  Strawberries: Storage, Tips, Uses, and Recipes

We went to a strawberry farm yesterday. We picked 20# in 30 mins. They are huge and so good. We can't believe the difference in fresh picked strawberries. Oh how old the ones in the store must be.

Any way, could you cooks give me some different recipes for strawberries? I figure there will be a lot of folks picking strawberries ( I guess if you are in the south) I would like to make jelly, freeze some, and any thing other info. you might have for me. I have never had extra strawberries.

We laughed and wondered what an abundance of strawberries does to the digestive system. Is there such a thing as The Strawberry Cleanse. lol

My ABSOLUTE favorite way to eat fresh strawberries it to slice them up lengthwise, also put a few in the blender and blend them up. Mix them together and add sugar to your taste. (or honey, sugar tastes much much better!)

I like to eat this on buttermilk waffles and on Swedish hotcakes. Swedish hotcakes are VERY easy to make(and DELICIOUS!) and I can provide the recipe if you like.

Strawberry Shortcake (with cream on top, tell me the name of your sweetheart...oops sorry got carried away!)  I love strawberry shortcake, strawberry smoothies, strawberries on waffles or in pancakes.  Strawberry pie (or Strawberry Rhubarb pie)...yum, yum, yum!  Cant wait until its Strawberry season here.  BEtter Check my local U pick to see when they will be ready.

Strawberries also whiten your teeth...so some article said. Here's a (blueberry) Syrup we love and I bet it would be good with strawberries:4 cups fresh fruit, 1/2 cup mild honey, 1/4 cup orange juice, 2 Tbs Cornstarch, 1/4 cup cold water. Bring Berries, honey and OJ to a boil in a saucepan. Simmer one minute. Dissolve cornstarch in cold water and add to syrup. Simmer until thickened. Serve warm or cold. (I've served it on pancakes and waffles and when cold, put it in my yogurt.)

Well, here is one way:(NOT healthy by the way  Grin but guuud!)
2 egg whites
1/2 tsp vinegar
1/4 tsp salt
1/3 cup sugar
2 cups sliced fresh strawberries(I always cheat and do a little more)
1/4 cup sugar
1 tbsp cornstarch
1/2 cup water
1/2 cup whipping cream(or you could use cool whip I guess)
1 9 inch pie shell baked

Beat egg whites wiht vinegar and salt to soft peaks. Gradually add 1/3 cup sugar, beating to stiff peaks. Spread on bottom and sides of pie shell. Bake at 325 for 12 minutes. Cool.  Mash 1/2 cup berries wiht 1/4 cup sugar. Combine cornstarch and water; stir in mashed berries.  Cook and stir til mixture boils. Cook 2 minutes more. Stir in a few drops red food coloring(optional)and remaining berries.  Cool slightly.  Spread over meringue; chill. whip cream and spread over all.

If you have it available, strawberries and maple sugar are an incredible combination!  During strawberry season my husband gets plain yogurt with fresh sliced strawberries, sprinkled with maple sugar for breakfast.  And goes to work happy!!  ...... maybe I should hand him some when he comes home for work ..... Wink Wink Wink

I wish I had 'real fresh strawberries'!!! This is a very yummy recipe and it doesn't last long around here:
Strawberry Pizza

The crust:
2 cups of All Purpose Flour
½ cup of Brown Sugar
1/3 cup of butter (softened, I melt mine)
Using a mixer, combine in mixing bowl and mix until well blended. After, I spread evenly in a pizza pan, I roll it with a glass to pack it in place. Bake at 350 till crust is light brown 20 minutes usually

The topping: 8 oz of cream cheese softened
3/4 cup of sugar ( I use about a cup of Splenda)
Large Cool Whip
Combine the ingredients. (I use a mixer) Spread over cooled crust and add sliced strawberries to the top.

Boy climates around the country are so different. Strawberries are gone in TX, so now we are eating my frozen strawberries. Go get some more and freeze them. Eating frozen strawberries is working great!

We are now picking blackberries. Any recipes?

Blackberry cobbler:

1 stick butter
1 cup sugar
3/4 cup flour
3/4 cup milk
2 tsp baking powder
pinch of salt
Blackberries 2 1/2 cups

Place butter in deep dish baking pan and place in 350 degree oven.  make batter of sugar, flour, salt, baking powder, and milk.  Pourbatter over melted butter.  Do NOT stir.  Pour fruit and juice over.  Bake 1 hour at 350.
Add sugar to fresh fruit to pull out the juice.

Showney's Strawberry Pie:


1 baked pie shell
1 cup sugar
1 1/4 cups water
6 TBS cornstarch
4 TBS or 1/2 package strawberry jello
3 cups fresh strawberries

Mix sugar, water and cornstarch.  Cook over low heat until clear, stirring constantly.  Cool slightly ( 2 minutes or so).  Add jello.  Add few drops of red food coloring if you care to.  Add strawberries.  Pour filling into pie shell.  Refrigerate.  Serve with whipped cream.
(I do not add red food coloring)

1 cup heavy whipping cream.
1/4 cup sugar.

 Whip cream at highest speed with an electric mixer until slightly stiff.  Add sugar slowly.  Continue until you reach desired consistency.  Make sure that your bowl and mixer bowls have no oil or water on them or your cream won't do right.

We have tons of blackberries out back this year.. and had tons of strawberries given to us earlier this year.. here is one I did and the children just LOVED it with homemade vanilla ice cream on top.. However fair warning it is probably not the healthiest recipe.. LOL

Put berries in a pot with butter (I use one stick), about 1-2 cups of brown sugar (more if you have tons of berries) sprinkle in some nutmeg and some cinnamon, bring to boil, then let simmer over medium low heat until it is syrupy...  

Coat glass baking dish with butter, shortening, pam, or something greasy..

Then I take old fashioned oats, brownsugar, butter, frosted flakes (or some other type of cereal have used cherrios, corn flakes, rice crispies, etc..) melt butter and place it to the side.. . place dry ingredients together in bowl or bag and crush, smash or whatever to blend them together and smash up the cereal a bit.. add the butter stir it around, it should be like a dry streusell or crumb topping.. add more brown sugar or butter if needed.. (I can eat this by itself)

Place berries and syrup in baking dish (save just a little syrup for later), place crumble topping on top, drizzel a little of the left over syrup on top, bake at 325 until it starts to bubble through the topping (about 15-25 minutes) serve warm with ice cream on top and drizzel some more syrup if you have any over it all..

MMMMM MMMM MMM good.. LOL

Sorry for the skimpy directions.. I cook by mixing things until they look right and just a little of this and a little of that here and there.. my dh says I could make a meal out of nothing.. which is good, until my experiements go haywire.. LOL   Any questions just ask..

This is similar to what some people call an Apple Brown Betty, or the topping is similar to what many people put on sweet potato casserole..

Here is one more, my mother in loves blackberry cobbler.. it is good, good, good..

Place berries, in pan with just a little water and 1-2 cups of sugar

Place one stick of butter in casserole dish and melt in 350 degree oven

in a bowl mix
1 cup flour
3/4 cup sugar
1 egg
1tsp vanilla
enough milk to make it the consistency of cake batter
pour batter over hot melted butter in casserole dish, Do Not Stir together
dump berry mixture on top
place back in the oven at 350 until the crust rises through the berries and looks done, rub melted butter over the top and sprinkle with cinnamon and sugar

VERY VERY GOOD

My neighbor has a HUGE strawberry patch and recently became a widow.  In the past years she and her husband let anyone who wanted the stawberries to come pick.  I asked her when would be a good time for my family to come.  I am pregnant and she asked me how I planned to pick them.  I said that I would just get down on the ground and crawl from plant to plant to pick.  She said NO because bending over or crawling will just wrap my baby's cord around it's neck.  I tried to give her a quick Biology lesson, but to the waste of my breath.  I don't get to pick any berries from her this summer.  I am a little upset Cry
Will you all think of me when you eat those fresh, taste like nothing else, bits of wonderful?!

Strawberry Breakfast Smoothies


Fill Blender about 1/3 of the way up with strawberries.
Put in about 1 cup of vanilla yogurt.
Add about 1/2 cup of milk.   
1 scoop of whey protein powder.
Blend together.
Add 12 cubes of ice. 
Makes about 4- 8 oz cups of smoothie.(Maybe I never measure any of this.)

You have to find a friend or husband to pick for you. Fresh picked strawberries are so good and NOTHING like the store strawberries.

You all are making me so excited about picking strawberries - I'm going on Thursday. My mom and I have gone to the same farm since I was little and they have the yummiest, juciest strawberries!! Wish I could send some to those of you who don't have any farms nearby!! Great recipes, btw - we always loved just slicing them, adding sugar and putting them on cereal or pancake.  Smiley

I worked on a strawberry farm for all of my teen years.. I started out picking at 13 and helped run the whole operation at 18... Grin

My favorite recipe for fresh strawberries is warm off the vine. We also do shortcake with a cake that is very much like slightly sweet home made biscuts, real whipped cream, and a little bit of sugar over the strawberries.

Tips for keeping fresh strawberries fresh...

DO NOT STORE IN REFRIGERATOR. This will make them shrivel up and get mushy. Pour out on a tray or cookie sheet (so that the berries aren't touching or pressing on eachother) and store in a cool dark cupbord or pantry.

Did you know that strawberries do not ripen after they are picked. They just start to rot or ferment... at least that is what my boss told me and he's been doing strawberries for over 20 years.

Also, strawberries are a diuretic... so if you're eating a lot of fresh strawberries make sure you are drinking extra water!

Oh, and strawberries with sugar over vanilla ice cream is great too!!!

Your ideas are so interesting. I did put mine in the refrig. They lasted almost 2 wks. vs a few days for store bought. They never did mold. Next year I'll try putting some in a  pantry.

Hi y'all. I need to make a huge batch of strawberry sauce for VBS tomorrow. It has been requested that I replace some of the sugar with stevia. I'm not sure of amounts though. The recipes online call for 1/2 cup sugar for each pint of berries. Anyone have a rough idea how much stevia I would use for 1/4 cup sugar? I suppose I could just taste it! Grin I'd still like a little experienced input, though. Thanks, Leslie

I've got two ice cream pails of strawberries in my fridge, and I was thinking of making jam with them. However, it would be kind of pointless since we very rarely eat bread anymore (trying GF diet).

What other kinds of strawberry preserves can I make?
I thought of syrup but we don't eat pancakes either.  Undecided
Anyone else? What are your favorite recipes?

Whenever I have extra fruit, I just freeze them, whole.  That way, if you want a smoothie or something, you can just pop a handful of frozen fruit in there.  HTH!

Strawberry lemonade

In blender, puree 4 qts berries.  Place in kettle.  Add 4 c fresh lemon juice (i used bottled), 3 qts water, 6 c sugar (I think I used part honey).  Bring to 165deg over medium heat, stirring.  Pour into hot jars.  Process boiling water bath for 15 min.  To serve, mix with about 1/3 concentrate and 2/3 soda, ginger ale, ice slush or combo of your choice.  Makes 6 qts concentrate.

I put strawberries and apples on a tortilla with a little pumpkin pie spice.  I fold it over and heat it well on each side.  My kids love this snack and it's often dipped in maple syrup.  I think there are gluten free tortillas.

 We also just mash up the strawberries a bit and freeze in quart bags.  We take those out for using in smoothies or yogurt or to just eat when we want yummy strawberries in the winter.

A VERY good friend of mine brought me 3 gallons of strawberries.

Yesterday we just piled them on some vanilla ice cream for a topping and last night hubby threw some in the blender with malt, milk and vanilla icecream.

He drank half of it and we froze the other half into popsicles for the kids.  Went over HUGE!!

I also love fresh strawberries and fresh peaches sliced up, mixed together with a bit of sweet added to make'em syrupy.  YUM!  When I take these to potlucks, I never have any left over.   Grin
