do you let them brew with the tops on?
Kombucha should be able to breathe while brewing. For example, use a cotton cloth with rubber band as a top.
When they are finished brewing shut them up tight!

Yes I let them brew with a coffee filter and then put them in quart canning jars and put the lid on tight.

Hi, 
I'm sorry that I don't have enough time to read through all the past posts, but I am giving a friend of mine a baby for her to start, and I don't know how long it can sit in a jar with a cup or two of starter (previous batch) before it will go bad. She will be in southern MN for this whole week, and has a long drive up to Ely on Saturday. Will it be OK sitting out for that long, or what should she do with it?
Thanks to anybody that can help me out. I'm very new to kombucha.  Smiley

We've left ours sit at room temp in starter for days (4-6) and they still worked OK. There wasn't much starter left and the babies grew nice and thick. Cheesy hth!

i dunno if this is the right kinda storage for this thread but i was wondering if 40 degrees is to cold for the kombucha to brew. my hubby is tired of the smell in the kitchen and asked if i can leave them somewhere else like the laundry room. ours is outside and it has been getting down to the 40's at night.

According to what I've read that is too cold. Ideal temp is from 86-89 but our house is basically never that warm except for hot summertime. I'm sure we've brewed a lot of kombucha at 70-75 degrees, but never at 40. So while it won't hurt your kombucha, it will probably just take forever to brew. Smiley

I don't brew Kombucha anymore, but for those of you who do have to brew at those temps there is a Kombucha heating pad that keeps it at the proper temps--4 gallons at a time.  My dad gets the pads off the internet......

They ask me if there is anything fragile, liquid, or perishable.  And I say no.  It is perishable, but when you pay for priority, it usually arrives in 2-3 days, anyways.  So, I don't worry.

They ask me if anything is liquid, perishable, fragile, or potentially hazardous.  I don't think they can ask specifically what the contents are unless you are shipping media mail, to make sure it is only stuff that can be shipped media.  But maybe I am living in my own private idealist world of hoping that this would be considered an intrusion of privacy.  That world is long since gone, probably, so maybe they can ask.  When they ask if it's liquid, etc, I just say, "nah, it'll be alright"  Wink.  They never ask further.  Not sure if there is a surcharge on liquid or something, but when sending a scoby that is not much liquid.  I don't consider it "really" liquid or perishable.  They might consider it hazardous  Cheesy.

I ship most things through Click and Ship too.  If you are shipping Priority, then up to a pound it is the same price, so I just type in 1 pound.  Wow, big city automated thingies.  I was amazed at those when I visited Texas this year - big city stuff!  Don't have those around these parts.

Hey, I'm thinking this would make a good storage container? It is rubber-sealed glass with a metal spigot. What do ya'll think? I wonder if it would hold the pressure.

I would guess the concern here is the kombucha in contact with either the metal or the plastic from either spigot.  (Might have some problems with it eating the rubber gasket over time as well.)  I would say that when purchasing/using you need to consider how long the Bucha is in contact with the 'suspect substance' and weigh the cost/benefit.

 I just finished brewing my first batch of Kombucha today...stored everything in a large glass "pickle" jar...and then brought it out this morning to find a few mold specks on what I think must be the thin new "baby" foarming on top. Uh, is that sapposed to be alright? There's no bubbles in the batch eather. Does this come later after the scoobie is taken out?

Are you sure it is mold? Often my SCOBY's get little black deposits on them, and sometimes other dots that could easily be mistaken for mold, but are not mold. If it is fuzzy at all, or green or blue, I'd throw it out. Otherwise, maybe wait a few days and make sure it is mold before you toss it.

Sometimes you just don't know why mold grows on it. What kind of tea did you use? Did you cover it with cheesecloth and a rubber band, or what did you cover it with?

Someone on here probably has a SCOBY they'd send you for shipping if you post that you want one (or more).

You can also make your own using a store bought bottle of bucha, or a quart from a friend. If you search for the topic about chaining with SCOBYs it will tell you how to do it.

As of last night, I can speak to the sun tea jar issue.  Somehow I missed the whole idea that the spigot might be an issue  Roll Eyes  Sometimes it's the most obvious things that blow right past me.  After reading more of this thread last night, I checked on my kombucha...which was stuck to the floor.  Considering I just mopped the floor a few days ago, this struck me as weird.  It turns out a bit of kombucha had leaked from the seal around the spigot.  Since it's only been brewing 7 days and it was a brand new jar, that speaks to the power of the shroom, I think!  I'm hoping that only being in there a week will mean that it's okay to harvest and pop my SCOBY into a new home.  Meanwhile, SarahK, I'm going to feel horrid if I killed my SCOBY the first time out!!    Sad 
Here's a question, though.  My strainer is the mesh kind, too.  Is this brief contact with metal okay?  Likewise, my funnel is plastic, and I'll need that to go from big jar to Ball jars for storage.  If this contact is very brief, what do we know about the consequences?

anb, those brief contacts will not matter. Its only when sitting awhile that it will have time to "eat at" anything.

kittyninja kindly sent me a SCOBY. It's my fault because I think I wasn't clean enough  Embarrassed. I didn't know the jar needed to be super clean or that the coffee filter should be taken from the middle of the stack because dust specks might have landed on the top one. Read that afterwards...Grr. Oh well! That's how I learn at times  Roll Eyes I did taste it--tastes like nothing I've had before. Maybe like a sweet tangy wine or something. I didn't get drunk, am definitly not addicted to it, and I am still alive to report.  Cheesy  Had a sad funeral with it and the toilet last night...

As to the tea, I used 2x of around 4c. RO water and 3 bags of common lipton black tea. I also used ginger. I was wondering, do you think that next time I should do something ( like what?) to the ginger before putting it in? I bought it from the grocery store where who knows what could have been on it.
