.

I have never placed the grains back into milk after using them in juice...do you have any of the milk grains left? You could make more grains by placing them in milk...
even if you didn't like it you could still use it to make more grains and use the milk stuff for pancakes or what you would use buttermilk in Huh just a thought.

 I am not sure how many batches of D'uava you can get out of a few grains.

YIKES!  Shocked I just opened one of my jars and the lid popped off HARD! It's totally warped. HIO, you are so right about opening w/ my head turned!  Cheesy This is the second batch. I did juice/water this time instead of just juice. I left it the same amount of time, but this is so much fizzier & more "sparkling".

I don't have any left. Silly me, it never occurred to me to use it in recipes, and I forgot about the smoothies! I tried to put some of these back in milk to see if they'd grow, but nope. Oh well, maybe these will last a little while, anyway.  Undecided

Hi All-
I made a couple of batches of  Kefir d'uva and thought I would post the results. I used about 2T of milk kefir grains and 1 3/4 c grape juice and 1 3/4 c water. First batch sat for 24 hours and was fizzy and DH drank all of it and thought it was good. No alcoholic effects in his opinion. Also he drank it all right before going to sleep and usually drinking grape juice before bedtime would give him heartburn, but this did not. So...2nd batch I made the same except I let it sit for 36 hours. He tasted it and said it was definitely more potent! He has not drank all of it yet so we will see....? My next batch I am making with white grape juice. We will see what happens! I am thinking about dividing the grains between 2 jars since from what I have read, I am using more then is neccessary. Can anyonetell me how to store juice grains if I don't want to use them for a few days or a week? Like when baby is born.  Shocked

Hi. I just came across this site. I am able to answer some of the questions posed in some of the posts here. I hope it helps. Smiley

1) The more sugar, the stronger alcohol content. So, using pure juice, you will definitely get a highly alcoholic brew.

2) A hydrometer measures alcohol content. You can get these at any brewing supply store--or online, if you don't have a brewing supply store in your area. They sort of look like a large glass thermometer. They are resuable; so it's a one-time investment. I use one for brewing beer and it's a handy-dandy little tool. Smiley

3) Using acidic juices (grape, apple) in your initial ferment for water kefir will often hinder growth rate, and in most cases eventually wear the grains out. So, either keep some back you are propagating in a water/sugar solution, or be prepared to purchase new grains when the ones you are using are no longer viable. You could also inoculate the water and then put the juices in for a second fermentation. This keeps your grains healthier.

4) Using filtered water and tap water isn't great for tibicos. They seem to do best in spring water. This is very important for growth rate and healthy grains. For those wanting to grow their grains, definitely be sure to use spring water.

Water kefir is Yummy and Healthy! Smiley
