just wondering if anyone can tell me how to make yogurt out of goat's milk?
is there a different method than when u make yogurt with cow's milk?

I used to use my fresh raw goat's milk for yogurt, cream cheese, whey, ice cream and of course to drink.

I have used raw cow's milk for a couple of years and have always had my
yogurt turn out great. I heat it to 100 degrees, then add starter, stir,
and let it sit in my oven with pilot light for about 12 hours. Its always
worked.
On Friday I got some raw goats milk for the first time. Kefir came out great,
but my yogurt is very watery. What am I doing wrong? I used starter from
my last batch of yogurt made with cow's milk.
Any suggestions!!!! Help!Please!

I would try adding some powedered milk (maybe a tablespoon per quart?) or perhaps a little extra cream.  Seems like I read somewhere that it is the solids in the milk that make yogurt thick.

My goat milk yogurt never comes out as thick as the store stuff.  Works fine for smoothies and stuff, though.

Here is a recipe from Goats Produce Too cheese book by Mary Jane Toth.
Plain Yogurt
2 quarts goat milk
2 tsp. plain cultured yogurt
Warm Milk to 115'.  Add 2 tsp. cultured yogurt.  Mix well and pour into clean jars.  Place filled jars into a roaster or kettle.  Fill the roaster or pan with hot tap water, up to the neck of the jars.
Cover and set in warm place to incubate for 6-8 hours.  Do not disturb during incubation.  Yogurt will thicken when ready.  When making plain yogurt, save some to use as a culture for your next batch.  Keep refrigerated.
It does call for 1 c. powdered milk optional.
I have not tried this yet as I just received book.  But I have tried many of her recipes and they were all great.
Also it depends on your goat as to the butterfat contents.  Some breeds have very little butterfat.  I think that might make the yogurt thin.

She also states that you can put gelatin in that would thicken it.  Her one recipe states 2 pkg. unflavored gelatin, 1/2 c. sugar, 3 C. fruit, 2 qts plain goat milk yogurt, and 1/2 c. cool water.
Dissolve gelatin in water and bring to boil.  Add sugar and the chopped fruit.  Mix well and cool.  Stir in yogurt. Refrigerate until set.  Mixture will thicken as it cools.  Makes 2 qts.

Goat milk just doesn't have a high enough cream content to make the yogurt come out thick. My husband doesn't like it much for that reason. Before we had goats we were used to the custard like cow yogurt. You can add a fourth teaspoon of plain gelatin to each quart and that helps but we personally don't like the consistency-kind of slimy Tongue I have added two cans of evap. milk and it did come out a little thicker but that kind of defeats the purpose of "healthy" yogurt Undecided

Many people will tell you that Nubians have a higher fat percentage.  That is possibly true but I personally think that what you feed them really effects it.  I have an Alpine that has 4.6% milk fat but my guess is that our Nubians have at least 5 or 6%!  Saying that however, I am not sure that will help a whole lot in making the yogurt thicker. Ours usually turns out about as thick as cow's yogurt though it isn't as creamy.  Adding a little pudding mix might help... Huh  Just throwing my ideas out!

Someone told me that the milk from a Nubian compared to a Jersey Cow.
Is that true? I would like to get a goat because they are so much more
affordable than a cow, and I am always driving far to pick up my milk, so
it really adds to the cost of the milk. Tonight we are going to make ice
cream out of frozen goats milk cubes. We will see how that goes.
Any more suggestions for the yogurt? Does it take longer to thicken than
cows milk yogurt?

The Nubian is the Jersey of the goat world. The milk is not the same as a Jerseys milk but it is the richest & creamiest goat milk. Goat milk is naturally homogenized so if you want the cream you need a cream seperator. Goat yogurt does not take any longer than cow yogurt. Mine does come out thinner than store-bought but I mix it w/ fruit & we use it as a drinkable yogurt. Very yummy. HTH

We always added a packet of gelatin to a gallon of our goat yogurt. Fruit flavored gelatin adds a nice, faint fruity taste. Smiley

Ok this is a 2 part question. I want to make goat milk yogurt for my baby but don't know any where around here to get it for cheaper 4 dollars a qt so i was wondering about using goat milk powder. So my question is:
is it possible to make yogurt totally from dried goat milk powder and if so how healthy is that kind of powder? is it as bad for you as powdered cows milk?Any advice would be great. Thanks!

I'm not exactly sure where to post this question but since its about goat milk yogurt this seemed like the best place. So my yogurt when I made it is so thin I cant even spoon it into the babies mouth- its more like kefir constancy. I noticed on the store bought goat milk yogurt that it has tapioca and after research I realized that this is often used as a thickener. But is this safe for my baby? what exactly is tapioca? I saw in the health food store that they have tapioca starch that could be used as a thickener but i don't know if my 6 month old can eat that? Any info would be appreciated thanks!

I make goat milk yogurt out of fresh raw milk. We had talked about this awhile ago, but apparently not on this thread. I now have nice thick yogurt.I add 2 tbsp. plain gelatin per gallon if I want to be able to mix in fruit and honey and still be spoonable. Goat milk also needs to be a constant 115*-120* to make great yogurt. Using a fresh powder yogurt culture also works much better than using Dannon or other plain yogurt as starter.
Your pastuerized milk is not going to make as thick a product because the heat damages the proteins and keeps them from making as thick a curd. Personally I think the tapioca starch would be ok. I think (haven't double checked) that tapioca is a low allergen risk.
Powdered milk will work. I'd reconstitute "stronger" than recommended to make a thicker product. You can also add some powdered when using liquid milk for thicker product. 1/4 cup per qt.
Whether powdered is as bad as powdered cow's milk. Goat anything is "better" than cow's. Still not real happy with the processes involved, but better than nothing and some brands better than ultra pastuerized liquid goat milk.
Sorry, I can't recommend brands it's been a long time since I even looked at it. Wish some of you were close to me. I live in a land flowing with goat milk.  Wink

I've made yogurt a number of times but just recently used the recipe/method on www.makeyourownyogurt.com  and it worked great!  Used goat's milk, 1 gallon, added about 1/2 cup? powdered milk.  Also for very thick, creamy yogurt, just drain it for a couple hours after it has been made and chilled.
